My dad was from Oman\, and I think this has helped me create my own type of cuisine – a mix of Egyptian and Omani food. \nMy dad also loved to cook\, so I had two very good teachers. I improved my cooking skills through observing and working with chefs in my restaurant business. Now I’m in the UK\, I’m starting a new chapter and bringing with me the flavours of Oman. I hope to open my own restaurant business in London one day. When I came to Bristol in 2020 I felt relief because the people were so friendly and supportive. \nI learnt to cook from my grandmother and stepmother when I was 15. They said you must look after yourself when you are at University. I discovered I loved cooking. The first things I cooked were rice and aubergine stew to go with lamb. \nWhen I lived in Manchester with 4 friends\, I did all the cooking. In Bristol I worked in a Kurdish restaurant in Old Market. \nI love sharing my recipes from my country with people from different countries. Kurdish cuisine uses a lot of fresh ingredients\, herbs and spices. It is very tasty but not too spicy. Recipes vary across Ethiopia’s regions and communities\, but food is always closely tied to hospitality\, family\, and celebration. Built around pulses\, vegetables\, warming spice blends\, and slow-cooked dishes\, Ethiopian cooking is as much about sharing and connection as it is about flavour.  \n \nABOUT THE CHEF \n“My name is Tarik and I am from Ethiopia – a country in East Africa\, which has a long history and is home to many. We are proud to have 83 different languages. The Ethiopian Orthodox Church combines elements of the Old and New Testament; this old history combined with Ethiopia’s natural beauty of volcanos\, mountains and lakes now attracts many tourists to Ethiopia.  \n \nMy grandmother inspired me to cook and taught me a lot about cooking – she said I was a quick learner! She loved people and every day\, she would make traditional Ethiopian coffee and invite all of our neighbours and friends to our home. She loves to cook for special occasions\, especially at New Year. My grandmother also taught me the importance of kindness and being helpful and I think of her when I am cooking.  \n \nWhen I arrived in the UK\, I continued my love of cookery and volunteered in community\, church and Red Cross kitchens\, in Liverpool and in Preston. I am the youngest of five. I have three brothers and one sister. I was born and grew up on the east coast by the sea in a place called Batticaloa. I learnt to cook from my mother when I was young. My favourite dishes were Okra and Fish Curry\, made with fresh coconut. I love playing cricket and on Sundays\, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef. At her suggestion\, I started cooking school and soon I was creating new dishes on my own. When the hotel closed\, I first started cooking for homeless people and then for children with additional needs. I became a mother figure for many of the kids and some of the older people. I grew up in Spanish Town\, the capital of the Parish of St Catherine. We lived very centrally as my mum worked in the market in town\, selling fish and fresh vegetables. I would often help my mum at the market and I learnt to cook through watching her. \nSometimes when she was working\, I would look after my younger siblings and would cook for them. \nMy passion for cooking only grew and I often cooked for my neighbours and for parties and celebrations for my friends and family. I love seeing satisfaction and joy on people’s faces when I cook for them. My favourite dish is ackee and salt fish – so much so that when I moved to Antigua I brought an ackee tree to plant in my garden and this is something that I always cook for my two children. \nI’ve been in Bristol for a year now and it’s a very friendly and supportive city. I’m volunteering with local refugee charities Bristol Hospitality Network and Borderlands. When I got my refugee status last year I held a big picnic in the park for my friends to celebrate. Jamaican food is spicy and full of flavour\, using lots of fresh vegetables and herbs. \nCooking and eating Jamaican food helps me reconnect to home\, music is also very important to me and I love dancing while I cook – no matter what is going on in life\, it makes me feel happy. I grew up in Somalia\, East Africa\, with my mum and dad and three siblings – I’m the second oldest. I learned to cook with my Mum. She had her own recipes and her own way of cooking. I stayed at her side while she cooked – she needed my help and I was so interested. I would stand with her for six hours at a time. I stayed at school until I was 9 years old and then I stopped. But I wanted to carry on learning so I kept reading and teaching myself.  \nGradually I started cooking more\, by the age of 12 I was cooking for the family.   \n \nI came to the UK in 2004\, first to Weston Super Mare then to Bristol. I met and married my husband that same year and had my first baby in 2005. Now I have four children! As well as cooking for my family\, I cook at lunch clubs and organise celebrations and events for older people\, for women\, in schools and for young people. Always bringing people together through food. \n \nI like teaching – seeing people concentrate. When you cook\, you use different muscles and hold yourself differently\, it brings out the best in people. The way I make samosas is second nature to me. I moved here from Jeddah\, Saudi Arabia in 2013. I have lived the majority of my life there. Culturally I am Uyghur\, an ethnic Muslim minority located in Central Asia (now part of China called Xinjiang). The dishes I teach in my class are a mix of the two cultures I come from. I learned to cook from my Mum. She used to call my sisters and me to assist her with cooking. I was her main helper\, especially when it came to pulling noodles. \nWhen I was in high school and had our summer holiday\, my mum trusted me enough to cook for the family and I insisted she write me the recipes with every little detail. I got paid for it! My mum taught me to cook several cuisines from around the world but my favourites were Saudi & Uyghur.
