Meals are hands-on\, social\, and meant to be shared\, with signature dishes like Polo Shoshtari\, Nahavandi Aubergine Stew\, and Gilani Sour Kebab highlighting the warmth\, community\, and culinary creativity of Iranian food culture. \n \nABOUT THE CHEF \nA message from our Chef Raha: \n“I am Raha and I come from Nahavand\, a small city in the centre of Iran. In the UK\, you have English\,Scottish\, Welsh and Irish people. In Iran\, we have Turkish\, Arab\, Kurdish and Lorish people. I am Lorish. When I was nine\, my mum went to work and didn’t have time to cook\, so I cooked for her. From a young age\, I would change recipes. I still do! My children ask me what a dish is called\, but I have often just created it\, so it does not have a name! Food is very important in my country. We consider food to be part of the joy of life;it is not just for survival. A meal should not only be the taste\, it should be how it looks\, how it smells and how it feels. I arrived in the UK in January 2024 with my husband and two daughters. At first\, I was worried about everything\, but I have found that British people are very kind. I moved here from Jeddah\, Saudi Arabia in 2013. I have lived the majority of my life there. Culturally I am Uyghur\, an ethnic Muslim minority located in Central Asia (now part of China called Xinjiang). The dishes I teach in my class are a mix of the two cultures I come from. I learned to cook from my Mum. She used to call my sisters and me to assist her with cooking. I was her main helper\, especially when it came to pulling noodles. \n \nWhen I was in high school and had our summer holiday\, my mum trusted me enough to cook for the family and I insisted she write me the recipes with every little detail. I got paid for it! My mum taught me to cook several cuisines from around the world but my favourites were Saudi & Uyghur. I’m from Afghanistan and was born in Kabul\, the capital city. \nI learnt to cook from my mother and grandmother. My mother was always cooking for our big family and often needed my help. She would show me how to make something one day\, and then the very next day\, she’d ask me to do it myself. That’s how I learnt so much. Especially desert\, I love desert the best\, and am always making sweet treats. \nTwo years ago\, I started a small business cooking from home through All About the Cooks. People could order my food\, and it would be delivered all over Bristol. My food was very popular. At one point\, I was getting orders for up to 100 people! \nBack in Kabul\, I studied mathematics at university and later taught maths in an all-boys private school. \nNow\, I’m excited to teach again—but this time\, a different subject. The subject is food\, and the classroom is the kitchen. \nI’m happiest when I’m in my kitchen. I play music\, focus on cooking\, and enjoy being in my own world. I come from Congo\, DRC. I was born in the capital called Kinshasa. I studied communications at university. I speak Lingala and French and I have been learning English since I arrived in the UK five years ago. I live alone and my whole family is in Congo. I joined Migrateful to meet new people\, improve my English and share dishes from my country. \nI learned to cook when I was young by watching my mum when she cooked for my family. My aunty Madeleine\, who we called Mado\, had a restaurant in Kinshasa. I learned from her how to make sure the dishes are perfectly seasoned. She passed away and I think of her often when I cook the recipes she taught me. \nI love to cook and feed people. I like to create new recipes and try new ingredients from my country like cassava leaves\, fumbua and green beans from Goma. My favourite foods to cook are fish and all kinds of meat and vegetables because I believe they prevent illness. It is in the middle of the Silk Roads\, which means it has been a crossroads for trade and remains a melting pot of different cultures. The food culture is very colourful\, taking ingredients and flavours from many cuisines. My family is Tajik and so the food I have grown up with and will teach in my classes is based around this culture \nI learned to cook from a very young age from my mother and grandmother. The village where I grew up had cows\, sheep\, fruits and vegetables and all of my favourite recipes are based on fresh ingredients. I have nine siblings. My mother was our hero feeding her large family every day. \nCooking for my family also brings me great joy and I would love to share my recipes with you. A lot of our ingredients come from other parts of the world. \nI developed a passion for cooking\, watching and helping my grandmother from the age of 8 years old. She was a great cook and baker. Even though we were poor\, my grandmother was always feeding everyone. There were always people coming over to our house for my grandmother’s food. I remember the day she let me cook was one of the best days of my life. It really boosted my confidence\, like I can do anything! Before leaving Jamaica\, I used to cook from home and sell the food for a living. I’m from Sri Lanka\, an island known as the Pearl of Asia. I love my country\, it is like paradise. \nI fondly remember picking fresh mango and guava. My passion for cooking began at age 10\, helping my mum clean okra and learning to haggle in the fish markets with my dad. My father was a teacher and provided for our family and his four sisters. My mother was the oldest daughter in her family\, so everyone would eat at our home. She was very generous and always cooked extra for those in need. \nSadly\, because of the civil war in Sri Lanka\, my family had to move to Bahrain. There I worked in the welfare department of an Islamic NGO\, but I was also able to use my cooking skills and I cooked for events for the Youth Group. My wife is also a very good cook and our dream is to open a restaurant. I come from Congo\, DRC. I was born in the capital called Kinshasa. I studied communications at university. I speak Lingala and French and I have been learning English since I arrived in the UK five years ago. I live alone and my whole family is in Congo. I joined Migrateful to meet new people\, improve my English and share dishes from my country. \nI learned to cook when I was young by watching my mum when she cooked for my family. My aunty Madeleine\, who we called Mado\, had a restaurant in Kinshasa. I learned from her how to make sure the dishes are perfectly seasoned. She passed away and I think of her often when I cook the recipes she taught me. \nI love to cook and feed people.
