From hand-stretched noodles and dumplings to sweet sesame and date desserts\, the food is colourful\, social\, and made to be shared. I moved here from Jeddah\, Saudi Arabia in 2013. I have lived the majority of my life there. Culturally I am Uyghur\, an ethnic Muslim minority located in Central Asia (now part of China called Xinjiang). The dishes I teach in my class are a mix of the two cultures I come from. I learned to cook from my Mum. She used to call my sisters and me to assist her with cooking. I was her main helper\, especially when it came to pulling noodles. \nWhen I was in high school and had our summer holiday\, my mum trusted me enough to cook for the family and I insisted she write me the recipes with every little detail. I got paid for it! My mum taught me to cook several cuisines from around the world but my favourites were Saudi & Uyghur. Even though I have explored hundreds of dishes living in London\, Laghman is the most delicious dish (In my personal opinion!)” \n \n\n\n\nON THE MENU (subject to change): \n\nJawawa (Uyghur Dumplings filled with Lamb or Chard) | Meat (Lamb) and Vegetarian; Gluten (Wheat)\, Milk\, Sulphites\nCrunchy Chilli & Garlic Oil | Vegan; None\nLaghman (Hand-stretched Noodles with Braised Vegetables) | Vegetarian; Celery\, Eggs\, Gluten (Wheat)\, Sulphites\nFoul Qulabah (Fava Bean Dip) | Vegetarian; Gluten (Wheat)\, Milk\nLuqaimat Alqadi (Saudi Doughnuts with Sesame and Date Syrup) | Vegetarian; Gluten (Wheat)\, Milk\, Sesame\, Soya\n\nThis menu is mostly vegetarian but contains one dish with meat (lamb)\, with vegetarian filling options. DESCRIPTION:Chef Rose will teach delicious\, authentic Iranian dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \nIranian cuisine is renowned for its aromatic herbs\, delicate spices\, and beautiful balance of sweet and sour flavours. One of the things I have loved about coming here is meeting people from all over the world\, I believe food is a wonderful way to learn about eachother and discover new cultures\, traditions\, and stories. \nBefore moving to the UK\, I studied midwifery and later trained in surgery. I worked in a surgical department for 17 years. Although my career was in healthcare\, food has always played an important role in my life. \nMy mother was an excellent cook and was well known among family and friends for her delicious meals and desserts. However\, growing up with her wonderful food taught me what good food should taste like and gave me a real appreciation for cooking. \nI only started cooking after I got married. In Iranian culture\, preparing food for the family is often an important part of home life. To my surprise\, I learned very quickly\, and before long people were complimenting my food and asking for my recipes. I believe I owe this to my mother. Nothing makes me happier than seeing people enjoy a meal that I have prepared. \nThrough my cooking\, I hope to share not only the flavours of Iran but also the warmth\, hospitality\, and traditions that are such an important part of Iranian culture.” \n \n \n\n\n\n \nON THE MENU (subject to change) \n\nMirza Ghasemi (Aubergine Dip) | Vegetarian; Egg\nAdas Polo (Sweet and Fragrant Lentil Rice) | Vegetarian; Milk\nAsh Reshteh (Noodle Soup) | Vegetarian; Milk\, Gluten (Wheat)\nBorani Esfenaj (Spinach Dip) | Vegetarian; Milk\, Tree Nuts (Walnuts)\nSambusa (Spiced Potato Filo Parcels) | Vegan; Gluten (Wheat)\nTas Kebab (Tangy Chicken with Quince and Plums) | Meat (Chicken); None\n\nThis menu contains meat (chicken) but is vegetarian-friendly\, with 5 of 6 dishes meat-free. I also worked as a head chef in Iran. For me\, cooking is not only about making food\, it’s about sharing happiness\, my culture and my memories\, and bringing people together.  Through a friend in my English class\, I was very lucky to hear about Migrateful – it is giving me the chance to share my culture and the amazing Persian food from my childhood.
