DESCRIPTION:In this session  Iryna will teach delicious\, authentic authentic Ukrainian dishes followed by a sit-down family-style  meal.\n\n\nNothing beats a home-cooked meal shared with family! And this is what inspires our Family Style Cookery Classes\, a fun\, laid-back homestyle cooking experience. Here\, you will learn to prepare different dishes and then enjoy them with people who\, like you\, fuel our mission of supporting refugee and migrant chefs on their journey to integration. It’s a cookery class with a conscience\, like they say! \nYour class will be led by our wonderful Chef Iryna from Ukraine at the Migrateful Cookery School in Clerkenwell\, London. \nAt our Family Style Cookery Classes\, you will be grouped with other participants and prepare dishes together as a team. Think of Chef Iryna as the head of the family! She will take care of dividing the class into groups\, and each group will be responsible for creating one of the dishes. Of course\, you are welcome and encouraged to move around during the class to learn about the other dishes being prepared. Throughout the evening\, Chef Iryna will share stories about their food and culture\, and explain how to prepare each of the dishes so you come away with some new cooking tricks and inspiration from Ukraine. I am Ukrainian.I was born in a small town in Ukraine\, but I have lived most of my life in Kyiv – our capital city in the centre of Ukraine\, where we built our home.I came to the UK in February 2022 – soon after the war started. \nI am staying here with my daughter and her young children\, and I have started a different life here.I had a long and varied career as a computer and software engineer\, and worked worldwide for over 30 years\, as a consultant for large international companies. \nI was privileged to travel to and work in many different places in many different countries. I really enjoyed it all – especially tasting all the cuisines as I travelled! I am the youngest of five. I have three brothers and one sister. I was born and grew up on the east coast by the sea in a place called Batticaloa. I learnt to cook from my mother when I was young. My favourite dishes were Okra and Fish Curry\, made with fresh coconut. I love playing cricket and on Sundays\, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef. I have always loved to cook\, and\, of course\, to eat. I love to cook with lots of fresh herbs\, and these make Iranian dishes so special. I grew up in Rabwah\, on the lush green banks of the Chenab River in Punjab. The town was established for the Ahmadiyya community. \nI remember my childhood there very fondly\, they were the happiest days of my life and still bring me peace when I think about them. From the age of 10\, I helped my mother cook\, and by 12 I was cooking properly on my own. Okra masala and aubergine curry were among the first dishes I learned to make. My father always praised my cooking and gave me confidence\, while my mother would gently suggest ways to improve. \nAfter I married\, I moved to Bahawalpur with my husband\, who is a doctor\, and together we raised our four children. But because Ahmadis face persecution in Pakistan\, it became unsafe for us to stay there. We first moved to Senegal\, where my husband helped establish the Humanity First hospital\, and later to The Gambia so our children could study in English. In 2023\, we moved to the UK. \nPakistani culture is deeply rooted in hospitality and care for others\, it is very important to make guests feel welcomed and cared for. I grew up in Spanish Town\, the capital of the Parish of St Catherine. We lived very centrally as my mum worked in the market in town\, selling fish and fresh vegetables. I would often help my mum at the market\, and I learnt to cook by watching her. Sometimes when she was working\, I would look after my younger siblings and would cook for them. My passion for cooking only grew\, and I often cooked for my neighbours and for parties and celebrations for my friends and family. I love seeing satisfaction and joy on people’s faces when I cook for them. My favourite dish is ackee and salt fish – so much so that when I moved to Antigua\, I brought an ackee tree to plant in my garden\, and this is something that I always cook for my two children. \n \nI’ve been in Bristol for a year now\, and it’s a very friendly and supportive city. I’m volunteering with local refugee charities Bristol Hospitality Network and Borderlands. When I got my refugee status last year\, I held a big picnic in the park for my friends to celebrate. Jamaican food is spicy and full of flavour\, using lots of fresh vegetables and herbs. \n \nCooking and eating Jamaican food helps me reconnect to home\, music is also very important to me\, and I love dancing while I cook – no matter what is going on in life\, it makes me feel happy. I’m very excited to share my recipes with you!” \n \nWHAT TO EXPECT AT YOUR MIGRATEFUL COOKERY CLASS \nParticipants will work together to cook a family-style meal from scratch\, guided by the expertise of a refugee or migrant chef\, before sitting down to share lunch. \nAlongside practical cooking skills\, Migrateful’s programme encourages curiosity\, empathy and cultural connection\, helping young people build a positive understanding of refugee and migrant experiences through shared food and conversation. Meals are hands-on\, social\, and meant to be shared\, with signature dishes like Koshary and Fatteh highlighting both comfort and community in Egyptian food culture. \n \nABOUT THE CHEF \nA message from chef Amro: \n“Hello\, my name is Amro and I am from Egypt – from the North. My city\, Damitta\, is famous for furniture\, sweets and cheese. I am from a large family and I am the only boy with three sisters. \nAfter I graduated from university as a computer engineer\, I went to work in Kuwait. I worked there for 17 years in the Ministry of Education and the University of Kuwait before I moved to the UK in 2023 with my wife and my two children (I now have three)! \nWhen I was at home in Egypt\, it was always my mother who did the cooking. Although I didn’t cook then\, I learnt a lot from watching her. But when I was living alone in Kuwait\, especially for the first 3 years before I married\, I had to learn how to cook for myself! \nAs I spent half of my life in Egypt and the other half in Kuwait\, I have influences from both countries in my cooking. For example\, from my home country\, a famous dish that everyone there loves is Koshary – a delicious vegetarian dish. I learned to cook from my Mum. She used to call my sisters and me to assist her with cooking. The cuisine is a blend of African\, Middle Eastern\, Italian and Indian influences. Expect fragrant rices\, fresh herbs\, and a balance of sweet and savory in every bite. From Hanid (lamb stew with tamarind gravy) to Bajiyo (falafel) and Bariis Iskukaris (rainbow rice). Somali food brings people together\, celebrating hospitality\, bold flavours and the joy of sharing home cooked meals. \n \nIn this cookery class in Bristol\, you’ll learn to make traditional Somali dishes while connecting with others and supporting refugees and migrants in the UK through food. \n \nABOUT THE CHEF \nA message from chef Saada: \n“Hi my name is Saada. I grew up in Somalia\, East Africa\, with my mum and dad and three siblings – I’m the second oldest. I learned to cook with my Mum. She had her own recipes and her own way of cooking. I stayed at her side while she cooked – she needed my help and I was so interested. I would stand with her for six hours at a time. I stayed at school until I was 9 years old and then I stopped. But I wanted to carry on learning so I kept reading and teaching myself.  \nGradually I started cooking more\, by the age of 12 I was cooking for the family.   \n \nI came to the UK in 2004\, first to Weston Super Mare then to Bristol. I met and married my husband that same year and had my first baby in 2005. Now I have four children! As well as cooking for my family\, I cook at lunch clubs and organise celebrations and events for older people\, for women\, in schools and for young people. Always bringing people together through food. \n \nI like teaching – seeing people concentrate. When you cook\, you use different muscles and hold yourself differently\, it brings out the best in people. The way I make samosas is second nature to me. I grew up in Santo Domingo de los Tsachilas\, an area located between the coast and the mountains\, so we had the best produce. I grew up in a big family where food and music were always part of our joy – we loved getting together\, sharing meals\, and dancing. In Ecuador\, you can find four seasons in one day by travelling from one part of the country to another\, and that means that you can experience many different types of food in the country. When I came to England\, I started to do some voluntary work in a ‘healthy living’ community group\, and I used to run a session on healthy eating – this is reflected in my menu today. Teaching others about Ecuadorian food helps me feel close to my country and reminds me that even far from home\, we can still celebrate who we are and connect with others through culture and food. My dad was from Oman\, and I think this has helped me create my own type of cuisine – a mix of Egyptian and Omani food. \nMy dad also loved to cook\, so I had two very good teachers. I improved my cooking skills through observing and working with chefs in my restaurant business. Now I’m in the UK\, I’m starting a new chapter and bringing with me the flavours of Oman. I hope to open my own restaurant business in London one day. I grew up in Spanish Town\, the capital of the Parish of St Catherine. We lived very centrally as my mum worked in the market in town\, selling fish and fresh vegetables. I would often help my mum at the market and I learnt to cook through watching her. \nSometimes when she was working\, I would look after my younger siblings and would cook for them. \nMy passion for cooking only grew and I often cooked for my neighbours and for parties and celebrations for my friends and family. I love seeing satisfaction and joy on people’s faces when I cook for them. My favourite dish is ackee and salt fish – so much so that when I moved to Antigua I brought an ackee tree to plant in my garden and this is something that I always cook for my two children. \nI’ve been in Bristol for a year now and it’s a very friendly and supportive city. I’m volunteering with local refugee charities Bristol Hospitality Network and Borderlands. When I got my refugee status last year I held a big picnic in the park for my friends to celebrate. Jamaican food is spicy and full of flavour\, using lots of fresh vegetables and herbs. \nCooking and eating Jamaican food helps me reconnect to home\, music is also very important to me and I love dancing while I cook – no matter what is going on in life\, it makes me feel happy. I am from the lovely island nation of Trinidad and Tobago in the Caribbean and I am the mother of two daughters. My cooking journey started over 25 years ago when I was just 10. My mother had to go to work\, leaving me to cook for my two younger siblings. At first\, I made some pretty awful dishes but with my mother’s help and encouragement\, I got better. At her suggestion\, I started cooking school and soon I was creating new dishes on my own. I then trained at the Trinidad and Tobago International Hilton Hotel and worked as a sous chef at the Carlton Savannah Hotel when Queen E stayed there in 2009. When the hotel closed\, I first started cooking for homeless people and then for children with additional needs. I became a mother figure for many of the kids and some of the older people. I have been volunteering for Praxis charity for the last year\, a charity that helps support people on their immigration journey. \nIn addition to cooking\, I am passionate about music\, dancing and laughing! Think of it like a technical rehearsal at the theatre. This means it may run for longer than a normal class and involve some stop/starting. My father was a cook and although I did not receive formal culinary training\, I learned by watching him and through many years of self-teaching and practising in my own kitchen. Over time\, cooking became one of my greatest passions.  \nBefore moving to the UK\, I worked in a different profession. But my love for cooking and sharing food has always stayed with me. I now live in the UK with my wife and children and I enjoy bringing the tastes and traditions of Sri Lanka to new friends and communities.  \nIn my class\, I will guide you through authentic Sri Lankan recipes\, using aromatic spices\, fresh ingredients and techniques that you can recreate at home. I am from eastern Turkey\, although at university I met people from other regions and learnt about various different cultures and recipes. \nI grew up in a big city with my three big sisters who were already helping my mum in the kitchen. I was always asking ‘Please can I help?’ By the time I got to university I had learned how to cook just by watching! \nIn the summer I loved going to stay with my mum’s family\, who lived in a village. They grew and cooked their own vegetables. There I had my Grandma all to myself and learned to make yoghurt and cheese\, which I still make for my own family. \nBig meals at home with family and friends were an important part of our lives. We had to be strong to manage the huge pots we used. Our food traditions are very varied with lots of different recipes for meat and vegetables.” \n \nWHAT TO EXPECT AT YOUR MIGRATEFUL COOKERY CLASS \nParticipants will work together to cook a family-style meal from scratch\, guided by the expertise of a refugee or migrant chef\, before sitting down to share lunch. \nAlongside practical cooking skills\, Migrateful’s programme encourages curiosity\, empathy and cultural connection\, helping young people build a positive understanding of refugee and migrant experiences through shared food and conversation. The sessions are also designed to support wellbeing through the therapeutic and social benefits of cooking together\, while giving families new recipe ideas and the confidence to recreate the dishes at home. \nAt the same time\, the classes create paid work opportunities and experience for migrant and refugee chefs participating in our wider programme.

Those loud\, joyful mornings in a Cantonese tea house are some of my most treasured memories and they are the reason I cook the way I do. One of the things I have loved about coming here is meeting people from all over the world\, I believe food is a wonderful way to learn about eachother and discover new cultures\, traditions\, and stories. \nBefore moving to the UK\, I studied midwifery and later trained in surgery. I worked in a surgical department for 17 years. Although my career was in healthcare\, food has always played an important role in my life. \nMy mother was an excellent cook and was well known among family and friends for her delicious meals and desserts. She wanted me to focus on my education\, so she never really taught me how to cook. However\, growing up with her wonderful food taught me what good food should taste like and gave me a real appreciation for cooking. \nI only started cooking after I got married. I am the youngest of five. I have three brothers and one sister. I was born and grew up on the east coast by the sea in a place called Batticaloa. I learnt to cook from my mother when I was young. My favourite dishes were Okra and Fish Curry\, made with fresh coconut. I love playing cricket and on Sundays\, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef. My cooking classes are based on this culture\, teaching traditional and popular food in Hong Kong. \nI learned to cook from my mother and cooked for my younger siblings when I was seven years old. After I got married and had my own kitchen\, I was so happy that I could try different cuisines. To me\, cooking is definitely an alchemy\, turning ordinary ingredients into delicious dishes. In the future\, I want to open my own bakery where I can share Algerian food and culture with people in London. Meals are hands-on\, social\, and meant to be shared\, with signature dishes like Shiro\, Zegny\, and Salata Bazinjan served communally on one plate\, highlighting the warmth\, creativity\, and togetherness of Eritrean food culture. \n \nABOUT THE CHEF  \nA message from our Chef Wedad: \n“Hi\, my name is Wedad and I come from a town called Keran in south-west Eritrea. Eritrea is a beautiful country in East Africa and is surrounded by mountains and the Red Sea. I grew up with my grandmother\, who loved to cook and taught me all her recipes. My friends and I liked to cook our dishes for each other and so I also learnt how to cook other cuisines. My favourite dish is Salata Banzinjan\, an aubergine salad\, which I make in lots of different ways. Eritrean food is typically spicy and is served on one plate to be shared with the whole family. One of the things that we eat often is a fermented bread called injera\, which we have at lunchtime. Today\, we will be serving injera with Shiro and Salata Banzinjan. I came to the UK in 2012 and the biggest barrier I faced was the language. Now I study English at the Red Cross and one day we were writing about our favourite food. A few weeks later\, I brought in the dish that I wrote about – kebab – and my teacher and colleagues liked it so much\, she suggested I apply to join Migrateful!
