From hand-stretched noodles and dumplings to sweet sesame and date desserts\, the food is colourful\, social\, and made to be shared. Meals are deeply communal\, reflecting the warmth\, hospitality\, and culinary heritage of these cultures. \n \nABOUT THE CHEF \nA message from chef Sana: \n“Hi\, My name is Sana. I moved here from Jeddah\, Saudi Arabia in 2013. I have lived the majority of my life there. Culturally I am Uyghur\, an ethnic Muslim minority located in Central Asia (now part of China called Xinjiang). The dishes I teach in my class are a mix of the two cultures I come from. I learned to cook from my Mum. She used to call my sisters and me to assist her with cooking. I was her main helper\, especially when it came to pulling noodles. \nWhen I was in high school and had our summer holiday\, my mum trusted me enough to cook for the family and I insisted she write me the recipes with every little detail. I got paid for it! My mum taught me to cook several cuisines from around the world but my favourites were Saudi & Uyghur. Even though I have explored hundreds of dishes living in London\, Laghman is the most delicious dish (In my personal opinion!)” \n \n\n\n\nON THE MENU (subject to change): \n\nJawawa (Uyghur Dumplings filled with Lamb or Chard) | Meat (Lamb) and Vegetarian; Gluten (Wheat)\, Milk\, Sulphites\nCrunchy Chilli & Garlic Oil | Vegan; None\nLaghman (Hand-stretched Noodles with Braised Vegetables) | Vegetarian; Celery\, Eggs\, Gluten (Wheat)\, Sulphites\nFoul Qulabah (Fava Bean Dip) | Vegetarian; Gluten (Wheat)\, Milk\nLuqaimat Alqadi (Saudi Doughnuts with Sesame and Date Syrup) | Vegetarian; Gluten (Wheat)\, Milk\, Sesame\, Soya\n\nThis menu is mostly vegetarian but contains one dish with meat (lamb)\, with vegetarian filling options. Kindly note that we will not be substituting any ingredients to accommodate dietary needs\, so please only book into classes that suit your dietary requirements. \nJoin Sana’s hands-on\, social cookery class in London to learn to make authentic Saudi and Uyghur dishes — and celebrate the flavours\, skills\, and culinary traditions refugees bring to the UK. \n \n\n\n\n \nTHE CLASS FORMAT \nOur cookery classes are family-style – meaning everyone works together to prepare the dishes as a team. \nWhile you’ll be asked to choose one dish to focus on\, you’ll have the opportunity to move around the kitchen\, help with other dishes\, and learn from each recipe. One of the things I have loved about coming here is meeting people from all over the world\, I believe food is a wonderful way to learn about eachother and discover new cultures\, traditions\, and stories. \nBefore moving to the UK\, I studied midwifery and later trained in surgery. Although my career was in healthcare\, food has always played an important role in my life. \nMy mother was an excellent cook and was well known among family and friends for her delicious meals and desserts. In Iranian culture\, preparing food for the family is often an important part of home life. To my surprise\, I learned very quickly\, and before long people were complimenting my food and asking for my recipes. I believe I owe this to my mother. Sierra Leone is a culturally diverse country\, rich in a number of minerals including diamonds and gold. \nCooking has always been my passion. She started by giving me simple tasks to do and gradually taught me how to prepare dishes properly. I am grateful that she shared her secret tips with me. \nI believe it is important to continuously develop oneself and in the importance of community. Putting these principles into practice\, I became a volunteer chef with the Red Cross and with Connect All Community\, cooking for over 60 people every week. \nI bring humour and joy to everything I do\, including my cookery classes. SUMMARY:Somali Cookery Class with Saada | Veg Friendly | Bristol
DESCRIPTION:Chef Saada will teach delicious\, authentic Somali dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \nSomalia\, located on the coast of the Indian Ocean\, is considered the gateway between the Horn of Africa and the Middle East. It’s key position in the spice trade route is reflected in the fragrant and aromatic spices central to Somali cooking. The cuisine is a blend of African\, Middle Eastern\, Italian and Indian influences. Expect fragrant rices\, fresh herbs\, and a balance of sweet and savory in every bite. From Hanid (lamb stew with tamarind gravy) to Bajiyo (falafel) and Bariis Iskukaris (rainbow rice). Somali food brings people together\, celebrating hospitality\, bold flavours and the joy of sharing home cooked meals. \n \nIn this cookery class in Bristol\, you’ll learn to make traditional Somali dishes while connecting with others and supporting refugees and migrants in the UK through food. \n \nABOUT THE CHEF \nA message from chef Saada: \n“Hi my name is Saada. I grew up in Somalia\, East Africa\, with my mum and dad and three siblings – I’m the second oldest. I learned to cook with my Mum. She had her own recipes and her own way of cooking. I stayed at her side while she cooked – she needed my help and I was so interested. I would stand with her for six hours at a time. I stayed at school until I was 9 years old and then I stopped. But I wanted to carry on learning so I kept reading and teaching myself.  \nGradually I started cooking more\, by the age of 12 I was cooking for the family.   \n \nI came to the UK in 2004\, first to Weston Super Mare then to Bristol. I met and married my husband that same year and had my first baby in 2005. Now I have four children! As well as cooking for my family\, I cook at lunch clubs and organise celebrations and events for older people\, for women\, in schools and for young people. Always bringing people together through food. \n \nI like teaching – seeing people concentrate. When you cook\, you use different muscles and hold yourself differently\, it brings out the best in people. The way I make samosas is second nature to me. I am from the lovely island nation of Trinidad and Tobago in the Caribbean and I am the mother of two daughters. My cooking journey started over 25 years ago when I was just 10. My mother had to go to work\, leaving me to cook for my two younger siblings. At first\, I made some pretty awful dishes but with my mother’s help and encouragement\, I got better. At her suggestion\, I started cooking school and soon I was creating new dishes on my own. I then trained at the Trinidad and Tobago International Hilton Hotel and worked as a sous chef at the Carlton Savannah Hotel when Queen E stayed there in 2009. When the hotel closed\, I first started cooking for homeless people and then for children with additional needs. I became a mother figure for many of the kids and some of the older people. I have been volunteering for Praxis charity for the last year\, a charity that helps support people on their immigration journey. \nIn addition to cooking\, I am passionate about music\, dancing and laughing! SUMMARY:Pakistani Cookery Class with Amtul | Veg Friendly | Bristol
DESCRIPTION:Chef Amtul will teach delicious\, authentic Pakistani dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \n \nWith deep roots in regional traditions and home cooking passed down through generations\, Pakistani cuisine is known for its bold spices\, fresh herbs\, and slow-cooked stews. It combines rice\, breads\, and vegetables into comforting\, shared meals full of flavour and heart. From curries and lentils to fritters and salads\, it sits within South Asian cooking while keeping its own distinct identity. \n \nABOUT THE CHEF \nA message from Chef Amtul: \n““I come from Pakistan\, it is a beautiful country. I grew up in Rabwah\, on the lush green banks of the Chenab River in Punjab. The town was established for the Ahmadiyya community. \nI remember my childhood there very fondly\, they were the happiest days of my life and still bring me peace when I think about them. From the age of 10\, I helped my mother cook\, and by 12 I was cooking properly on my own. Okra masala and aubergine curry were among the first dishes I learned to make. My father always praised my cooking and gave me confidence\, while my mother would gently suggest ways to improve. \nAfter I married\, I moved to Bahawalpur with my husband\, who is a doctor\, and together we raised our four children. But because Ahmadis face persecution in Pakistan\, it became unsafe for us to stay there. We first moved to Senegal\, where my husband helped establish the Humanity First hospital\, and later to The Gambia so our children could study in English. In 2023\, we moved to the UK. \nPakistani culture is deeply rooted in hospitality and care for others\, it is very important to make guests feel welcomed and cared for. During my time in Senegal and Gambia\, I was always hosting people visiting the hospital from different countries. I always made sure they had delicious food to eat and extras to take with them. Cooking for people has always brought me joy. I only know how to cook in large quantities! My food is spicy\, balanced\, fresh\, comforting\, and full of flavour. From rich stews like Fesenjan to vibrant yoghurt dishes and saffron-scented rice. Iranian food is deeply social\, with meals shared in warm\, communal gatherings\, a celebration of hospitality\, and connection. \n \nABOUT THE CHEF \nA message from Chef Rose: \n“My name is Rose\, and I moved to the UK two years ago. One of the things I have loved about coming here is meeting people from all over the world\, I believe food is a wonderful way to learn about eachother and discover new cultures\, traditions\, and stories. \nBefore moving to the UK\, I studied midwifery and later trained in surgery. I worked in a surgical department for 17 years. Although my career was in healthcare\, food has always played an important role in my life. \nMy mother was an excellent cook and was well known among family and friends for her delicious meals and desserts. She wanted me to focus on my education\, so she never really taught me how to cook. However\, growing up with her wonderful food taught me what good food should taste like and gave me a real appreciation for cooking. \nI only started cooking after I got married. In Iranian culture\, preparing food for the family is often an important part of home life. To my surprise\, I learned very quickly\, and before long people were complimenting my food and asking for my recipes. I believe I owe this to my mother. Nothing makes me happier than seeing people enjoy a meal that I have prepared. \nThrough my cooking\, I hope to share not only the flavours of Iran but also the warmth\, hospitality\, and traditions that are such an important part of Iranian culture.” \n \n \n\n\n\n \nON THE MENU (subject to change) \n\nMirza Ghasemi (Aubergine Dip) | Vegetarian; Egg\nAdas Polo (Sweet and Fragrant Lentil Rice) | Vegetarian; Milk\nAsh Reshteh (Noodle Soup) | Vegetarian; Milk\, Gluten (Wheat)\nBorani Esfenaj (Spinach Dip) | Vegetarian; Milk\, Tree Nuts (Walnuts)\nSambusa (Spiced Potato Filo Parcels) | Vegan; Gluten (Wheat)\nTas Kebab (Tangy Chicken with Quince and Plums) | Meat (Chicken); None\n\nThis menu contains meat (chicken) but is vegetarian-friendly\, with 5 of 6 dishes meat-free. SUMMARY:Ecuadorian Cookery Class with Judith |Veg Friendly| LONDON|Cookery School
DESCRIPTION:Chef Judith will teach you some of her favourite Ecuadorian dishes followed by a sit down meal.\n\n\nABOUT THE CUISINE \nEcuadorian cuisine comes from South America and reflects the country’s diverse geography\, from the Pacific coast to the Andes mountains and the Amazon rainforest. It combines fresh seafood\, tropical fruits\, vegetables\, grains\, and spices to create vibrant\, flavourful dishes. Meals are hands-on\, social\, and made to be shared\, with signature dishes like Ceviche\, Tigrillo\, and Empanadas highlighting the warmth\, creativity\, and communal spirit of Ecuadorian food culture. \n \nABOUT THE CHEF \nA message from our Chef Judith: \n“My name is Judith\, and I am from Ecuador\, a beautiful country in South America. I grew up in Santo Domingo de los Tsachilas\, an area located between the coast and the mountains\, so we had the best produce. I grew up in a big family where food and music were always part of our joy – we loved getting together\, sharing meals\, and dancing. In Ecuador\, you can find four seasons in one day by travelling from one part of the country to another\, and that means that you can experience many different types of food in the country. When I came to England\, I started to do some voluntary work in a ‘healthy living’ community group\, and I used to run a session on healthy eating – this is reflected in my menu today. Teaching others about Ecuadorian food helps me feel close to my country and reminds me that even far from home\, we can still celebrate who we are and connect with others through culture and food. Each dish I create carries the soul of my homeland that is inspired by the unique beauty of the Amazon\, where the jungle speaks and nature is sacred. My hands work with love\, honouring my roots and sharing a little piece of living nature with the world.” \n \n\n\n\n \nON THE MENU (subject to change): \n\nTwo Ceviche | Fish (Prawns) and Vegan; Celery\, Crustaceans\, Mustard\nTigrillo (Plantain Hash) | Vegetarian; Eggs\, Milk\, Peanuts\nEstofado de Carne y Chocolate (Beef Stew with Chocolate) | Meat (Beef); Celery\nEstofado de Vegetales (Golden Vegetable Stew) | Vegan; Celery\nEmpanadas de Viento (Cheese-Filled Pastries) | Vegetarian; Eggs\, Gluten (Wheat)\, Milk\nColada Morada (Warm Fruit Punch) | Vegan; None\n\nThis menu contains meat (beef) and fish (prawns) but is vegetarian-friendly (5/6 dishes are meat-free).
