SUMMARY:Pakistani Cookery Class with Amtul | Veg Friendly | Bristol
DESCRIPTION:Chef Amtul will teach delicious\, authentic Pakistani dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \n \nWith deep roots in regional traditions and home cooking passed down through generations\, Pakistani cuisine is known for its bold spices\, fresh herbs\, and slow-cooked stews. It combines rice\, breads\, and vegetables into comforting\, shared meals full of flavour and heart. From curries and lentils to fritters and salads\, it sits within South Asian cooking while keeping its own distinct identity. \n \nABOUT THE CHEF \nA message from Chef Amtul: \n““I come from Pakistan\, it is a beautiful country. I grew up in Rabwah\, on the lush green banks of the Chenab River in Punjab. The town was established for the Ahmadiyya community. \nI remember my childhood there very fondly\, they were the happiest days of my life and still bring me peace when I think about them. From the age of 10\, I helped my mother cook\, and by 12 I was cooking properly on my own. Okra masala and aubergine curry were among the first dishes I learned to make. My father always praised my cooking and gave me confidence\, while my mother would gently suggest ways to improve. \nAfter I married\, I moved to Bahawalpur with my husband\, who is a doctor\, and together we raised our four children. But because Ahmadis face persecution in Pakistan\, it became unsafe for us to stay there. We first moved to Senegal\, where my husband helped establish the Humanity First hospital\, and later to The Gambia so our children could study in English. In 2023\, we moved to the UK. \nPakistani culture is deeply rooted in hospitality and care for others\, it is very important to make guests feel welcomed and cared for. During my time in Senegal and Gambia\, I was always hosting people visiting the hospital from different countries. I always made sure they had delicious food to eat and extras to take with them. Cooking for people has always brought me joy. I only know how to cook in large quantities! My food is spicy\, balanced\, fresh\, comforting\, and full of flavour. I am excited to share my recipes with Migrateful and hope you enjoy them!” \n \n\n\n\n \nON THE MENU (subject to change) \n \n\nPalak Paneer (Traditional Cheese in Spinach Curry) | Vegetarian; Milk\nChicken Mughlai (Rich Chicken Curry) | Meat (Chicken); Milk\, Tree Nuts (Pistachio\, Almond\, Cashew)\nParatha Roti (Flaky Flatbread) | Vegetarian; Milk\, Gluten (Wheat)\nRaita and Green Chutney (Yoghurt Side Dishes) | Vegetarian; Milk\nBaingan Sabzi (Aubergine Curry) | Vegetarian; Milk\nPakora (Deep-Fried Vegetable Fritter) | Vegan; None\n\n \nThis menu contains meat (chicken) but is vegetarian-friendly\, with 5 of 6 dishes meat-free. I learned Persian cooking techniques from my mother\, but also particularly from my grandfather. He was a chef who loved to cook with the food he had grown. He had a large field of crocuses – which are the source of saffron\, a very important ingredient in Iranian cooking.  \nCooking was always a passion of mine\, alongside my main profession; I trained and worked as a lawyer in Iran. I also worked as a head chef in Iran. For me\, cooking is not only about making food\, it’s about sharing happiness\, my culture and my memories\, and bringing people together.  Through a friend in my English class\, I was very lucky to hear about Migrateful – it is giving me the chance to share my culture and the amazing Persian food from my childhood. In Iranian culture\, preparing food for the family is often an important part of home life. To my surprise\, I learned very quickly\, and before long people were complimenting my food and asking for my recipes. I believe I owe this to my mother. Nothing makes me happier than seeing people enjoy a meal that I have prepared. \nThrough my cooking\, I hope to share not only the flavours of Iran but also the warmth\, hospitality\, and traditions that are such an important part of Iranian culture.” \n \n \n\n\n\n \nON THE MENU (subject to change) \n\nMirza Ghasemi (Aubergine Dip) | Vegetarian; Egg\nAdas Polo (Sweet and Fragrant Lentil Rice) | Vegetarian; Milk\nAsh Reshteh (Noodle Soup) | Vegetarian; Milk\, Gluten (Wheat)\nBorani Esfenaj (Spinach Dip) | Vegetarian; Milk\, Tree Nuts (Walnuts)\nSambusa (Spiced Potato Filo Parcels) | Vegan; Gluten (Wheat)\nTas Kebab (Tangy Chicken with Quince and Plums) | Meat (Chicken); None\n\nThis menu contains meat (chicken) but is vegetarian-friendly\, with 5 of 6 dishes meat-free. SUMMARY:Ecuadorian Cookery Class with Judith |Veg Friendly| LONDON|Cookery School
DESCRIPTION:Chef Judith will teach you some of her favourite Ecuadorian dishes followed by a sit down meal.\n\n\nABOUT THE CUISINE \nEcuadorian cuisine comes from South America and reflects the country’s diverse geography\, from the Pacific coast to the Andes mountains and the Amazon rainforest. It combines fresh seafood\, tropical fruits\, vegetables\, grains\, and spices to create vibrant\, flavourful dishes. Meals are hands-on\, social\, and made to be shared\, with signature dishes like Ceviche\, Tigrillo\, and Empanadas highlighting the warmth\, creativity\, and communal spirit of Ecuadorian food culture. \n \nABOUT THE CHEF \nA message from our Chef Judith: \n“My name is Judith\, and I am from Ecuador\, a beautiful country in South America. I grew up in Santo Domingo de los Tsachilas\, an area located between the coast and the mountains\, so we had the best produce. I grew up in a big family where food and music were always part of our joy – we loved getting together\, sharing meals\, and dancing. In Ecuador\, you can find four seasons in one day by travelling from one part of the country to another\, and that means that you can experience many different types of food in the country. When I came to England\, I started to do some voluntary work in a ‘healthy living’ community group\, and I used to run a session on healthy eating – this is reflected in my menu today. Teaching others about Ecuadorian food helps me feel close to my country and reminds me that even far from home\, we can still celebrate who we are and connect with others through culture and food. Each dish I create carries the soul of my homeland that is inspired by the unique beauty of the Amazon\, where the jungle speaks and nature is sacred. My hands work with love\, honouring my roots and sharing a little piece of living nature with the world.” \n \n\n\n\n \nON THE MENU (subject to change): \n\nTwo Ceviche | Fish (Prawns) and Vegan; Celery\, Crustaceans\, Mustard\nTigrillo (Plantain Hash) | Vegetarian; Eggs\, Milk\, Peanuts\nEstofado de Carne y Chocolate (Beef Stew with Chocolate) | Meat (Beef); Celery\nEstofado de Vegetales (Golden Vegetable Stew) | Vegan; Celery\nEmpanadas de Viento (Cheese-Filled Pastries) | Vegetarian; Eggs\, Gluten (Wheat)\, Milk\nColada Morada (Warm Fruit Punch) | Vegan; None\n\nThis menu contains meat (beef) and fish (prawns) but is vegetarian-friendly (5/6 dishes are meat-free). SUMMARY:Hong Konger Cookery Class with Bon | Veg Friendly|LONDON | Cookery School
DESCRIPTION:In this session Bon will teach delicious\, authentic Hong Konger dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \n \nHong Kong cuisine is a vibrant blend of Eastern and Western influences\, reflecting its unique history and multicultural community. From delicate dumplings to comforting rice dishes and sweet desserts\, each dish combines fresh ingredients with bold\, balanced flavours. Meals are social and hands-on\, perfect for sharing with friends and family\, and offer a taste of the culinary diversity that makes Hong Kong a true food paradise. \n \nABOUT THE CHEF \n“Hi my name is Bon and I grew up in Hong Kong\, a city where the smell of steaming bamboo baskets and roasting meats fills every street corner and where eating well is a serious matter of pride. Growing up\, the highlight of every weekend was ‘Yum Cha’ (drinking Chinese tea with family); the whole family gathering around a round table\, aunties arguing over the last dim sum\, grandparents guiding the younger on how to pour tea properly and cousins sneaking extra eggs tarts before the meals was done. Those loud\, joyful mornings in a Cantonese tea house are some of my most treasured memories and they are the reason I cook the way I do. To me\, Yum Cha isn’t just a meal – it’s a ritual of gathering\, of generosity\, of saying ‘I love you’ through food.  \n \nIn my class\, I want to bring that experience to you. We’ll take the humble home-cooked dishes of Hong Kong  and lift them to the standard of a proper Cantonese tea house. You’ll learn the technique behind dishes that look simple\, but carry decades of tradition: how to fold a dumpling so the filling stays juicy\, how to balance sweet\, sour and umami the Cantonese way\, and how to recreate that Yum Cha feeling – wherever you are in the world. I can’t wait to share this culinary experience with you!” \n \n\n\n\n \nON THE MENU (subject to change): \n\nBeef Ho Fun (Stir-Fried Beef Noodles) | Meat (Beef); Gluten (Wheat)\, Molluscs\, Soya                                                                                                                                                                             \nMala Ho Fun (Spice Mala Vegetable Stir-Fried Noodles) | Vegan; Gluten (Wheat)\, Soya \nPrawn Dim Sum (Prawn Dumplings) | Meat (Pork) and Fish (Prawns); Crustaceans\, Gluten (Wheat)\, Sesame\nTofu Dim Sum (Tofu Dumplings) | Vegetarian; Eggs\, Gluten (Wheat)\, Sesame\, Soya\nTempura Platter | Vegan; Gluten (Wheat)\, Soya                                                                                                                                                                 \nMilky Soup | Vegetarian; Eggs\, Soya    \nJapanese Style Salad | Vegetarian; Eggs\, Gluten (Wheat)\, Sesame\, Soya \nRed Bean Soup Dessert | Vegan; None \n\n \nThis menu contains meat (beef and pork) and fish (prawns) but is vegetarian-friendly (6/8 dishes are meat-free). I am from Algiers the capital of Algeria\, in the North of the country on the Mediterranean Sea\, sandwiched between Tunisia and Morocco. \nAt home in Algeria\, I was the spoilt youngest child\, so the only cooking I did was ‘play cooking’ with my beloved Auntie\, who gave me miniature cooking equipment and encouraged me to copy her. At University\, I became more interested in food and started asking for recipes from my relatives. I also learnt to prepare sweets for Eid. I love to cook Algerian food that I’ve enjoyed eating and have an inbuilt instinct to replicate the flavours and smells of my childhood. \nIn Algeria\, I graduated from University in Computing management and Accounting. I came to the UK 15 years ago to join my husband who is my best friend’s cousin. We met when he was visiting my friend and fell in love! \n \nMigrateful has encouraged me to have more confidence to express myself and share my passion for Algerian food. SUMMARY:Algerian Cookery Class with Amel | LONDON | Pop up
DESCRIPTION:In this session Amel will teach delicious\, authentic Algerian dishes followed by a sit-down\, family-style meal.\n\n\nABOUT THE CUISINE \nAlgerian cuisine is a beautiful blend of North African\, Mediterranean\, and French influences — rich in spices\, seasonal vegetables\, slow-cooked stews\, and warm breads. From fragrant soups like Chorba Frik to comforting tagines and delicate pastries\, Algerian food is deeply social\, made to be shared\, and full of heritage. With flavours shaped by centuries of cultural exchange\, every dish tells a story of community\, generosity\, and home. \n \nABOUT THE CHEF \nA message from our Chef Amel: \nHi my name is Amel\, I am from Sidi Bel Abbes in Western Algeria. Our city is nicknamed ‘Petit Paris’ because there is a strong French influence. I wasn’t allowed to cook growing up because my parents wanted me to focus on my studies. I was a teacher in Algeria but wasn’t able to continue teaching when I moved to the UK in 2015. After I met my wonderful husband\, we quickly had children and I began to spend more time at home. During this time\, I realised my passion for cooking and baking. I cooked so much for my friends and family that they told me to stop as they feared they were getting fat. In the future\, I want to open my own bakery where I can share Algerian food and culture with people in London. Algeria is extremely multicultural and culturally rich\, which is something I am very proud of. I have always been a daydreamer and I really value the freedom to pursue my dreams here in the UK”. \n \n\n\n\nON THE MENU (subject to change): \n\nTagine Zitoun (Olive Tagine with Chicken and Meatballs) | Meat (Chicken and Lamb); Egg\, Gluten (Wheat)\nChorba Frik (Vegetable Soup with Freekah and Carraway) | Vegetarian; Celery\, Gluten (Wheat)\nBourek (Tuna Pastry Parcels with Cheese) | Fish (Tuna); Eggs\, Fish\, Gluten (Wheat)\, Milk\nRekhsas (Algerian Semolina and Nigella Seed Flatbread) | Vegetarian; Celery\, Milk\nSamsa b-louz (Fried Almond\, Sesame and Honey Pastries) | Vegetarian; Gluten (Wheat)\, Milk\, Sesame\, Tree Nuts (Almonds)\n\nThis menu contains meat (chicken and lamb) and fish (tuna).
