Dishes like Sayadieh (seafood rice)\, stuffed vine leaves\, and crispy flatbreads are made to be shared\, highlighting the social\, hands-on nature of meals. Every dish reflects the warmth\, generosity\, and heritage of Palestinian culture. \n \nABOUT THE CHEF \nA message from chef Amna:  \n“My name is Amna from Gaza\, Palestine and I came to the UK in the winter of 2022. In Gaza\, I was a university lecturer in psychology for 20 years and a director of a charity supporting mothers and children. I have 5 children: 2 daughters who still live in Gaza\, a son and daughter in Canada and a son in London. \nAs a young woman\, I lived in Libya. I married there\, brought up my children and achieved my degree and my Masters. Libya’s sky seemed open to my dreams and I was very happy there. \nWhen I first arrived in the UK\, I had nothing here and felt lonely and ashamed. I am thankful to have become part of the Migrateful family. Migrateful has helped me feel more positive and I am happy to share my food and my culture. \nWhen I cook I always think of my mother. I don’t use recipes but cook by a sense I inherited from her. My mother and father always talked about their life before Gaza – I have never been to their home in Ashdod but I feel I know it. My father caught fish\, and they always had fresh vegetables from the countryside. I am passionate about making healthy and nutritious food. It is so important for our lives and our physical and mental health. I grew up in Somalia\, East Africa\, with my mum and dad and three siblings – I’m the second oldest. I learned to cook with my Mum. She had her own recipes and her own way of cooking. I stayed at her side while she cooked – she needed my help and I was so interested. I would stand with her for six hours at a time. I stayed at school until I was 9 years old and then I stopped. But I wanted to carry on learning so I kept reading and teaching myself.  \nGradually I started cooking more\, by the age of 12 I was cooking for the family.   \n \nI came to the UK in 2004\, first to Weston Super Mare then to Bristol. I met and married my husband that same year and had my first baby in 2005. Now I have four children! As well as cooking for my family\, I cook at lunch clubs and organise celebrations and events for older people\, for women\, in schools and for young people. Always bringing people together through food. \n \nI like teaching – seeing people concentrate. When you cook\, you use different muscles and hold yourself differently\, it brings out the best in people. The way I make samosas is second nature to me. Meals are deeply communal\, reflecting the warmth\, hospitality\, and culinary heritage of these cultures. \n \nABOUT THE CHEF \nA message from chef Sana: \n“Hi\, My name is Sana. I moved here from Jeddah\, Saudi Arabia in 2013. I have lived the majority of my life there. Culturally I am Uyghur\, an ethnic Muslim minority located in Central Asia (now part of China called Xinjiang). The dishes I teach in my class are a mix of the two cultures I come from. I learned to cook from my Mum. She used to call my sisters and me to assist her with cooking. I was her main helper\, especially when it came to pulling noodles. \n \nWhen I was in high school and had our summer holiday\, my mum trusted me enough to cook for the family and I insisted she write me the recipes with every little detail. I got paid for it! My mum taught me to cook several cuisines from around the world but my favourites were Saudi & Uyghur. I was a teacher in Algeria but wasn’t able to continue teaching when I moved to the UK in 2015. After I met my wonderful husband\, we quickly had children and I began to spend more time at home. During this time\, I realised my passion for cooking and baking. I cooked so much for my friends and family that they told me to stop as they feared they were getting fat. In the future\, I want to open my own bakery where I can share Algerian food and culture with people in London. Algeria is extremely multicultural and culturally rich\, which is something I am very proud of. They said you must look after yourself when you are at University. I discovered I loved cooking. Warm & easy\, like being with family!\n\n\nABOUT THE CUISINE \nAfghan cuisine is a beautiful balance of flavour\, colour\, and tradition — shaped by centuries of cultural exchange along the ancient Silk Roads. It combines Persian\, Central Asian\, and Indian influences\, celebrating aromatic spices\, fresh herbs\, and slow-cooked comfort dishes. From fragrant rice and hearty stews to delicate dumplings and cooling yogurt dips\, Afghan food is made with care\, patience\, and artistry. It’s food that brings people together — comforting\, generous\, and full of soul. \n \nABOUT THE CHEF \nA message from our chef Najee: \n“My name is Najee. I am from Panjshir in Afghanistan and grew up in a big family in the country’s capital city\, Kabul. \nI would spend my time walking and exploring the historical places in the city and became interested in art and architecture. I started drawing when I was very young and my work depicts traditional life in Afghanistan. \nI always see art in food. When I am cooking\, I don’t just consider the taste. Food has to look good and I spend time designing its presentation. \nI realised that I had a talent for cooking when I was a teenager when friends invited me to their homes – not as a guest\, but to cook for them! \nI am very proud of Afghan food. We don’t have a lot of ingredients but the care we take in preparing food makes it one of the tastiest cuisines in the world.
