I grew up in a beautiful city called Sulaymaniyah. I was studying Geography at university\, but in 2017 I needed to leave because it was dangerous for me to stay. When I came to Bristol in 2020 I felt relief because the people were so friendly and supportive. \nI learnt to cook from my grandmother and stepmother when I was 15. They said you must look after yourself when you are at University. I discovered I loved cooking. The first things I cooked were rice and aubergine stew to go with lamb. \nWhen I lived in Manchester with 4 friends\, I did all the cooking. In Bristol I worked in a Kurdish restaurant in Old Market. \nI love sharing my recipes from my country with people from different countries. DESCRIPTION:Chef Hani will teach you some of his favourite Omani dishes followed by a sit down meal.\n\n\nABOUT THE CUISINE \nOmani cuisine blends Asian influences with aromatic spices and herbs from the Middle East that bring warmth to every dish – like Hani’s Makbous\, a popular and traditional rice dish that is known for its deep\, aromatic taste and considered a symbol of Omani hospitality. \n\n\n\nABOUT THE CHEF \nMy name is Hani\, and I come from the Sultanate of Oman — a beautiful country in the Middle East with a rich history\, deep-rooted traditions\, and a vibrant culinary culture. \nMy mum taught me to cook – she is Egyptian and I really love Egyptian food. My dad was from Oman\, and I think this has helped me create my own type of cuisine – a mix of Egyptian and Omani food. \nMy dad also loved to cook\, so I had two very good teachers. I improved my cooking skills through observing and working with chefs in my restaurant business. Now I’m in the UK\, I’m starting a new chapter and bringing with me the flavours of Oman. I hope to open my own restaurant business in London one day. From curries and lentils to fritters and salads\, it sits within South Asian cooking while keeping its own distinct identity.  \n \nABOUT THE CHEF \nA message from Chef Amtul: \n““I come from Pakistan\, it is a beautiful country. I grew up in Rabwah\, on the lush green banks of the Chenab River in Punjab. The town was established for the Ahmadiyya community. \nI remember my childhood there very fondly\, they were the happiest days of my life and still bring me peace when I think about them. From the age of 10\, I helped my mother cook\, and by 12 I was cooking properly on my own. Okra masala and aubergine curry were among the first dishes I learned to make. My father always praised my cooking and gave me confidence\, while my mother would gently suggest ways to improve. \nAfter I married\, I moved to Bahawalpur with my husband\, who is a doctor\, and together we raised our four children. But because Ahmadis face persecution in Pakistan\, it became unsafe for us to stay there. We first moved to Senegal\, where my husband helped establish the Humanity First hospital\, and later to The Gambia so our children could study in English. In 2023\, we moved to the UK. \nPakistani culture is deeply rooted in hospitality and care for others\, it is very important to make guests feel welcomed and cared for. During my time in Senegal and Gambia\, I was always hosting people visiting the hospital from different countries. I always made sure they had delicious food to eat and extras to take with them. Cooking for people has always brought me joy. I only know how to cook in large quantities! My food is spicy\, balanced\, fresh\, comforting\, and full of flavour. Expect richly spiced\, fragrant meals that showcase the island’s culinary heritage\, blending vegetarian\, seafood\, and meat dishes in a communal and celebratory style. \n \nABOUT THE CHEF \nA message from our Chef Akram: \n“Hello\, My name is Akram\, I come from Sri Lanka. I am the youngest of five. I have three brothers and one sister. I was born and grew up on the east coast by the sea in a place called Batticaloa. I learnt to cook from my mother when I was young. My favourite dishes were Okra and Fish Curry\, made with fresh coconut. I love playing cricket and on Sundays\, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef. Iranian food is deeply social\, with meals shared in warm\, communal gatherings\, a celebration of hospitality\, and connection. \n \nABOUT THE CHEF \nA message from Chef Rose: \n“My name is Rose\, and I moved to the UK two years ago. One of the things I have loved about coming here is meeting people from all over the world\, I believe food is a wonderful way to learn about eachother and discover new cultures\, traditions\, and stories. \nBefore moving to the UK\, I studied midwifery and later trained in surgery. I worked in a surgical department for 17 years. Although my career was in healthcare\, food has always played an important role in my life. \nMy mother was an excellent cook and was well known among family and friends for her delicious meals and desserts. She wanted me to focus on my education\, so she never really taught me how to cook. However\, growing up with her wonderful food taught me what good food should taste like and gave me a real appreciation for cooking. \nI only started cooking after I got married. In Iranian culture\, preparing food for the family is often an important part of home life. To my surprise\, I learned very quickly\, and before long people were complimenting my food and asking for my recipes. I believe I owe this to my mother. I grew up in Santo Domingo de los Tsachilas\, an area located between the coast and the mountains\, so we had the best produce. I grew up in a big family where food and music were always part of our joy – we loved getting together\, sharing meals\, and dancing. In Ecuador\, you can find four seasons in one day by travelling from one part of the country to another\, and that means that you can experience many different types of food in the country. When I came to England\, I started to do some voluntary work in a ‘healthy living’ community group\, and I used to run a session on healthy eating – this is reflected in my menu today. Teaching others about Ecuadorian food helps me feel close to my country and reminds me that even far from home\, we can still celebrate who we are and connect with others through culture and food.
