I have always loved to cook\, and\, of course\, to eat. My mother was my first teacher\, but I also learnt from my grandmother and my aunts as we all lived in a multi-generational home; always cooking\, eating and celebrating together. I love to cook with lots of fresh herbs\, and these make Iranian dishes so special. I make delicious food for myself\, my family and friends – and my friends are always inviting me to cook for them. \nI am a very creative person\, so I love to make my dishes look beautiful. Presentation in Iranian cooking is very important and I will teach you to use ingredients to make the dishes look appealing and for your guests to look forward to. I really care about my health\, and believe that the food we eat is directly related to our health – so preparing food that is nutritious as well as delicious is really important to me. I look forward to sharing my tasty\, healthy food with you. \nI love to practise yoga\, to meditate and study astrology. I’m from Sri Lanka\, an island known as the Pearl of Asia. I love my country\, it is like paradise. \nI fondly remember picking fresh mango and guava. My passion for cooking began at age 10\, helping my mum clean okra and learning to haggle in the fish markets with my dad. My father was a teacher and provided for our family and his four sisters. My mother was the oldest daughter in her family\, so everyone would eat at our home. She was very generous and always cooked extra for those in need. \nSadly\, because of the civil war in Sri Lanka\, my family had to move to Bahrain. There I worked in the welfare department of an Islamic NGO\, but I was also able to use my cooking skills and I cooked for events for the Youth Group. Everyone has heard of ancient Egypt and the pyramids that have made it a tourist destination\, but people may not know so much about our delicious cuisine. DESCRIPTION:Chef Amna will teach delicious\, authentic Palestinian dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \nPalestinian cuisine has a rich culinary history shaped by agriculture\, trade\, and centuries of cultural exchange. From Gaza’s fresh seafood to the fertile hills of the West Bank producing olive oil\, herbs\, and vegetables\, Palestinian food is vibrant\, seasonal\, and full of flavour. Dishes like Sayadieh (seafood rice)\, stuffed vine leaves\, and crispy flatbreads are made to be shared\, highlighting the social\, hands-on nature of meals. Every dish reflects the warmth\, generosity\, and heritage of Palestinian culture. \n \nABOUT THE CHEF \nA message from chef Amna:  \n“My name is Amna from Gaza\, Palestine and I came to the UK in the winter of 2022. In Gaza\, I was a university lecturer in psychology for 20 years and a director of a charity supporting mothers and children. I have 5 children: 2 daughters who still live in Gaza\, a son and daughter in Canada and a son in London. \nAs a young woman\, I lived in Libya. I married there\, brought up my children and achieved my degree and my Masters. Libya’s sky seemed open to my dreams and I was very happy there. \nWhen I first arrived in the UK\, I had nothing here and felt lonely and ashamed. I am thankful to have become part of the Migrateful family. Migrateful has helped me feel more positive and I am happy to share my food and my culture. \nWhen I cook I always think of my mother. I don’t use recipes but cook by a sense I inherited from her. My mother and father always talked about their life before Gaza – I have never been to their home in Ashdod but I feel I know it. My father caught fish\, and they always had fresh vegetables from the countryside. I am passionate about making healthy and nutritious food. It is so important for our lives and our physical and mental health. Akram’s dishes highlight the heart of Sri Lankan home cooking\, where hand-prepared curries\, sambals\, and rice-based dishes bring layers of flavour and warmth to the table. Expect richly spiced\, fragrant meals that showcase the island’s culinary heritage\, blending vegetarian\, seafood\, and meat dishes in a communal and celebratory style. \n \nABOUT THE CHEF \nA message from our Chef Akram: \n“Hello\, My name is Akram\, I come from Sri Lanka. I am the youngest of five. I have three brothers and one sister. I was born and grew up on the east coast by the sea in a place called Batticaloa. I learnt to cook from my mother when I was young. My favourite dishes were Okra and Fish Curry\, made with fresh coconut. I love playing cricket and on Sundays\, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef.
