I’m from a tribe called Yoruba. In Nigeria\, Yoruba are one of the three largest tribes in Nigeria. The other two are Igbo and Hausa\, but Nigeria has 250 ethnic groups/tribes with many different languages and culinary traditions. \n \nMy love for cooking started in my mum and aunt’s kitchen\, where I learned that food is about care\, culture and bringing people together. Their passion became my passion too. I enjoy blending traditional Nigerian flavours with my own touches to create dishes that feel familiar yet new.  My mum and aunt are so impressed and I hope I impress you too!  \n \nIn Nigeria\, we cook with a lot of varieties of protein\, using beef\, chicken\, goat\, eggs\, nuts and beans. My dad was from Oman\, and I think this has helped me create my own type of cuisine – a mix of Egyptian and Omani food. \nMy dad also loved to cook\, so I had two very good teachers. I improved my cooking skills through observing and working with chefs in my restaurant business. Now I’m in the UK\, I’m starting a new chapter and bringing with me the flavours of Oman. I hope to open my own restaurant business in London one day. When embarking on an exploration of Syrian cuisine\, expect an eating experience rooted in hospitality\, connection\, fresh flavours and a diverse range of dishes.  \n \nABOUT THE CHEF \n“My name is Manal\, I am from Damascus\, the capital of Syria. I studied chemistry in University\, as well as other courses like body language\, first aid and computing. After raising three children\, I decided to open my own shop\, selling my designs of handmade hats\, bags and accessories.  \nI moved to the UK in 2024\, and started a new chapter in my life with gratitude and excitement. I am very grateful to the UK because here\, I can sleep feeling safe and warm with my children and my kind husband.  \nCooking has been a part of my life since childhood. I grew up in a big family where food was not just about eating\, it was about love\, family gatherings and warm memories together. I am from the lovely island nation of Trinidad and Tobago in the Caribbean and I am the mother of two daughters. My cooking journey started over 25 years ago when I was just 10. My mother had to go to work\, leaving me to cook for my two younger siblings. At first\, I made some pretty awful dishes but with my mother’s help and encouragement\, I got better. At her suggestion\, I started cooking school and soon I was creating new dishes on my own. I then trained at the Trinidad and Tobago International Hilton Hotel and worked as a sous chef at the Carlton Savannah Hotel when Queen E stayed there in 2009. When the hotel closed\, I first started cooking for homeless people and then for children with additional needs. I became a mother figure for many of the kids and some of the older people. I have been volunteering for Praxis charity for the last year\, a charity that helps support people on their immigration journey. \nIn addition to cooking\, I am passionate about music\, dancing and laughing! I have always loved to cook\, and\, of course\, to eat. My mother was my first teacher\, but I also learnt from my grandmother and my aunts as we all lived in a multi-generational home; always cooking\, eating and celebrating together. I love to cook with lots of fresh herbs\, and these make Iranian dishes so special. I make delicious food for myself\, my family and friends – and my friends are always inviting me to cook for them. \nI am a very creative person\, so I love to make my dishes look beautiful. Presentation in Iranian cooking is very important and I will teach you to use ingredients to make the dishes look appealing and for your guests to look forward to. I really care about my health\, and believe that the food we eat is directly related to our health – so preparing food that is nutritious as well as delicious is really important to me. I look forward to sharing my tasty\, healthy food with you. \nI love to practise yoga\, to meditate and study astrology. I also like to keep fit and I love music\, so I will often have music playing whilst I am cooking. It makes me feel happy\, and I hope I can share some Iranian music with you! My dad was from Oman\, and I think this has helped me create my own type of cuisine – a mix of Egyptian and Omani food. \nMy dad also loved to cook\, so I had two very good teachers. I improved my cooking skills through observing and working with chefs in my restaurant business. Now I’m in the UK\, I’m starting a new chapter and bringing with me the flavours of Oman. I hope to open my own restaurant business in London one day. I am the youngest of five. I have three brothers and one sister. I was born and grew up on the east coast by the sea in a place called Batticaloa. I learnt to cook from my mother when I was young. My favourite dishes were Okra and Fish Curry\, made with fresh coconut. I love playing cricket and on Sundays\, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef.
