Ghanaian cookery class with Zeenat

Join Zeenat in preparing a wonderful Ghanaian dish for her online cookery class! This is your chance to learn a brand new cuisine, support an amazing cause, and eat great food.
The class will be conducted as an interactive virtual cook-along. The classes usually range from 1-2 hours long. The chef will lead the group step by step through the recipes; stopping frequently to answer questions, share anecdotes, and provide feedback on your dishes!
Before the class we will send you a list of ingredients, quantities and equipment so you can join ready to learn! Please read this carefully as there may be some recipes you need to prepare before the class. We will also send you a reminder email 3 days before the class takes place that will include the Zoom link, titled “Your upcoming online Migrateful Class”. You can also find the Zoom link on the Online Event Page, accessible through the link included in the Eventbrite reminder email.
Zeenat’s cook-along dishes will be Efo Riro (Beef and Spinach Stew) and Yams & Plantains.
This menu contains meat. Allergens include:Alliums.
- 1 Blender or food processor
- 2 Saucepans with lids
- 1 Frying pan
- 1 Mixing bowl
- 2 Mixing spoons
- 2 Chopping boards
- 2 Chef’s knives
- 300g beef
- 500g adults spinach (or 500g baby spinach)
- 2 yellow plantains (ripe,but firm)
- 200g yams (preferably Ghanaian yam, but any will do)
- 1 red bell pepper
- 1 red onion
- 1 fresh tomato
- 3 cloves garlic
- 3cm piece ginger
- 1 scotch bonnet chilli pepper (or any other chilli)
- 2 stock cubes (chicken preferably)
- 100ml cooking oil
Message from Zeenat: “Hi, my name is Zeenat, I was born in Ghana, but have Nigerian heritage. My grandparents were traders that were moving back and forth selling clothes and rare foods like cashews, coffee and other delights from Nigeria to Ghana and back again.
I love cooking and have been cooking from a very young age. I was taught by my grandparents and my mother, I enjoy it, no matter how busy I am, I always make the time for home cooking. I have also had the opportunity to cook big feasts during Ramadan and Eid to feed families and particularly for people that are living destitute on the streets. Nigerian and Ghanaian food is very similar, there are lots of similar dishes but they are cooked in different ways. For instance Nigerian fufu tends to be made with yam, whereas in Ghana it is usually made with plantain and cassava. I’m looking forward to sharing some of my stories with you alongside as we cook up some delicious West African food in my class.”
