Vegan Ghanaian cookery class with Kay

Learn the secret of Ghanaian cooking in Kay’s online cookery class!

Join Kay in preparing a wonderful Ghanaian dish for her online cookery class! This is your chance to learn a brand new cuisine, support an amazing cause, and eat great food.

The class will be conducted as an interactive virtual cook-along. The classes usually range from 1-2 hours long. The chef will lead the group step by step through the recipes; stopping frequently to answer questions, share anecdotes, and provide feedback on your dishes!

Before the class we will send you a list of ingredients, quantities and equipment so you can join ready to learn! Please read this carefully as there may be some recipes you need to prepare before the class. We will also send you a reminder email 3 days before the class takes place that will include the Zoom link, titled “Your upcoming online Migrateful Class”. You can also find the Zoom link on the Online Event Page, accessible through the link included in the Eventbrite reminder email.

Kay’s cook-along dish will be Kay’s Lockdown Jollof Rice and Kelewele (spicy plantain with peanuts)

This menu is Vegan. Allergens include: nuts and alliums.

Equipment List

  • 1 Large frying pan
  • 1 Blender or food processor
  • 1 Saucepan
  • 1 Colander

Ingredients List

  • 1⁄2 tin chopped tomatoes or 3 fresh ripe
  • tomatoes
  • 1 tbsp tomato puree (if using fresh tomatoes)
  • 8 cloves of garlic
  • 2.5 in. of ginger
  • 11⁄2 scotch bonnets (or other chilli or 2 tsp chilli
  • powder) – quantities up to you!
  • 1 vegetable stock cube
  • 200g long grain rice (Kay uses AAA Thai Jasmine
  • rice, but any long grain will work)
  • 1⁄4 tsp ground nutmeg (optional)
  • 1 tbsp mixed herbs, or any green herbs
  • 1⁄2 sprig rosemary (optional)
  • 1 tsp all purpose seasoning
  • 1 avocado
  • 2 ripe yellow plantain
  • 11⁄4 onion
  • Salt
  • 195ml neutral oil (vegetable)
  • 28g roasted red skin peanuts
  • 100ml water

Message from Kay:

“I grew up in the capital of Ghana called Accra with my Auntie who taught me how to cook. Life was difficult, but the cooking and food has always been important to me. In Ghanian food we always cook with pepper, onions, garlic, stock and lots of love. And this food reminds me of the people of Ghana who I miss dearly. I moved to the UK when I was 28, and now I am studying online at Bedford College ‘dignity and safeguard in adult social care’ and living with my little girl, Nana who loves to eat my food. I can’t wait to share it with all of you!”
