While Turkey is often associated with meat-based dishes\, vegetarian food plays a central role in some households. Meals are social and generous\, designed to be enjoyed together\, with vibrant flavours\, and dishes that celebrate both simplicity and abundance. \n \nABOUT THE CHEF \nA message from chef Ada: \n“Hello. My name is Ada\, and I am originally from Finike in the Mediterranean region of Turkey\, located in the southern part of the country. Before moving to England five years ago with my girlfriend\, I had a successful career in the media\, specifically in TV and radio. About a year ago\, we welcomed our beloved cat Ruby into our lives\, and she has brought us so much joy. I cat sit locally\, as well as my caring for my own animals. I love to look after and care for animals\, and humans! \nI also love nature\, foraging and harvesting edible plants to use in my recipes. I come from a large family\, the youngest of five children\, and I learned how to cook from my mother and her friends. Hospıtalıty is central to my family and in Turkish culture generally.My family loves to host\, and share food and stories. Cooking is a passion of mine as it allows me to express my cultural background and personal identity. Food is the universal language of love\, and I find the most joy in cooking for my friends and sharing my creations with them. Everyone has heard of ancient Egypt and the pyramids that have made it a tourist destination\, but people may not know so much about our delicious cuisine. Egyptian people are happy and welcoming and love to cook and share food. \nI started to cook when I was 10 with my mum and grandma. The first thing I made was Egyptian flatbread. I love to make Koshary\, which is a mixture of types of pasta with rice and spices that is served with special sauces and is very popular in Egypt. \nI used to run a restaurant in Cairo\, mainly serving Koshary and falafel and other Egyptian specialities which I teach in my classes. I take every opportunity I can to cook. From the hearty street food of Cairo to regional specialties along the Nile Delta\, dishes combine legumes\, grains\, fresh vegetables\, herbs\, and spices. Meals are hands-on\, social\, and meant to be shared\, with signature dishes like Koshary and Fatteh highlighting both comfort and community in Egyptian food culture. \n \nABOUT THE CHEF \nA message from chef Amro: \n“Hello\, my name is Amro and I am from Egypt – from the North. My city\, Damitta\, is famous for furniture\, sweets and cheese. I am from a large family and I am the only boy with three sisters. \nAfter I graduated from university as a computer engineer\, I went to work in Kuwait. I worked there for 17 years in the Ministry of Education and the University of Kuwait before I moved to the UK in 2023 with my wife and my two children (I now have three)! \nWhen I was at home in Egypt\, it was always my mother who did the cooking. Although I didn’t cook then\, I learnt a lot from watching her. But when I was living alone in Kuwait\, especially for the first 3 years before I married\, I had to learn how to cook for myself! \nAs I spent half of my life in Egypt and the other half in Kuwait\, I have influences from both countries in my cooking. For example\, from my home country\, a famous dish that everyone there loves is Koshary – a delicious vegetarian dish.
