It blends Mediterranean\, Berber\, Arab\, and African influences\, using fresh vegetables\, legumes\, spices\, and fruits like prunes\, apricots\, and dates. Meals are hands-on\, social\, and designed to be shared\, with signature dishes like Harira\, Tagine\, and Zaalouk highlighting the warmth and communal nature of Moroccan food culture. \n \nABOUT THE CHEFA message from our Chef Sanae: \n“My name is Sanae and I grew up in a large family in the north of Morocco\, near Fez. I am the youngest in my family and learned to cook from my mother and older sisters. I started helping in the kitchen from the age of ten\, making flatbreads and assisting with daily meals. \nIn Morocco\, mealtimes are central to family life\, and food is a way to connect and celebrate together. Tagines are a highlight of Moroccan cuisine\, combining meat\, vegetables\, and spices with rich fruits\, and every family has their own special recipe. Meals are deeply communal\, reflecting the warmth\, hospitality\, and culinary heritage of these cultures. \n \nABOUT THE CHEF \nA message from chef Sana: \n“Hi\, My name is Sana. I moved here from Jeddah\, Saudi Arabia in 2013. I have lived the majority of my life there. Culturally I am Uyghur\, an ethnic Muslim minority located in Central Asia (now part of China called Xinjiang). The dishes I teach in my class are a mix of the two cultures I come from. I learned to cook from my Mum. She used to call my sisters and me to assist her with cooking. I was her main helper\, especially when it came to pulling noodles. \nWhen I was in high school and had our summer holiday\, my mum trusted me enough to cook for the family and I insisted she write me the recipes with every little detail. I got paid for it! My mum taught me to cook several cuisines from around the world but my favourites were Saudi & Uyghur. With flavours shaped by centuries of cultural exchange\, every dish tells a story of community\, generosity\, and home. \n \nABOUT THE CHEF \nA message from our Chef Amel: \nHi my name is Amel\, I am from Sidi Bel Abbes in Western Algeria. Our city is nicknamed ‘Petit Paris’ because there is a strong French influence. I wasn’t allowed to cook growing up because my parents wanted me to focus on my studies. I was a teacher in Algeria but wasn’t able to continue teaching when I moved to the UK in 2015. After I met my wonderful husband\, we quickly had children and I began to spend more time at home. During this time\, I realised my passion for cooking and baking. I cooked so much for my friends and family that they told me to stop as they feared they were getting fat. In the future\, I want to open my own bakery where I can share Algerian food and culture with people in London. Algeria is extremely multicultural and culturally rich\, which is something I am very proud of.
