Learn the secrets of Syrian cooking with Mohammad in his online cookery class!

Join Mohammad in preparing a wonderful Syrian meal for his online cookery class! He is a wonderful teacher, chef, and story-teller. He will share the secrets to traditional Syrian dishes. This is your chance to learn a brand new cuisine, support an amazing cause, and eat great food.

The class will be conducted as an interactive virtual cook-along. The classes usually range from 1-2 hours long. The chef will lead the group step by step through the recipes; stopping frequently to answer questions, share anecdotes, and provide feedback on your dishes!

Before the class, we will send you a list of ingredients, quantities and equipment so you can join ready to learn! We will also send you a reminder email 3 days before the class takes place that will include the Zoom link, titled “Your upcoming online Migrateful Class”. You can also find the Zoom link on the Online Event Page, accessible through the link included in the Eventbrite reminder email.

Mohammad’s cook-along dishes will be Baklawa, Ouzi (Chicken, Pea and Cashew Filo Parcel) with Yoghurt and Cucumber Salad

Equipment List

  • 2 Medium saucepans
  • 1 Pyrex baking tray approx 20cm x 30cm
  • 2 Baking trays
  • 1 Mixing bowl
  • 1 Large frying pan with a lid (or a tagine!)
  • 1 Kettle
  • 1 Measuring jug
  • 1 Chopping board
  • 1 Sharp knife
  • 3 Stirring spoons

Ingredients List

  • 14 sheets Filo pastry (1 pack)
  • 150g Ghee, melted (or sunflower oil or melted unsalted butter)
  • 200g Chopped walnuts
  • 100g Desiccated coconut
  • 2 ½ tsp Cinnamon
  • 2 ½ tsp Ground cardamom
  • 250g Caster sugar
  • ½ Lemon, juiced
  • 300g Tin of green peas
  • 25g Cashews (or other nuts or seeds)
  • 100g Chicken breast (or chickpeas)
  • 1 tsp Olive oil
  • 100g Basmati rice
  • 1 Veg stock cube
  • 500g Natural yoghurt (or plant-based yoghurt)
  • ½ Cucumber
  • 1 tbsp Dried mint
  • 1 clove Garlic

Message from Mohammad: “Hello, I’m Momo. I’m the eldest son of a Palestinian father and a Syrian mother, I have six siblings who I love dearly. We grew up as Palestinian refugees in Daraa, a lovely city in southern Syria, which is also where the revolution started. I later studied veterinary medicine in Hama city but unfortunately had to flee Syria right after I graduated. First I had to cross illegally to Turkey; it was one of the hardest experiences I’ve ever had to face, especially as I was alone, and at one point I thought it was the end. Surviving and successfully crossing gave me faith and a confidence in myself I didn’t realise that I had!

I went on to live in Istanbul, Turkey for three years until I finally came to the UK in mid-2019 through the UNHCR resettlement scheme.

After losing my father, my ambition became following in his footsteps and continuing some of his unfinished dreams, that’s why I’m working on establishing a Syrian cheese-making business; just like the enterprise that he had when I was still in Syria. I’ve always loved cooking ever since I was young. I used to experiment in the kitchen ever since I can remember. I’m always interested in exploring new flavours and trying new recipes. I believe that cooking is caring, dedicating your time and effort in making an enjoyable meal for your loved ones comes from the heart. I genuinely express my feelings and love through cooking. If you’re my friend, then you know I’ll have prepared something delicious for you every time we meet.”
