DESCRIPTION:In this TRAINING CLASS Bolu will teach delicious\, authentic Nigerian dishes followed by a sit-down meal.\n\n\nOur talented new cohort of Migrateful chefs are wrapping up their initial training and getting ready to hold their first cookery classes to the public. \nThis training class will be led by Chef Bolu from Nigeria at the Migrateful Cookery School in Clerkenwell\, London. \nPlease note\, during these training classes\, we will be testing the dishes\, and how the class runs. Think of it like a technical rehearsal at the theatre. This means it may run for longer than a normal class and involve some stop/starting. I’m from a tribe called Yoruba. In Nigeria\, Yoruba are one of the three largest tribes in Nigeria. The other two are Igbo and Hausa\, but Nigeria has 250 ethnic groups/tribes with many different languages and culinary traditions. \nMy love for cooking started in my mum and aunt’s kitchen\, where I learned that food is about care\, culture and bringing people together. Their passion became my passion too. I enjoy blending traditional Nigerian flavours with my own touches to create dishes that feel familiar yet new. My mum and aunt are so impressed and I hope I impress you too! \nIn Nigeria\, we cook with a lot of varieties of protein\, using beef\, chicken\, goat\, eggs\, nuts and beans. The climate in Nigeria helps the farmers to grow many leafy vegetables\, yam\, sweet potatoes\, plantain and cocoa. I can’t wait to share all of these wonderful ingredients with you in my class. \nWhen I’m not in the kitchen\, you’ll find me on the football pitch or in my dance class. I also love listening to music while cooking; it gives me inspiration and motivation. All that keeps me disciplined\, focused and balanced. I am from Kingston\, Jamaica. Food in Jamaica is influenced by all the different nationalities that settled there – Irish\, British\, French\, Asian\, Spanish\, American and African. Everyone wants to live in Jamaica because it is such a beautiful island! A lot of our ingredients come from other parts of the world. \nI developed a passion for cooking\, watching and helping my grandmother from the age of 8 years old. She was a great cook and baker. On Sundays\, she would gather all of us\, her granddaughters\, to eat together. Rice and peas are one of our special Sunday meals. Our home was always full of people. Even though we were poor\, my grandmother was always feeding everyone. There were always people coming over to our house for my grandmother’s food. I remember the day she let me cook was one of the best days of my life. It really boosted my confidence\, like I can do anything! Before leaving Jamaica\, I used to cook from home and sell the food for a living. My food was very popular and I really enjoyed doing it. \nWhen I moved to the UK\, I worked in a Caribbean restaurant for many years. My coleslaw was famous at the restaurant! I moved to the UK from the historic city of Samarkand in Uzbekistan\, with my wife and four children. I am Tajik and I love showcasing our delicious food and culture. Samarkand is a significant centre of Persian culture and a hub for trade along the Silk Road. \nI have had a passion for cooking from a young age\, as I learnt from my parents and grandparents. Having had many years of experience catering for family\, and friends and hosting culinary events I am now confident and enjoy cooking Tajik cuisine. \nI used to be a mathematics teacher as well as a chef\, so I like both numbers and flavours. I have a Masters degree in mathematics from Samarkand State University\, so I have an eye for detail\, precision\, flavour harmony and creativity. DESCRIPTION:In this TRAINING CLASS Saeid will teach delicious\, authentic Iranian dishes followed by a sit-down meal.\n\n\nOur talented new cohort of Migrateful chefs are wrapping up their initial training and getting ready to hold their first cookery classes to the public. \nThis training class will be led by Chef Saeid from Iran at the Migrateful Cookery School in Clerkenwell\, London. \nPlease note\, during these training classes\, we will be testing the dishes\, and how the class runs. Think of it like a technical rehearsal at the theatre. This means it may run for longer than a normal class and involve some stop/starting. You’ll work together with other participants to prepare each of the dishes\, before sitting down to share a meal together. \nA message from our Chef Saeid: \n“My name is Saeid and I was born in Mashhad\, in the far North-East of Iran. It is one of the largest and most beautiful cities; it sits among mountains and is very green. \nSince childhood\, I have always loved food and cooking\, especially traditional Persian dishes. I learned Persian cooking techniques from my mother\, but also particularly from my grandfather. He was a chef who loved to cook with the food he had grown. He had a large field of crocuses – which are the source of saffron\, a very important ingredient in Iranian cooking. \nCooking was always a passion of mine\, alongside my main profession; I trained and worked as a lawyer in Iran. I also worked as a head chef in Iran. For me\, cooking is not only about making food\, it’s about sharing happiness\, my culture and my memories\, and bringing people together. Through a friend in my English class\, I was very lucky to hear about Migrateful – it is giving me the chance to share my culture and the amazing Persian food from my childhood. I am also improving my English and confidence and my communication with people. DESCRIPTION:Chef Hani will teach you some of his favourite Omani dishes followed by a sit down meal.\n\n\nABOUT THE CUISINE \nOmani cuisine blends Asian influences with aromatic spices and herbs from the Middle East that bring warmth to every dish – like Hani’s Makbous\, a popular and traditional rice dish that is known for its deep\, aromatic taste and considered a symbol of Omani hospitality. \n \nABOUT THE CHEF \nMy name is Hani\, and I come from the Sultanate of Oman — a beautiful country in the Middle East with a rich history\, deep-rooted traditions\, and a vibrant culinary culture. \nMy mum taught me to cook – she is Egyptian and I really love Egyptian food. My dad was from Oman\, and I think this has helped me create my own type of cuisine – a mix of Egyptian and Omani food. \nMy dad also loved to cook\, so I had two very good teachers. I improved my cooking skills through observing and working with chefs in my restaurant business. Now I’m in the UK\, I’m starting a new chapter and bringing with me the flavours of Oman. I hope to open my own restaurant business in London one day. Dishes like Sayadieh (seafood rice)\, stuffed vine leaves\, and crispy flatbreads are made to be shared\, highlighting the social\, hands-on nature of meals. Every dish reflects the warmth\, generosity\, and heritage of Palestinian culture. \n \nABOUT THE CHEF \nA message from chef Amna:  \n“My name is Amna from Gaza\, Palestine and I came to the UK in the winter of 2022. In Gaza\, I was a university lecturer in psychology for 20 years and a director of a charity supporting mothers and children. I have 5 children: 2 daughters who still live in Gaza\, a son and daughter in Canada and a son in London. \nAs a young woman\, I lived in Libya. I married there\, brought up my children and achieved my degree and my Masters. Libya’s sky seemed open to my dreams and I was very happy there. \nWhen I first arrived in the UK\, I had nothing here and felt lonely and ashamed. I am thankful to have become part of the Migrateful family. Migrateful has helped me feel more positive and I am happy to share my food and my culture. \nWhen I cook I always think of my mother. I don’t use recipes but cook by a sense I inherited from her. My mother and father always talked about their life before Gaza – I have never been to their home in Ashdod but I feel I know it. My father caught fish\, and they always had fresh vegetables from the countryside. I am passionate about making healthy and nutritious food. It is so important for our lives and our physical and mental health. I am from the lovely island nation of Trinidad and Tobago in the Caribbean and I am the mother of two daughters. My cooking journey started over 25 years ago when I was just 10. My mother had to go to work\, leaving me to cook for my two younger siblings. At first\, I made some pretty awful dishes but with my mother’s help and encouragement\, I got better. At her suggestion\, I started cooking school and soon I was creating new dishes on my own. I then trained at the Trinidad and Tobago International Hilton Hotel and worked as a sous chef at the Carlton Savannah Hotel when Queen E stayed there in 2009. When the hotel closed\, I first started cooking for homeless people and then for children with additional needs. I became a mother figure for many of the kids and some of the older people. I have been volunteering for Praxis charity for the last year\, a charity that helps support people on their immigration journey. \nIn addition to cooking\, I am passionate about music\, dancing and laughing!
