Influenced by Persian\, Turkish\, and Russian cooking\, it celebrates fresh ingredients\, aromatic herbs\, and gentle spices. From fragrant rice dishes like Palav to soft\, hand-folded dumplings and vibrant salads\, every meal is a reflection of generosity\, hospitality\, and the joy of sharing food together. Tajik cooking is colourful\, comforting\, and deeply tied to family and community — food made to be enjoyed with love. \nABOUT THE CHEF \nA message from chef Sanobar: \n“My name is Sanobar and I am from the ancient city of Samarkand\, Uzbekistan. It is in the middle of the Silk Roads\, which means it has been a crossroads for trade and remains a melting pot of different cultures. The food culture is very colourful\, taking ingredients and flavours from many cuisines. My family is Tajik and so the food I have grown up with and will teach in my classes is based around this culture \nI learned to cook from a very young age from my mother and grandmother. The village where I grew up had cows\, sheep\, fruits and vegetables and all of my favourite recipes are based on fresh ingredients. I have nine siblings. My mother was our hero feeding her large family every day. \nCooking for my family also brings me great joy and I would love to share my recipes with you. Afghan food is made to be shared; it’s rich\, aromatic\, and deeply social\, reflecting the warmth and hospitality of its people. \n \n \nABOUT THE CHEF \nA message from chef Vida: \n \n“Hi\, my name is Vida. I’m from Afghanistan and was born in Kabul\, the capital city. \nI learnt to cook from my mother and grandmother. My mother was always cooking for our big family and often needed my help. She would show me how to make something one day\, and then the very next day\, she’d ask me to do it myself. That’s how I learnt so much. Especially desert\, I love desert the best\, and am always making sweet treats. \nTwo years ago\, I started a small business cooking from home through All About the Cooks. People could order my food\, and it would be delivered all over Bristol. My food was very popular. At one point\, I was getting orders for up to 100 people! \nBack in Kabul\, I studied mathematics at university and later taught maths in an all-boys private school. \nNow\, I’m excited to teach again—but this time\, a different subject. The subject is food\, and the classroom is the kitchen. \nI’m happiest when I’m in my kitchen. I play music\, focus on cooking\, and enjoy being in my own world. Meals are hands-on\, social\, and made to be shared\, with signature dishes like Ceviche\, Tigrillo\, and Empanadas highlighting the warmth\, creativity\, and communal spirit of Ecuadorian food culture. \n \nABOUT THE CHEF \nA message from our Chef Judith: \n“My name is Judith\, and I am from Ecuador\, a beautiful country in South America. I grew up in Santo Domingo de los Tsachilas\, an area located between the coast and the mountains\, so we had the best produce. I grew up in a big family where food and music were always part of our joy – we loved getting together\, sharing meals\, and dancing. In Ecuador\, you can find four seasons in one day by travelling from one part of the country to another\, and that means that you can experience many different types of food in the country. When I came to England\, I started to do some voluntary work in a ‘healthy living’ community group\, and I used to run a session on healthy eating – this is reflected in my menu today. Teaching others about Ecuadorian food helps me feel close to my country and reminds me that even far from home\, we can still celebrate who we are and connect with others through culture and food.
