Trini food is all about sharing – rich\, flavourful dishes made to bring people together! \n \n\n\n\n \nABOUT THE CHEF \nA message from chef Kele: \n“My name is Kele and I am from Trinidad and Tobago. \nI was raised in an extended family – I lived with my grandparents\, parents\, my three brothers and lots of cousins. Food acted as the glue that kept us together. \nMost of my cooking skills I learned and inherited from my Granny – I was asked to read out recipes from Good Housekeeping magazines – she would choose the ones she thought sounded the most delicious and we’d cook them together\, usually for special occasions like Christmas and birthdays. This ignited my passion for teaching and cooking – allowing me to own a catering business and become a qualified teacher. A deep appreciation for food was developed because I understood the role it played in relationships and families\, eventually extending to my own. \nI arrived in Bristol some years ago\, and have shared my Trinidad culture through numerous cookery classes. I joined Migrateful because I love cooking. I have my own baking business\, I bake cookies and sweets for the Sudanese community around the UK. My goal is one day to get my qualification to be an optician recognised in the UK. \nI learnt to cook from my eldest sister. When I was a child we used to play with an empty can\, leaves and rocks and pretend we were in the kitchen. Walking down the street in Sudan\, you can always smell cooking. Sudanese cuisine is very colourful and uses delicious spices like cinnamon and cumin. \nIn Sudan meals are always communal –the whole family or household share one large tray. Mealtimes are a very important time for connection and solving each others’ problems. You can’t feel lonely in a Sudanese home. These recipes are often shared at family gatherings and celebrations\, showcasing the community spirit and hospitality at the heart of Kurdish life.” \n \n\n\n\n \nABOUT THE CHEF\nA message from chef Ali: \n“Hi\, my name is Ali and I come from Kurdistan\, Iraq. I grew up in a beautiful city called Sulaymaniyah. I was studying Geography at university\, but in 2017 I needed to leave because it was dangerous for me to stay. When I came to Bristol in 2020 I felt relief because the people were so friendly and supportive. \nI learnt to cook from my grandmother and stepmother when I was 15. They said you must look after yourself when you are at University. I discovered I loved cooking. The first things I cooked were rice and aubergine stew to go with lamb. \nWhen I lived in Manchester with 4 friends\, I did all the cooking. In Bristol I worked in a Kurdish restaurant in Old Market. \nI love sharing my recipes from my country with people from different countries. Kurdish cuisine uses a lot of fresh ingredients\, herbs and spices. It is very tasty but not too spicy.
