I have lived most of my life in Punjab\, India. It is a farmland state in the north of India and the name comes from five rivers which flowed through the region at one time.  \n \nMy journey is a bit unusual as it started from need\, rather than passion. I grew up in a big family and I learned by watching and trying. When my family was away\, I made my first dish\, similar to tacos\, which was well liked by my family after their return.  \n \nI believe cooking is a very important skill\, not a talent. Everyone can develop it\, given some time and effort! Finding a reason helps a lot and mine is making others happy and smile with my food. There are so many dishes from across India that make me happy – that is why my class focuses on a wider area of India than Punjab. \n \nThe time I have spent with Migrateful has been wonderful and fun. Eritrea’s food reflects a blend of indigenous traditions\, Ottoman\, Italian\, and Middle Eastern influences due to historical interactions. It combines bold spices\, legumes\, vegetables\, grains\, and fresh herbs to create vibrant\, flavourful dishes. Meals are hands-on\, social\, and meant to be shared\, with signature dishes like Shiro\, Zegny\, and Salata Bazinjan served communally on one plate\, highlighting the warmth\, creativity\, and togetherness of Eritrean food culture. \n \nABOUT THE CHEF  \nA message from our Chef Wedad: \n“Hi\, my name is Wedad and I come from a town called Keran in south-west Eritrea. Eritrea is a beautiful country in East Africa and is surrounded by mountains and the Red Sea. I grew up with my grandmother\, who loved to cook and taught me all her recipes. My friends and I liked to cook our dishes for each other and so I also learnt how to cook other cuisines. My favourite dish is Salata Banzinjan\, an aubergine salad\, which I make in lots of different ways. Eritrean food is typically spicy and is served on one plate to be shared with the whole family. One of the things that we eat often is a fermented bread called injera\, which we have at lunchtime. Today\, we will be serving injera with Shiro and Salata Banzinjan. I came to the UK in 2012 and the biggest barrier I faced was the language. Now I study English at the Red Cross and one day we were writing about our favourite food. A few weeks later\, I brought in the dish that I wrote about – kebab – and my teacher and colleagues liked it so much\, she suggested I apply to join Migrateful! My city\, Damitta\, is famous for furniture\, sweets and cheese. I am from a large family and I am the only boy with three sisters. \nAfter I graduated from university as a computer engineer\, I went to work in Kuwait. I worked there for 17 years in the Ministry of Education and the University of Kuwait before I moved to the UK in 2023 with my wife and my two children (I now have three)! \nWhen I was at home in Egypt\, it was always my mother who did the cooking. Although I didn’t cook then\, I learnt a lot from watching her. But when I was living alone in Kuwait\, especially for the first 3 years before I married\, I had to learn how to cook for myself! \nAs I spent half of my life in Egypt and the other half in Kuwait\, I have influences from both countries in my cooking. From curries and lentils to fritters and salads\, it sits within South Asian cooking while keeping its own distinct identity.  \n \nABOUT THE CHEF \nA message from Chef Amtul: \n““I come from Pakistan\, it is a beautiful country. I grew up in Rabwah\, on the lush green banks of the Chenab River in Punjab. The town was established for the Ahmadiyya community. \nI remember my childhood there very fondly\, they were the happiest days of my life and still bring me peace when I think about them. From the age of 10\, I helped my mother cook\, and by 12 I was cooking properly on my own. Okra masala and aubergine curry were among the first dishes I learned to make. My father always praised my cooking and gave me confidence\, while my mother would gently suggest ways to improve. \nAfter I married\, I moved to Bahawalpur with my husband\, who is a doctor\, and together we raised our four children. But because Ahmadis face persecution in Pakistan\, it became unsafe for us to stay there. We first moved to Senegal\, where my husband helped establish the Humanity First hospital\, and later to The Gambia so our children could study in English. In 2023\, we moved to the UK. \nPakistani culture is deeply rooted in hospitality and care for others\, it is very important to make guests feel welcomed and cared for. During my time in Senegal and Gambia\, I was always hosting people visiting the hospital from different countries. I always made sure they had delicious food to eat and extras to take with them. A minimum of 2 or 3 people\, sharing tea and snacks\, and sending food for people.  \n \nIn the morning\, we would buy fresh groceries\, especially fresh-water fish. It is one of the largest and most beautiful cities; it sits among mountains and is very green.  \nSince childhood\, I have always loved food and cooking\, especially traditional Persian dishes. I learned Persian cooking techniques from my mother\, but also particularly from my grandfather. He was a chef who loved to cook with the food he had grown. He had a large field of crocuses – which are the source of saffron\, a very important ingredient in Iranian cooking.  \nCooking was always a passion of mine\, alongside my main profession; I trained and worked as a lawyer in Iran. I also worked as a head chef in Iran. For me\, cooking is not only about making food\, it’s about sharing happiness\, my culture and my memories\, and bringing people together.  Through a friend in my English class\, I was very lucky to hear about Migrateful – it is giving me the chance to share my culture and the amazing Persian food from my childhood. I grew up in Somalia\, East Africa\, with my mum and dad and three siblings – I’m the second oldest. I learned to cook with my Mum. She had her own recipes and her own way of cooking. I stayed at her side while she cooked – she needed my help and I was so interested. I would stand with her for six hours at a time. I stayed at school until I was 9 years old and then I stopped. But I wanted to carry on learning so I kept reading and teaching myself.  \nGradually I started cooking more\, by the age of 12 I was cooking for the family.   \n \nI came to the UK in 2004\, first to Weston Super Mare then to Bristol. I met and married my husband that same year and had my first baby in 2005. Now I have four children! As well as cooking for my family\, I cook at lunch clubs and organise celebrations and events for older people\, for women\, in schools and for young people. Always bringing people together through food. \n \nI like teaching – seeing people concentrate. When you cook\, you use different muscles and hold yourself differently\, it brings out the best in people. The way I make samosas is second nature to me. I grew up in Rabwah\, on the lush green banks of the Chenab River in Punjab. The town was established for the Ahmadiyya community. \nI remember my childhood there very fondly\, they were the happiest days of my life and still bring me peace when I think about them. From the age of 10\, I helped my mother cook\, and by 12 I was cooking properly on my own. Okra masala and aubergine curry were among the first dishes I learned to make. My father always praised my cooking and gave me confidence\, while my mother would gently suggest ways to improve. \nAfter I married\, I moved to Bahawalpur with my husband\, who is a doctor\, and together we raised our four children. But because Ahmadis face persecution in Pakistan\, it became unsafe for us to stay there. We first moved to Senegal\, where my husband helped establish the Humanity First hospital\, and later to The Gambia so our children could study in English. In 2023\, we moved to the UK. \nPakistani culture is deeply rooted in hospitality and care for others\, it is very important to make guests feel welcomed and cared for. While ingredients and dishes vary across Nigeria’s regions\, every meal is rooted in hospitality\, and the joy of bringing people together around the table.  \n \nABOUT THE CHEF \nMy name is Uchenna\, and I come from Nnewi in Anambra State\, in the eastern part of Nigeria. Nigeria is home to three major ethnic groups Igbo\, Yoruba\, and Hausa and more than 200 languages. I am proud to be from the Igbo tribe\, a people known for their rich culture\, resilience\, and love of food. \nGrowing up\, I never imagined that cooking would become such an important part of my life. My mother owned the largest and most popular restaurant in our town and was passionate about cooking\, while I preferred other household chores. \n Everything changed when I went to university and had to learn how to feed myself. I often called my mother and younger sister for recipes and guidance. What began as a necessity soon became a hobby and a source of joy. \nMy journey with Migrateful has reignited my confidence and passion. After attending a Migrateful Open Day\, I felt inspired and\, just three days later\, volunteered to cook at St James’s Church on International Women’s Day. DESCRIPTION:Chef Hani will teach you some of his favourite Omani dishes followed by a sit down meal.\n\n\nABOUT THE CUISINE \nOmani cuisine blends Asian influences with aromatic spices and herbs from the Middle East that bring warmth to every dish – like Hani’s Makbous\, a popular and traditional rice dish that is known for its deep\, aromatic taste and considered a symbol of Omani hospitality. \n\n\n\nABOUT THE CHEF \nMy name is Hani\, and I come from the Sultanate of Oman — a beautiful country in the Middle East with a rich history\, deep-rooted traditions\, and a vibrant culinary culture. \nMy mum taught me to cook – she is Egyptian and I really love Egyptian food. My dad was from Oman\, and I think this has helped me create my own type of cuisine – a mix of Egyptian and Omani food. \nMy dad also loved to cook\, so I had two very good teachers. I improved my cooking skills through observing and working with chefs in my restaurant business. Now I’m in the UK\, I’m starting a new chapter and bringing with me the flavours of Oman. I hope to open my own restaurant business in London one day. I grew up in a beautiful city called Sulaymaniyah. I was studying Geography at university\, but in 2017 I needed to leave because it was dangerous for me to stay. When I came to Bristol in 2020 I felt relief because the people were so friendly and supportive. \nI learnt to cook from my grandmother and stepmother when I was 15. They said you must look after yourself when you are at University. I discovered I loved cooking. The first things I cooked were rice and aubergine stew to go with lamb. \nWhen I lived in Manchester with 4 friends\, I did all the cooking. In Bristol I worked in a Kurdish restaurant in Old Market. \nI love sharing my recipes from my country with people from different countries. Kurdish cuisine uses a lot of fresh ingredients\, herbs and spices. It is very tasty but not too spicy. Built around pulses\, vegetables\, warming spice blends\, and slow-cooked dishes\, Ethiopian cooking is as much about sharing and connection as it is about flavour.  \n \nABOUT THE CHEF \n“My name is Tarik and I am from Ethiopia – a country in East Africa\, which has a long history and is home to many. We are proud to have 83 different languages. The Ethiopian Orthodox Church combines elements of the Old and New Testament; this old history combined with Ethiopia’s natural beauty of volcanos\, mountains and lakes now attracts many tourists to Ethiopia.  \n \nMy grandmother inspired me to cook and taught me a lot about cooking – she said I was a quick learner! She loved people and every day\, she would make traditional Ethiopian coffee and invite all of our neighbours and friends to our home. She loves to cook for special occasions\, especially at New Year. My grandmother also taught me the importance of kindness and being helpful and I think of her when I am cooking.  \n \nWhen I arrived in the UK\, I continued my love of cookery and volunteered in community\, church and Red Cross kitchens\, in Liverpool and in Preston. I am the youngest of five. I have three brothers and one sister. I was born and grew up on the east coast by the sea in a place called Batticaloa. I learnt to cook from my mother when I was young. My favourite dishes were Okra and Fish Curry\, made with fresh coconut. I love playing cricket and on Sundays\, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef. Jiwan’s dishes highlight the warmth and colour of Indian home cooking\, showcasing balanced spices\, comforting recipes\, and the joyful spirit of sharing food with others. \n \nABOUT THE CHEF \n“I am Jiwan\, which means life. I have lived most of my life in Punjab\, India. It is a farmland state in the north of India and the name comes from five rivers which flowed through the region at one time.  \n \nMy journey is a bit unusual as it started from need\, rather than passion. I grew up in a big family and I learned by watching and trying. When my family was away\, I made my first dish\, similar to tacos\, which was well liked by my family after their return.  \n \nI believe cooking is a very important skill\, not a talent. Everyone can develop it\, given some time and effort! Finding a reason helps a lot and mine is making others happy and smile with my food. There are so many dishes from across India that make me happy – that is why my class focuses on a wider area of India than Punjab. \n \nThe time I have spent with Migrateful has been wonderful and fun.
