Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef. SUMMARY:Algerian Cookery Class with Amel | LONDON | Cookery School
DESCRIPTION:In this session Amel will teach delicious\, authentic Algerian dishes followed by a sit-down\, family-style meal.\n\n\nABOUT THE CUISINE \nAlgerian cuisine is a beautiful blend of North African\, Mediterranean\, and French influences — rich in spices\, seasonal vegetables\, slow-cooked stews\, and warm breads. From fragrant soups like Chorba Frik to comforting tagines and delicate pastries\, Algerian food is deeply social\, made to be shared\, and full of heritage. With flavours shaped by centuries of cultural exchange\, every dish tells a story of community\, generosity\, and home. \n \nABOUT THE CHEF \nA message from our Chef Amel: \nHi my name is Amel\, I am from Sidi Bel Abbes in Western Algeria. Our city is nicknamed ‘Petit Paris’ because there is a strong French influence. I wasn’t allowed to cook growing up because my parents wanted me to focus on my studies. I was a teacher in Algeria but wasn’t able to continue teaching when I moved to the UK in 2015. After I met my wonderful husband\, we quickly had children and I began to spend more time at home. During this time\, I realised my passion for cooking and baking. I cooked so much for my friends and family that they told me to stop as they feared they were getting fat. In the future\, I want to open my own bakery where I can share Algerian food and culture with people in London. Algeria is extremely multicultural and culturally rich\, which is something I am very proud of. I have always been a daydreamer and I really value the freedom to pursue my dreams here in the UK”. \n \n\n\n\nON THE MENU (subject to change): \n\nTagine Zitoun (Olive Tagine with Chicken and Meatballs) | Meat (Chicken and Lamb); Egg\, Gluten (Wheat)\nChorba Frik (Vegetable Soup with Freekah and Carraway) | Vegetarian; Celery\, Gluten (Wheat)\nBourek (Tuna Pastry Parcels with Cheese) | Fish (Tuna); Eggs\, Fish\, Gluten (Wheat)\, Milk\nRekhsas (Algerian Semolina and Nigella Seed Flatbread) | Vegetarian; Celery\, Milk\nSamsa b-louz (Fried Almond\, Sesame and Honey Pastries) | Vegetarian; Gluten (Wheat)\, Milk\, Sesame\, Tree Nuts (Almonds)\n\nThis menu contains meat (chicken and lamb) and fish (tuna). I am from the lovely island nation of Trinidad and Tobago in the Caribbean and I am the mother of two daughters. My cooking journey started over 25 years ago when I was just 10. My mother had to go to work\, leaving me to cook for my two younger siblings. At first\, I made some pretty awful dishes but with my mother’s help and encouragement\, I got better. At her suggestion\, I started cooking school and soon I was creating new dishes on my own. I then trained at the Trinidad and Tobago International Hilton Hotel and worked as a sous chef at the Carlton Savannah Hotel when Queen E stayed there in 2009. When the hotel closed\, I first started cooking for homeless people and then for children with additional needs. I became a mother figure for many of the kids and some of the older people. I have been volunteering for Praxis charity for the last year\, a charity that helps support people on their immigration journey. \nIn addition to cooking\, I am passionate about music\, dancing and laughing! SUMMARY:Ecuadorian Cookery Class with Judith |Veg Friendly| LONDON| Pop up
DESCRIPTION:Chef Judith will teach you some of her favourite Ecuadorian dishes followed by a sit down meal.\n\n\nABOUT THE CUISINE \nEcuadorian cuisine comes from South America and reflects the country’s diverse geography\, from the Pacific coast to the Andes mountains and the Amazon rainforest. It combines fresh seafood\, tropical fruits\, vegetables\, grains\, and spices to create vibrant\, flavourful dishes. Meals are hands-on\, social\, and made to be shared\, with signature dishes like Ceviche\, Tigrillo\, and Empanadas highlighting the warmth\, creativity\, and communal spirit of Ecuadorian food culture. \n \nABOUT THE CHEF \nA message from our Chef Judith: \n“My name is Judith\, and I am from Ecuador\, a beautiful country in South America. I grew up in Santo Domingo de los Tsachilas\, an area located between the coast and the mountains\, so we had the best produce. I grew up in a big family where food and music were always part of our joy – we loved getting together\, sharing meals\, and dancing. In Ecuador\, you can find four seasons in one day by travelling from one part of the country to another\, and that means that you can experience many different types of food in the country. When I came to England\, I started to do some voluntary work in a ‘healthy living’ community group\, and I used to run a session on healthy eating – this is reflected in my menu today. Teaching others about Ecuadorian food helps me feel close to my country and reminds me that even far from home\, we can still celebrate who we are and connect with others through culture and food. Each dish I create carries the soul of my homeland that is inspired by the unique beauty of the Amazon\, where the jungle speaks and nature is sacred. My hands work with love\, honouring my roots and sharing a little piece of living nature with the world.” \n \n\n\n\n \nON THE MENU (subject to change): \n\nTwo Ceviche | Fish (Prawns) and Vegan; Celery\, Crustaceans\, Mustard\nTigrillo (Plantain Hash) | Vegetarian; Eggs\, Milk\, Peanuts\nEstofado de Carne y Chocolate (Beef Stew with Chocolate) | Meat (Beef); Celery\nEstofado de Vegetales (Golden Vegetable Stew) | Vegan; Celery\nEmpanadas de Viento (Cheese-Filled Pastries) | Vegetarian; Eggs\, Gluten (Wheat)\, Milk\nColada Morada (Warm Fruit Punch) | Vegan; None\n\nThis menu contains meat (beef) and fish (prawns) but is vegetarian-friendly (5/6 dishes are meat-free). While ingredients and dishes vary across Nigeria’s regions\, every meal is rooted in hospitality\, and the joy of bringing people together around the table.  \n \nABOUT THE CHEF \n“I’m Bolu and I’m from south-west Nigeria. Their passion became my passion too. The climate in Nigeria helps the farmers to grow many leafy vegetables\, yam\, sweet potatoes\, plantain and cocoa. I can’t wait to share all of these wonderful ingredients with you in my class.  \n \nWhen I’m not in the kitchen\, you’ll find me on the football pitch or in my dance class. She started by giving me simple tasks to do and gradually taught me how to prepare dishes properly. I am grateful that she shared her secret tips with me. \nI believe it is important to continuously develop oneself and in the importance of community. Putting these principles into practice\, I became a volunteer chef with the Red Cross and with Connect All Community\, cooking for over 60 people every week. \nI bring humour and joy to everything I do\, including my cookery classes. SUMMARY:Ecuadorian Cookery Class with Judith |Veg Friendly| LONDON|Cookery School
