Food acted as the glue that kept us together. \nMost of my cooking skills I learned and inherited from my Granny – I was asked to read out recipes from Good Housekeeping magazines – she would choose the ones she thought sounded the most delicious and we’d cook them together\, usually for special occasions like Christmas and birthdays. This ignited my passion for teaching and cooking – allowing me to own a catering business and become a qualified teacher. A deep appreciation for food was developed because I understood the role it played in relationships and families\, eventually extending to my own. \nI arrived in Bristol some years ago\, and have shared my Trinidad culture through numerous cookery classes. I grew up in Spanish Town\, the capital of the Parish of St Catherine. We lived very centrally as my mum worked in the market in town\, selling fish and fresh vegetables. I would often help my mum at the market and I learnt to cook through watching her. \nSometimes when she was working\, I would look after my younger siblings and would cook for them. \nMy passion for cooking only grew and I often cooked for my neighbours and for parties and celebrations for my friends and family. I love seeing satisfaction and joy on people’s faces when I cook for them. My favourite dish is ackee and salt fish – so much so that when I moved to Antigua I brought an ackee tree to plant in my garden and this is something that I always cook for my two children. \nI’ve been in Bristol for a year now and it’s a very friendly and supportive city. I’m volunteering with local refugee charities Bristol Hospitality Network and Borderlands. When I got my refugee status last year I held a big picnic in the park for my friends to celebrate. Jamaican food is spicy and full of flavour\, using lots of fresh vegetables and herbs. \nCooking and eating Jamaican food helps me reconnect to home\, music is also very important to me and I love dancing while I cook – no matter what is going on in life\, it makes me feel happy. My passion for cooking began at age 10\, helping my mum clean okra and learning to haggle in the fish markets with my dad. My father was a teacher and provided for our family and his four sisters. My mother was the oldest daughter in her family\, so everyone would eat at our home. She was very generous and always cooked extra for those in need. \nSadly\, because of the civil war in Sri Lanka\, my family had to move to Bahrain. There I worked in the welfare department of an Islamic NGO\, but I was also able to use my cooking skills and I cooked for events for the Youth Group. My wife is also a very good cook and our dream is to open a restaurant. Afghan food is made to be shared; it’s rich\, aromatic\, and deeply social\, reflecting the warmth and hospitality of its people. \n \n \nABOUT THE CHEF \nA message from chef Vida: \n \n“Hi\, my name is Vida. I’m from Afghanistan and was born in Kabul\, the capital city. \nI learnt to cook from my mother and grandmother. My mother was always cooking for our big family and often needed my help. She would show me how to make something one day\, and then the very next day\, she’d ask me to do it myself. That’s how I learnt so much. Especially desert\, I love desert the best\, and am always making sweet treats. \nTwo years ago\, I started a small business cooking from home through All About the Cooks. People could order my food\, and it would be delivered all over Bristol. My food was very popular. At one point\, I was getting orders for up to 100 people! \nBack in Kabul\, I studied mathematics at university and later taught maths in an all-boys private school. \nNow\, I’m excited to teach again—but this time\, a different subject. The subject is food\, and the classroom is the kitchen. \nI’m happiest when I’m in my kitchen. I play music\, focus on cooking\, and enjoy being in my own world. I grew up in a beautiful city called Sulaymaniyah. I was studying Geography at university\, but in 2017 I needed to leave because it was dangerous for me to stay. When I came to Bristol in 2020 I felt relief because the people were so friendly and supportive. \nI learnt to cook from my grandmother and stepmother when I was 15. They said you must look after yourself when you are at University. I discovered I loved cooking. The first things I cooked were rice and aubergine stew to go with lamb. \nWhen I lived in Manchester with 4 friends\, I did all the cooking. In Bristol I worked in a Kurdish restaurant in Old Market. \nI love sharing my recipes from my country with people from different countries. It’s key position in the spice trade route is reflected in the fragrant and aromatic spices central to Somali cooking. The cuisine is a blend of African\, Middle Eastern\, Italian and Indian influences. Expect fragrant rices\, fresh herbs\, and a balance of sweet and savory in every bite. From Hanid (lamb stew with tamarind gravy) to Bajiyo (falafel) and Bariis Iskukaris (rainbow rice). Somali food brings people together\, celebrating hospitality\, bold flavours and the joy of sharing home cooked meals. \n \nIn this cookery class in Bristol\, you’ll learn to make traditional Somali dishes while connecting with others and supporting refugees and migrants in the UK through food. \n \nABOUT THE CHEF \nA message from chef Saada: \n“Hi my name is Saada. I grew up in Somalia\, East Africa\, with my mum and dad and three siblings – I’m the second oldest. I learned to cook with my Mum. She had her own recipes and her own way of cooking. I stayed at her side while she cooked – she needed my help and I was so interested. I would stand with her for six hours at a time. I stayed at school until I was 9 years old and then I stopped. But I wanted to carry on learning so I kept reading and teaching myself.  \nGradually I started cooking more\, by the age of 12 I was cooking for the family.   \n \nI came to the UK in 2004\, first to Weston Super Mare then to Bristol. I met and married my husband that same year and had my first baby in 2005. Now I have four children! As well as cooking for my family\, I cook at lunch clubs and organise celebrations and events for older people\, for women\, in schools and for young people. Always bringing people together through food. \n \nI like teaching – seeing people concentrate. When you cook\, you use different muscles and hold yourself differently\, it brings out the best in people. The way I make samosas is second nature to me.
