Meals are hands-on\, social\, and made to be shared\, with signature dishes like Ceviche\, Tigrillo\, and Empanadas highlighting the warmth\, creativity\, and communal spirit of Ecuadorian food culture. \n \nABOUT THE CHEF \nA message from our Chef Judith: \n“My name is Judith\, and I am from Ecuador\, a beautiful country in South America. I grew up in Santo Domingo de los Tsachilas\, an area located between the coast and the mountains\, so we had the best produce. I grew up in a big family where food and music were always part of our joy – we loved getting together\, sharing meals\, and dancing. In Ecuador\, you can find four seasons in one day by travelling from one part of the country to another\, and that means that you can experience many different types of food in the country. When I came to England\, I started to do some voluntary work in a ‘healthy living’ community group\, and I used to run a session on healthy eating – this is reflected in my menu today. Teaching others about Ecuadorian food helps me feel close to my country and reminds me that even far from home\, we can still celebrate who we are and connect with others through culture and food. Each dish I create carries the soul of my homeland that is inspired by the unique beauty of the Amazon\, where the jungle speaks and nature is sacred. I grew up in a beautiful city called Sulaymaniyah. I was studying Geography at university\, but in 2017 I needed to leave because it was dangerous for me to stay. When I came to Bristol in 2020 I felt relief because the people were so friendly and supportive. \nI learnt to cook from my grandmother and stepmother when I was 15. They said you must look after yourself when you are at University. I discovered I loved cooking. The first things I cooked were rice and aubergine stew to go with lamb. \nWhen I lived in Manchester with 4 friends\, I did all the cooking. In Bristol I worked in a Kurdish restaurant in Old Market. \nI love sharing my recipes from my country with people from different countries. Kurdish cuisine uses a lot of fresh ingredients\, herbs and spices. It is very tasty but not too spicy. Sierra Leone is a small country in West Africa bordered by Guinea\, Liberia and the Atlantic Ocean. I am a Fulani\, and my tribal identity is as important as my national identity. Sierra Leone is a culturally diverse country\, rich in a number of minerals including diamonds and gold. \nCooking has always been my passion. As a very young child\, I was already pretending to be a chef and made my siblings play along with this game. I started cooking for real when I was 12 years old at my mother’s side. She started by giving me simple tasks to do and gradually taught me how to prepare dishes properly. I am grateful that she shared her secret tips with me. \nI believe it is important to continuously develop oneself and in the importance of community. Putting these principles into practice\, I became a volunteer chef with the Red Cross and with Connect All Community\, cooking for over 60 people every week. \nI bring humour and joy to everything I do\, including my cookery classes. I grew up in Spanish Town\, the capital of the Parish of St Catherine. We lived very centrally as my mum worked in the market in town\, selling fish and fresh vegetables. I would often help my mum at the market and I learnt to cook through watching her. \nSometimes when she was working\, I would look after my younger siblings and would cook for them. \nMy passion for cooking only grew and I often cooked for my neighbours and for parties and celebrations for my friends and family. I love seeing satisfaction and joy on people’s faces when I cook for them. My favourite dish is ackee and salt fish – so much so that when I moved to Antigua I brought an ackee tree to plant in my garden and this is something that I always cook for my two children. \nI’ve been in Bristol for a year now and it’s a very friendly and supportive city. I’m volunteering with local refugee charities Bristol Hospitality Network and Borderlands. When I got my refugee status last year I held a big picnic in the park for my friends to celebrate. Jamaican food is spicy and full of flavour\, using lots of fresh vegetables and herbs. \nCooking and eating Jamaican food helps me reconnect to home\, music is also very important to me and I love dancing while I cook – no matter what is going on in life\, it makes me feel happy. I have lived most of my life in Punjab\, India. It is a farmland state in the north of India and the name comes from five rivers which flowed through the region at one time.  \n \nMy journey is a bit unusual as it started from need\, rather than passion. I grew up in a big family and I learned by watching and trying. When my family was away\, I made my first dish\, similar to tacos\, which was well liked by my family after their return.  \n \nI believe cooking is a very important skill\, not a talent. Eritrea’s food reflects a blend of indigenous traditions\, Ottoman\, Italian\, and Middle Eastern influences due to historical interactions. It combines bold spices\, legumes\, vegetables\, grains\, and fresh herbs to create vibrant\, flavourful dishes. Meals are hands-on\, social\, and meant to be shared\, with signature dishes like Shiro\, Zegny\, and Salata Bazinjan served communally on one plate\, highlighting the warmth\, creativity\, and togetherness of Eritrean food culture. \n \nABOUT THE CHEF  \nA message from our Chef Wedad: \n“Hi\, my name is Wedad and I come from a town called Keran in south-west Eritrea. Eritrea is a beautiful country in East Africa and is surrounded by mountains and the Red Sea. I grew up with my grandmother\, who loved to cook and taught me all her recipes. My friends and I liked to cook our dishes for each other and so I also learnt how to cook other cuisines. My favourite dish is Salata Banzinjan\, an aubergine salad\, which I make in lots of different ways. Eritrean food is typically spicy and is served on one plate to be shared with the whole family. One of the things that we eat often is a fermented bread called injera\, which we have at lunchtime. Today\, we will be serving injera with Shiro and Salata Banzinjan. I came to the UK in 2012 and the biggest barrier I faced was the language. Now I study English at the Red Cross and one day we were writing about our favourite food. A few weeks later\, I brought in the dish that I wrote about – kebab – and my teacher and colleagues liked it so much\, she suggested I apply to join Migrateful! I grew up in Rabwah\, on the lush green banks of the Chenab River in Punjab. The town was established for the Ahmadiyya community. \nI remember my childhood there very fondly\, they were the happiest days of my life and still bring me peace when I think about them. From the age of 10\, I helped my mother cook\, and by 12 I was cooking properly on my own. Okra masala and aubergine curry were among the first dishes I learned to make. My father always praised my cooking and gave me confidence\, while my mother would gently suggest ways to improve. \nAfter I married\, I moved to Bahawalpur with my husband\, who is a doctor\, and together we raised our four children. But because Ahmadis face persecution in Pakistan\, it became unsafe for us to stay there. We first moved to Senegal\, where my husband helped establish the Humanity First hospital\, and later to The Gambia so our children could study in English. At her suggestion\, I started cooking school and soon I was creating new dishes on my own. When the hotel closed\, I first started cooking for homeless people and then for children with additional needs. I became a mother figure for many of the kids and some of the older people. I have travelled a lot in Bangladesh\, it’s a beautiful country with many landscapes from the Sundarbans forest to Saint Martins Island to the hill stations of Khagrachari and Cox’s Bazaar with a long sand beach.  \n \nI went to university in Sylhet and there I started cooking by myself because I missed home cooking. I kept cooking for my friends and neighbours. The first time I cooked biriyani\, I called my mum! When I was growing up\, having guests over was very normal. A minimum of 2 or 3 people\, sharing tea and snacks\, and sending food for people.  \n \nIn the morning\, we would buy fresh groceries\, especially fresh-water fish. Fish is a common staple in Bengali cuisine\, you’ll find it at every table. As well as this\, a few different curries – lentils\, meat and rice. It is one of the largest and most beautiful cities; it sits among mountains and is very green.  \nSince childhood\, I have always loved food and cooking\, especially traditional Persian dishes. I learned Persian cooking techniques from my mother\, but also particularly from my grandfather. He was a chef who loved to cook with the food he had grown. He had a large field of crocuses – which are the source of saffron\, a very important ingredient in Iranian cooking.  \nCooking was always a passion of mine\, alongside my main profession; I trained and worked as a lawyer in Iran. I also worked as a head chef in Iran. I grew up in Somalia\, East Africa\, with my mum and dad and three siblings – I’m the second oldest. I learned to cook with my Mum. She had her own recipes and her own way of cooking. I stayed at her side while she cooked – she needed my help and I was so interested. I would stand with her for six hours at a time. I stayed at school until I was 9 years old and then I stopped. But I wanted to carry on learning so I kept reading and teaching myself.  \nGradually I started cooking more\, by the age of 12 I was cooking for the family.   \n \nI came to the UK in 2004\, first to Weston Super Mare then to Bristol. I met and married my husband that same year and had my first baby in 2005. Now I have four children! I grew up in Rabwah\, on the lush green banks of the Chenab River in Punjab. The town was established for the Ahmadiyya community. \nI remember my childhood there very fondly\, they were the happiest days of my life and still bring me peace when I think about them. From the age of 10\, I helped my mother cook\, and by 12 I was cooking properly on my own. Okra masala and aubergine curry were among the first dishes I learned to make. My father always praised my cooking and gave me confidence\, while my mother would gently suggest ways to improve. \nAfter I married\, I moved to Bahawalpur with my husband\, who is a doctor\, and together we raised our four children. But because Ahmadis face persecution in Pakistan\, it became unsafe for us to stay there. We first moved to Senegal\, where my husband helped establish the Humanity First hospital\, and later to The Gambia so our children could study in English. In 2023\, we moved to the UK. \nPakistani culture is deeply rooted in hospitality and care for others\, it is very important to make guests feel welcomed and cared for.
