SUMMARY:Ecuadorian Cookery Class with Judith |Veg Friendly| LONDON|Cookery School
DESCRIPTION:Chef Judith will teach you some of her favourite Ecuadorian dishes followed by a sit down meal.\n\n\nABOUT THE CUISINE \nEcuadorian cuisine comes from South America and reflects the country’s diverse geography\, from the Pacific coast to the Andes mountains and the Amazon rainforest. It combines fresh seafood\, tropical fruits\, vegetables\, grains\, and spices to create vibrant\, flavourful dishes. Meals are hands-on\, social\, and made to be shared\, with signature dishes like Ceviche\, Tigrillo\, and Empanadas highlighting the warmth\, creativity\, and communal spirit of Ecuadorian food culture. \n \nABOUT THE CHEF \nA message from our Chef Judith: \n“My name is Judith\, and I am from Ecuador\, a beautiful country in South America. I grew up in Santo Domingo de los Tsachilas\, an area located between the coast and the mountains\, so we had the best produce. I grew up in a big family where food and music were always part of our joy – we loved getting together\, sharing meals\, and dancing. In Ecuador\, you can find four seasons in one day by travelling from one part of the country to another\, and that means that you can experience many different types of food in the country. When I came to England\, I started to do some voluntary work in a ‘healthy living’ community group\, and I used to run a session on healthy eating – this is reflected in my menu today. Teaching others about Ecuadorian food helps me feel close to my country and reminds me that even far from home\, we can still celebrate who we are and connect with others through culture and food. Each dish I create carries the soul of my homeland that is inspired by the unique beauty of the Amazon\, where the jungle speaks and nature is sacred. My hands work with love\, honouring my roots and sharing a little piece of living nature with the world.” \n \n\n\n\n \nON THE MENU (subject to change): \n\nTwo Ceviche | Fish (Prawns) and Vegan; Celery\, Crustaceans\, Mustard\nTigrillo (Plantain Hash) | Vegetarian; Eggs\, Milk\, Peanuts\nEstofado de Carne y Chocolate (Beef Stew with Chocolate) | Meat (Beef); Celery\nEstofado de Vegetales (Golden Vegetable Stew) | Vegan; Celery\nEmpanadas de Viento (Cheese-Filled Pastries) | Vegetarian; Eggs\, Gluten (Wheat)\, Milk\nColada Morada (Warm Fruit Punch) | Vegan; None\n\nThis menu contains meat (beef) and fish (prawns) but is vegetarian-friendly (5/6 dishes are meat-free). While ingredients and dishes vary across Nigeria’s regions\, every meal is rooted in hospitality\, and the joy of bringing people together around the table.  \n \nABOUT THE CHEF \n“I’m Bolu and I’m from south-west Nigeria. I’m from a tribe called Yoruba. In Nigeria\, Yoruba are one of the three largest tribes in Nigeria. Their passion became my passion too. I enjoy blending traditional Nigerian flavours with my own touches to create dishes that feel familiar yet new.  My mum and aunt are so impressed and I hope I impress you too!  \n \nIn Nigeria\, we cook with a lot of varieties of protein\, using beef\, chicken\, goat\, eggs\, nuts and beans. The climate in Nigeria helps the farmers to grow many leafy vegetables\, yam\, sweet potatoes\, plantain and cocoa. I can’t wait to share all of these wonderful ingredients with you in my class.  \n \nWhen I’m not in the kitchen\, you’ll find me on the football pitch or in my dance class. I also love listening to music while cooking; it gives me inspiration and motivation. All that keeps me disciplined\, focused and balanced. DESCRIPTION:Chef Saeid will teach delicious\, authentic Iranain dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \nIranian cuisine comes from the Middle East and Central Asia\, shaped by a rich history of Persian culture\, regional diversity\, and trade along the Silk Road. It combines fresh herbs\, grains\, legumes\, fruits\, nuts\, and spices to create balanced and aromatic dishes. Meals are hands-on\, social\, and meant to be shared\, with signature dishes like Kashk Bademjan\, Fesenjan Stew\, and Dolma.  \n \nKnown for its delicate balance of sweet\, sour\, and savoury flavours\, it combines fragrant herbs\, spices\, fruit\, nuts\, and grains to create dishes that are both comforting and elegant.  \n \nABOUT THE CHEF \n“My name is Saeid and I was born in Mashhad\, in the far North-East of Iran. It is one of the largest and most beautiful cities; it sits among mountains and is very green.  \nSince childhood\, I have always loved food and cooking\, especially traditional Persian dishes. I learned Persian cooking techniques from my mother\, but also particularly from my grandfather. He was a chef who loved to cook with the food he had grown. He had a large field of crocuses – which are the source of saffron\, a very important ingredient in Iranian cooking.  \nCooking was always a passion of mine\, alongside my main profession; I trained and worked as a lawyer in Iran. I also worked as a head chef in Iran. For me\, cooking is not only about making food\, it’s about sharing happiness\, my culture and my memories\, and bringing people together.  Through a friend in my English class\, I was very lucky to hear about Migrateful – it is giving me the chance to share my culture and the amazing Persian food from my childhood. She was very generous and always cooked extra for those in need. \nSadly\, because of the civil war in Sri Lanka\, my family had to move to Bahrain. There I worked in the welfare department of an Islamic NGO\, but I was also able to use my cooking skills and I cooked for events for the Youth Group. SUMMARY:Hong Konger Cookery Class with Bon | Veg Friendly|LONDON | Cookery School
DESCRIPTION:In this session Bon will teach delicious\, authentic Hong Konger dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \n \nHong Kong cuisine is a vibrant blend of Eastern and Western influences\, reflecting its unique history and multicultural community. From delicate dumplings to comforting rice dishes and sweet desserts\, each dish combines fresh ingredients with bold\, balanced flavours. Meals are social and hands-on\, perfect for sharing with friends and family\, and offer a taste of the culinary diversity that makes Hong Kong a true food paradise. \n \nABOUT THE CHEF \n“Hi my name is Bon and I grew up in Hong Kong\, a city where the smell of steaming bamboo baskets and roasting meats fills every street corner and where eating well is a serious matter of pride. Growing up\, the highlight of every weekend was ‘Yum Cha’ (drinking Chinese tea with family); the whole family gathering around a round table\, aunties arguing over the last dim sum\, grandparents guiding the younger on how to pour tea properly and cousins sneaking extra eggs tarts before the meals was done. Those loud\, joyful mornings in a Cantonese tea house are some of my most treasured memories and they are the reason I cook the way I do. To me\, Yum Cha isn’t just a meal – it’s a ritual of gathering\, of generosity\, of saying ‘I love you’ through food.  \n \nIn my class\, I want to bring that experience to you. We’ll take the humble home-cooked dishes of Hong Kong  and lift them to the standard of a proper Cantonese tea house. You’ll learn the technique behind dishes that look simple\, but carry decades of tradition: how to fold a dumpling so the filling stays juicy\, how to balance sweet\, sour and umami the Cantonese way\, and how to recreate that Yum Cha feeling – wherever you are in the world. I can’t wait to share this culinary experience with you!” \n \n\n\n\n \nON THE MENU (subject to change): \n\nBeef Ho Fun (Stir-Fried Beef Noodles) | Meat (Beef); Gluten (Wheat)\, Molluscs\, Soya                                                                                                                                                                             \nMala Ho Fun (Spice Mala Vegetable Stir-Fried Noodles) | Vegan; Gluten (Wheat)\, Soya \nPrawn Dim Sum (Prawn Dumplings) | Meat (Pork) and Fish (Prawns); Crustaceans\, Gluten (Wheat)\, Sesame\nTofu Dim Sum (Tofu Dumplings) | Vegetarian; Eggs\, Gluten (Wheat)\, Sesame\, Soya\nTempura Platter | Vegan; Gluten (Wheat)\, Soya                                                                                                                                                                 \nMilky Soup | Vegetarian; Eggs\, Soya    \nJapanese Style Salad | Vegetarian; Eggs\, Gluten (Wheat)\, Sesame\, Soya \nRed Bean Soup Dessert | Vegan; None \n\n \nThis menu contains meat (beef and pork) and fish (prawns) but is vegetarian-friendly (6/8 dishes are meat-free). Meals are hands-on\, social\, and made to be shared\, with dishes like Dolma\, Borek\, Shakshuka\, and Mesfouf showcasing the country’s culinary diversity and warmth. \n \nABOUT THE CHEF \n“My name is Naziha. I am from Algiers the capital of Algeria\, in the North of the country on the Mediterranean Sea\, sandwiched between Tunisia and Morocco. \nAt home in Algeria\, I was the spoilt youngest child\, so the only cooking I did was ‘play cooking’ with my beloved Auntie\, who gave me miniature cooking equipment and encouraged me to copy her. At University\, I became more interested in food and started asking for recipes from my relatives. I also learnt to prepare sweets for Eid. I love to cook Algerian food that I’ve enjoyed eating and have an inbuilt instinct to replicate the flavours and smells of my childhood. \nIn Algeria\, I graduated from University in Computing management and Accounting. I came to the UK 15 years ago to join my husband who is my best friend’s cousin. We met when he was visiting my friend and fell in love! \n \nMigrateful has encouraged me to have more confidence to express myself and share my passion for Algerian food. I feel happy when cooking for people – feeding them delicious food is my love language and I get great pleasure when people enjoy eating what I’ve prepared. DESCRIPTION:Chef Hani will teach you some of his favourite Omani dishes followed by a sit down meal.\n\n\nABOUT THE CUISINE \nOmani cuisine blends Asian influences with aromatic spices and herbs from the Middle East that bring warmth to every dish – like Hani’s Makbous\, a popular and traditional rice dish that is known for its deep\, aromatic taste and considered a symbol of Omani hospitality. \n \nABOUT THE CHEF \nMy name is Hani\, and I come from the Sultanate of Oman — a beautiful country in the Middle East with a rich history\, deep-rooted traditions\, and a vibrant culinary culture. \nMy mum taught me to cook – she is Egyptian and I really love Egyptian food. I improved my cooking skills through observing and working with chefs in my restaurant business. Now I’m in the UK\, I’m starting a new chapter and bringing with me the flavours of Oman. I hope to open my own restaurant business in London one day. DESCRIPTION:In this session Amel will teach delicious\, authentic Algerian dishes followed by a sit-down\, family-style meal.\n\n\nABOUT THE CUISINE \nAlgerian cuisine is a beautiful blend of North African\, Mediterranean\, and French influences — rich in spices\, seasonal vegetables\, slow-cooked stews\, and warm breads. From fragrant soups like Chorba Frik to comforting tagines and delicate pastries\, Algerian food is deeply social\, made to be shared\, and full of heritage. With flavours shaped by centuries of cultural exchange\, every dish tells a story of community\, generosity\, and home. \n \nABOUT THE CHEF \nA message from our Chef Amel: \nHi my name is Amel\, I am from Sidi Bel Abbes in Western Algeria. Our city is nicknamed ‘Petit Paris’ because there is a strong French influence. I wasn’t allowed to cook growing up because my parents wanted me to focus on my studies. I was a teacher in Algeria but wasn’t able to continue teaching when I moved to the UK in 2015. After I met my wonderful husband\, we quickly had children and I began to spend more time at home. During this time\, I realised my passion for cooking and baking. I cooked so much for my friends and family that they told me to stop as they feared they were getting fat. In the future\, I want to open my own bakery where I can share Algerian food and culture with people in London. Algeria is extremely multicultural and culturally rich\, which is something I am very proud of. I have always been a daydreamer and I really value the freedom to pursue my dreams here in the UK”. \n \n\n\n\nON THE MENU (subject to change): \n\nTagine Zitoun (Olive Tagine with Chicken and Meatballs) | Meat (Chicken and Lamb); Egg\, Gluten (Wheat)\nChorba Frik (Vegetable Soup with Freekah and Carraway) | Vegetarian; Celery\, Gluten (Wheat)\nBourek (Tuna Pastry Parcels with Cheese) | Fish (Tuna); Eggs\, Fish\, Gluten (Wheat)\, Milk\nRekhsas (Algerian Semolina and Nigella Seed Flatbread) | Vegetarian; Celery\, Milk\nSamsa b-louz (Fried Almond\, Sesame and Honey Pastries) | Vegetarian; Gluten (Wheat)\, Milk\, Sesame\, Tree Nuts (Almonds)\n\nThis menu contains meat (chicken and lamb) and fish (tuna). SUMMARY:Ethiopian Cookery Class with Tarik | Vegetarian | LONDON | Cookery School
DESCRIPTION:Chef Tarik will teach delicious\, authentic Ethiopian dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \n \nEthiopian cuisine is one of the oldest and most distinctive culinary traditions in the world. At its heart is injera\, a soft\, fermented flatbread that serves as both the plate and the utensil\, bringing people together to share a meal from a single platter. Recipes vary across Ethiopia’s regions and communities\, but food is always closely tied to hospitality\, family\, and celebration. Built around pulses\, vegetables\, warming spice blends\, and slow-cooked dishes\, Ethiopian cooking is as much about sharing and connection as it is about flavour.  \n \nABOUT THE CHEF \n“My name is Tarik and I am from Ethiopia – a country in East Africa\, which has a long history and is home to many. We are proud to have 83 different languages. The Ethiopian Orthodox Church combines elements of the Old and New Testament; this old history combined with Ethiopia’s natural beauty of volcanos\, mountains and lakes now attracts many tourists to Ethiopia.  \n \nMy grandmother inspired me to cook and taught me a lot about cooking – she said I was a quick learner! She loved people and every day\, she would make traditional Ethiopian coffee and invite all of our neighbours and friends to our home. She loves to cook for special occasions\, especially at New Year. My grandmother also taught me the importance of kindness and being helpful and I think of her when I am cooking.  \n \nWhen I arrived in the UK\, I continued my love of cookery and volunteered in community\, church and Red Cross kitchens\, in Liverpool and in Preston. I was referred to Migrateful by the Luminary Bakery and I love it so much! I look forward to teaching you about Ethiopian culture and about our food and drinks – I can’t wait to see you in my class!” \n \n\n\n\nON THE MENU (subject to change): \n \n\nDinich Wot (Spicy Potato and Egg Stew) | Vegetarian; Eggs\, Milk   \nTikil Gomen (Ethiopian Sauteed Cabbage with Carrot and Potato) | Vegan; None\nGomen (Slow-Cooked Ethiopian Greens) | Vegan; None\nShiro Wot (Roasted Ground Chickpea Stew) | Vegetarian; Milk\nKey Sir (Ethiopian Braised Beetroot) | Vegan; None   \nMista Salad (Green Lentil Salad) | Vegan; Mustard\nAyib (Ethiopian Cottage Cheese) | Vegetarian; Milk   \nDabo (Orange-Perfumed Bread)| Vegetarian; Gluten (Wheat)\, Milk\n\n                                                                                                                \nThis menu is vegetarian. SUMMARY:Ecuadorian Cookery Class with Judith |Veg Friendly| LONDON| Cookery School
SUMMARY:Iranian Cookery Class with Rose | Veg Friendly | Bristol
DESCRIPTION:Chef Rose will teach delicious\, authentic Iranian dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \nIranian cuisine is renowned for its aromatic herbs\, delicate spices\, and beautiful balance of sweet and sour flavours. From rich stews like Fesenjan to vibrant yoghurt dishes and saffron-scented rice. Iranian food is deeply social\, with meals shared in warm\, communal gatherings\, a celebration of hospitality\, and connection. \n \nABOUT THE CHEF \nA message from Chef Rose: \n“My name is Rose\, and I moved to the UK two years ago. One of the things I have loved about coming here is meeting people from all over the world\, I believe food is a wonderful way to learn about eachother and discover new cultures\, traditions\, and stories. \nBefore moving to the UK\, I studied midwifery and later trained in surgery. I worked in a surgical department for 17 years. Although my career was in healthcare\, food has always played an important role in my life. \nMy mother was an excellent cook and was well known among family and friends for her delicious meals and desserts. She wanted me to focus on my education\, so she never really taught me how to cook. However\, growing up with her wonderful food taught me what good food should taste like and gave me a real appreciation for cooking. \nI only started cooking after I got married.
