DESCRIPTION:In this session Manal will teach delicious\, authentic Syrian dishes followed by a sit-down\, family-style meal.\n\n\nABOUT THE CUISINE \nSyrian food is made for sharing. Meals often begin with mezze\, a spread of small plates featuring pickled vegetables\, salads\, breads\, dips\, and pastries – many of which are meat-free. While traditionally served before a main course\, mezze can just as easily stand on its own as a meal. When embarking on an exploration of Syrian cuisine\, expect an eating experience rooted in hospitality\, connection\, fresh flavours and a diverse range of dishes.  \n \nABOUT THE CHEF \n“My name is Manal\, I am from Damascus\, the capital of Syria. I studied chemistry in University\, as well as other courses like body language\, first aid and computing. After raising three children\, I decided to open my own shop\, selling my designs of handmade hats\, bags and accessories.  \nI moved to the UK in 2024\, and started a new chapter in my life with gratitude and excitement. I am very grateful to the UK because here\, I can sleep feeling safe and warm with my children and my kind husband.  \nCooking has been a part of my life since childhood. I grew up in a big family where food was not just about eating\, it was about love\, family gatherings and warm memories together. My lovely mother always encouraged my passion for cooking and even bought me my own little apron because I loved standing beside her in the kitchen and learning how to cook from her.  \nToday\, I enjoy sharing the flavours\, colours\, and warmth of Syrian food with others through dishes made with love\, creativity and tradition.” \n \n\n\n\nON THE MENU (subject to change): \n\nSheik Al-Mahshi (Stuffed Courgette in a Yoghurt Sauce) | Meat (Beef) and Vegetarian; Milk\, Tree Nuts (Pine Nuts)\nMaqluba and Laban Bi Khiar (Aubergine Pilaf with a Cucumber Yoghurt Dip) | Vegetarian; Milk\, Tree Nuts (Almonds)\nSambousek (Crispy Cheese Rolls) | Vegetarian; Celery\, Gluten (Wheat)\, Milk\, Sesame\, Sulphites\nShorba (Red Lentil Soup) | Vegetarian; Celery\, Gluten (Wheat)\, Milk\, Sulphites\nFattoush | Vegetarian; Gluten (Wheat)\nManal’s Salad | Vegetarian; Milk\, Sesame\, Tree Nuts (Walnuts)\nTamer Mahshi (Chocolate and Nut Stuffed Dates) | Vegetarian; Milk\, Tree Nuts (Almonds\, Hazelnuts\, Pistachios)\n\nThis menu contains meat (beef) but is vegetarian-friendly (7/7 dishes are meat-free or have meat-free filling options). In Bristol I worked in a Kurdish restaurant in Old Market. \nI love sharing my recipes from my country with people from different countries. SUMMARY:Somali Cookery Class with Saada | Veg Friendly | Bristol
DESCRIPTION:Chef Saada will teach delicious\, authentic Somali dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \nSomalia\, located on the coast of the Indian Ocean\, is considered the gateway between the Horn of Africa and the Middle East. It’s key position in the spice trade route is reflected in the fragrant and aromatic spices central to Somali cooking. The cuisine is a blend of African\, Middle Eastern\, Italian and Indian influences. Expect fragrant rices\, fresh herbs\, and a balance of sweet and savory in every bite. From Hanid (lamb stew with tamarind gravy) to Bajiyo (falafel) and Bariis Iskukaris (rainbow rice). Somali food brings people together\, celebrating hospitality\, bold flavours and the joy of sharing home cooked meals. \n \nIn this cookery class in Bristol\, you’ll learn to make traditional Somali dishes while connecting with others and supporting refugees and migrants in the UK through food. \n \nABOUT THE CHEF \nA message from chef Saada: \n“Hi my name is Saada. I grew up in Somalia\, East Africa\, with my mum and dad and three siblings – I’m the second oldest. I learned to cook with my Mum. She had her own recipes and her own way of cooking. I stayed at her side while she cooked – she needed my help and I was so interested. I would stand with her for six hours at a time. I stayed at school until I was 9 years old and then I stopped. But I wanted to carry on learning so I kept reading and teaching myself.  \nGradually I started cooking more\, by the age of 12 I was cooking for the family.   \n \nI came to the UK in 2004\, first to Weston Super Mare then to Bristol. I met and married my husband that same year and had my first baby in 2005. Now I have four children! As well as cooking for my family\, I cook at lunch clubs and organise celebrations and events for older people\, for women\, in schools and for young people. Always bringing people together through food. \n \nI like teaching – seeing people concentrate. When you cook\, you use different muscles and hold yourself differently\, it brings out the best in people. The way I make samosas is second nature to me. SUMMARY:Ethiopian Cookery Class with Tarik | Vegetarian | LONDON | Cookery School
DESCRIPTION:Chef Tarik will teach delicious\, authentic Ethiopian dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \n \nEthiopian cuisine is one of the oldest and most distinctive culinary traditions in the world. At its heart is injera\, a soft\, fermented flatbread that serves as both the plate and the utensil\, bringing people together to share a meal from a single platter. Recipes vary across Ethiopia’s regions and communities\, but food is always closely tied to hospitality\, family\, and celebration. Built around pulses\, vegetables\, warming spice blends\, and slow-cooked dishes\, Ethiopian cooking is as much about sharing and connection as it is about flavour.  \n \nABOUT THE CHEF \n“My name is Tarik and I am from Ethiopia – a country in East Africa\, which has a long history and is home to many. We are proud to have 83 different languages. The Ethiopian Orthodox Church combines elements of the Old and New Testament; this old history combined with Ethiopia’s natural beauty of volcanos\, mountains and lakes now attracts many tourists to Ethiopia.  \n \nMy grandmother inspired me to cook and taught me a lot about cooking – she said I was a quick learner! She loved people and every day\, she would make traditional Ethiopian coffee and invite all of our neighbours and friends to our home. She loves to cook for special occasions\, especially at New Year. My grandmother also taught me the importance of kindness and being helpful and I think of her when I am cooking.  \n \nWhen I arrived in the UK\, I continued my love of cookery and volunteered in community\, church and Red Cross kitchens\, in Liverpool and in Preston. I was referred to Migrateful by the Luminary Bakery and I love it so much! I look forward to teaching you about Ethiopian culture and about our food and drinks – I can’t wait to see you in my class!” \n \n\n\n\nON THE MENU (subject to change): \n \n\nDinich Wot (Spicy Potato and Egg Stew) | Vegetarian; Eggs\, Milk   \nTikil Gomen (Ethiopian Sauteed Cabbage with Carrot and Potato) | Vegan; None\nGomen (Slow-Cooked Ethiopian Greens) | Vegan; None\nShiro Wot (Roasted Ground Chickpea Stew) | Vegetarian; Milk\nKey Sir (Ethiopian Braised Beetroot) | Vegan; None   \nMista Salad (Green Lentil Salad) | Vegan; Mustard\nAyib (Ethiopian Cottage Cheese) | Vegetarian; Milk   \nDabo (Orange-Perfumed Bread)| Vegetarian; Gluten (Wheat)\, Milk\n\n                                                                                                                \nThis menu is vegetarian. Shaped by African\, European\, and Asian influences\, it brings together a world of tastes on the island. I grew up in Spanish Town\, the capital of the Parish of St Catherine. We lived very centrally as my mum worked in the market in town\, selling fish and fresh vegetables. I would often help my mum at the market and I learnt to cook through watching her. \nSometimes when she was working\, I would look after my younger siblings and would cook for them. \nMy passion for cooking only grew and I often cooked for my neighbours and for parties and celebrations for my friends and family. I love seeing satisfaction and joy on people’s faces when I cook for them. My favourite dish is ackee and salt fish – so much so that when I moved to Antigua I brought an ackee tree to plant in my garden and this is something that I always cook for my two children. \nI’ve been in Bristol for a year now and it’s a very friendly and supportive city. I’m volunteering with local refugee charities Bristol Hospitality Network and Borderlands. When I got my refugee status last year I held a big picnic in the park for my friends to celebrate. Jamaican food is spicy and full of flavour\, using lots of fresh vegetables and herbs. \nCooking and eating Jamaican food helps me reconnect to home\, music is also very important to me and I love dancing while I cook – no matter what is going on in life\, it makes me feel happy. SUMMARY:Iranian Cookery Class with Rose | Veg Friendly | Bristol
DESCRIPTION:Chef Rose will teach delicious\, authentic Iranian dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \nIranian cuisine is renowned for its aromatic herbs\, delicate spices\, and beautiful balance of sweet and sour flavours. From rich stews like Fesenjan to vibrant yoghurt dishes and saffron-scented rice. Iranian food is deeply social\, with meals shared in warm\, communal gatherings\, a celebration of hospitality\, and connection. \n \nABOUT THE CHEF \nA message from Chef Rose: \n“My name is Rose\, and I moved to the UK two years ago. One of the things I have loved about coming here is meeting people from all over the world\, I believe food is a wonderful way to learn about eachother and discover new cultures\, traditions\, and stories. \nBefore moving to the UK\, I studied midwifery and later trained in surgery. I worked in a surgical department for 17 years. Although my career was in healthcare\, food has always played an important role in my life. \nMy mother was an excellent cook and was well known among family and friends for her delicious meals and desserts. She wanted me to focus on my education\, so she never really taught me how to cook. However\, growing up with her wonderful food taught me what good food should taste like and gave me a real appreciation for cooking. \nI only started cooking after I got married. I learned to cook from my Mum. She used to call my sisters and me to assist her with cooking. I was her main helper\, especially when it came to pulling noodles. \nWhen I was in high school and had our summer holiday\, my mum trusted me enough to cook for the family and I insisted she write me the recipes with every little detail. I got paid for it! My mum taught me to cook several cuisines from around the world but my favourites were Saudi & Uyghur. Even though I have explored hundreds of dishes living in London\, Laghman is the most delicious dish (In my personal opinion!)” \n \n\n\n\nON THE MENU (subject to change): \n\nJawawa (Uyghur Dumplings filled with Lamb or Chard) | Meat (Lamb) and Vegetarian; Gluten (Wheat)\, Milk\, Sulphites\nCrunchy Chilli & Garlic Oil | Vegan; None\nLaghman (Hand-stretched Noodles with Braised Vegetables) | Vegetarian; Celery\, Eggs\, Gluten (Wheat)\, Sulphites\nFoul Qulabah (Fava Bean Dip) | Vegetarian; Gluten (Wheat)\, Milk\nLuqaimat Alqadi (Saudi Doughnuts with Sesame and Date Syrup) | Vegetarian; Gluten (Wheat)\, Milk\, Sesame\, Soya\n\nThis menu is mostly vegetarian but contains one dish with meat (lamb)\, with vegetarian filling options. I was always asking\, ‘Please can I help?’ and by the time I went to university\, I had learned to cook simply by watching them. \nEvery summer\, I loved visiting my mum’s family in the village. They grew and cooked their own vegetables\, and I spent hours with my grandma learning to make yoghurt and cheese — traditions I still keep for my own family today. \nBig meals at home with family and friends were an important part of our lives. Known for its fragrant curries\, coconut-rich sauces\, and vibrant vegetarian dishes\, it offers a perfect balance of heat\, sweetness\, and tang. From fluffy Nei Soru (coconut rice) to spicy Kozhi Curry\, Sri Lankan food is deeply social and rooted in hospitality\, bringing people together through shared meals and bold flavours. \n \nABOUT THE CHEF \nA message from chef Jaufferkhan: \n“Jaufferkhan means open-minded. I’m from Sri Lanka\, an island known as the Pearl of Asia. I love my country\, it is like paradise. \nI fondly remember picking fresh mango and guava. My passion for cooking began at age 10\, helping my mum clean okra and learning to haggle in the fish markets with my dad. My father was a teacher and provided for our family and his four sisters. My mother was the oldest daughter in her family\, so everyone would eat at our home. She was very generous and always cooked extra for those in need. \nSadly\, because of the civil war in Sri Lanka\, my family had to move to Bahrain. There I worked in the welfare department of an Islamic NGO\, but I was also able to use my cooking skills and I cooked for events for the Youth Group. My wife is also a very good cook and our dream is to open a restaurant.
