I am from Kingston\, Jamaica. Food in Jamaica is influenced by all the different nationalities that settled there – Irish\, British\, French\, Asian\, Spanish\, American and African. Everyone wants to live in Jamaica because it is such a beautiful island! A lot of our ingredients come from other parts of the world. \nI developed a passion for cooking\, watching and helping my grandmother from the age of 8 years old. She was a great cook and baker. On Sundays\, she would gather all of us\, her granddaughters\, to eat together. Rice and peas are one of our special Sunday meals. Our home was always full of people. Even though we were poor\, my grandmother was always feeding everyone. There were always people coming over to our house for my grandmother’s food. I remember the day she let me cook was one of the best days of my life. It really boosted my confidence\, like I can do anything! Before leaving Jamaica\, I used to cook from home and sell the food for a living. My food was very popular and I really enjoyed doing it. \nWhen I moved to the UK\, I worked in a Caribbean restaurant for many years. My coleslaw was famous at the restaurant! I am the youngest of five. I have three brothers and one sister. I was born and grew up on the east coast by the sea in a place called Batticaloa. I learnt to cook from my mother when I was young. My favourite dishes were Okra and Fish Curry\, made with fresh coconut. I love playing cricket and on Sundays\, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef. Every dish reflects the warmth\, generosity\, and heritage of Palestinian culture. \n \nABOUT THE CHEF \nA message from chef Amna:  \n“My name is Amna from Gaza\, Palestine and I came to the UK in the winter of 2022. In Gaza\, I was a university lecturer in psychology for 20 years and a director of a charity supporting mothers and children. I have 5 children: 2 daughters who still live in Gaza\, a son and daughter in Canada and a son in London. \nAs a young woman\, I lived in Libya. I married there\, brought up my children and achieved my degree and my Masters. Libya’s sky seemed open to my dreams and I was very happy there. \nWhen I first arrived in the UK\, I had nothing here and felt lonely and ashamed. I am thankful to have become part of the Migrateful family. Migrateful has helped me feel more positive and I am happy to share my food and my culture. \nWhen I cook I always think of my mother. I learned to cook from my Mum. She used to call my sisters and me to assist her with cooking. I worked there for 17 years in the Ministry of Education and the University of Kuwait before I moved to the UK in 2023 with my wife and my two children (I now have three)! \nWhen I was at home in Egypt\, it was always my mother who did the cooking. Our city is nicknamed ‘Petit Paris’ because there is a strong French influence. I wasn’t allowed to cook growing up because my parents wanted me to focus on my studies. I was a teacher in Algeria but wasn’t able to continue teaching when I moved to the UK in 2015. After I met my wonderful husband\, we quickly had children and I began to spend more time at home. During this time\, I realised my passion for cooking and baking. I cooked so much for my friends and family that they told me to stop as they feared they were getting fat. In the future\, I want to open my own bakery where I can share Algerian food and culture with people in London. Algeria is extremely multicultural and culturally rich\, which is something I am very proud of. I am the youngest of five. I have three brothers and one sister. I was born and grew up on the east coast by the sea in a place called Batticaloa. I learnt to cook from my mother when I was young. My favourite dishes were Okra and Fish Curry\, made with fresh coconut. I love playing cricket and on Sundays\, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef. I come from Congo\, DRC. I was born in the capital called Kinshasa. I studied communications at university. I speak Lingala and French and I have been learning English since I arrived in the UK five years ago. I live alone and my whole family is in Congo. I joined Migrateful to meet new people\, improve my English and share dishes from my country. \nI learned to cook when I was young by watching my mum when she cooked for my family. My aunty Madeleine\, who we called Mado\, had a restaurant in Kinshasa. I learned from her how to make sure the dishes are perfectly seasoned. She passed away and I think of her often when I cook the recipes she taught me. \nI love to cook and feed people. I like to create new recipes and try new ingredients from my country like cassava leaves\, fumbua and green beans from Goma. Eritrea is a beautiful country in East Africa and is surrounded by mountains and the Red Sea. I grew up with my grandmother\, who loved to cook and taught me all her recipes. My friends and I liked to cook our dishes for each other and so I also learnt how to cook other cuisines. My favourite dish is Salata Banzinjan\, an aubergine salad\, which I make in lots of different ways. Eritrean food is typically spicy and is served on one plate to be shared with the whole family. One of the things that we eat often is a fermented bread called injera\, which we have at lunchtime. Today\, we will be serving injera with Shiro and Salata Banzinjan. I came to the UK in 2012 and the biggest barrier I faced was the language. Now I study English at the Red Cross and one day we were writing about our favourite food. A few weeks later\, I brought in the dish that I wrote about – kebab – and my teacher and colleagues liked it so much\, she suggested I apply to join Migrateful! Food acted as the glue that kept us together. \nMost of my cooking skills I learned and inherited from my Granny – I was asked to read out recipes from Good Housekeeping magazines – she would choose the ones she thought sounded the most delicious and we’d cook them together\, usually for special occasions like Christmas and birthdays. In Gaza\, I was a university lecturer in psychology for 20 years and a director of a charity supporting mothers and children. I have 5 children: 2 daughters who still live in Gaza\, a son and daughter in Canada and a son in London. \nAs a young woman\, I lived in Libya. I married there\, brought up my children and achieved my degree and my Masters. Libya’s sky seemed open to my dreams and I was very happy there. \nWhen I first arrived in the UK\, I had nothing here and felt lonely and ashamed. I am thankful to have become part of the Migrateful family. Migrateful has helped me feel more positive and I am happy to share my food and my culture. \nWhen I cook I always think of my mother. I don’t use recipes but cook by a sense I inherited from her. My mother and father always talked about their life before Gaza – I have never been to their home in Ashdod but I feel I know it.
