It is in the middle of the Silk Roads\, which means it has been a crossroads for trade and remains a melting pot of different cultures. The food culture is very colourful\, taking ingredients and flavours from many cuisines. My family is Tajik and so the food I have grown up with and will teach in my classes is based around this culture \nI learned to cook from a very young age from my mother and grandmother. The village where I grew up had cows\, sheep\, fruits and vegetables and all of my favourite recipes are based on fresh ingredients. I have nine siblings. My mother was our hero feeding her large family every day. \nCooking for my family also brings me great joy and I would love to share my recipes with you. My city\, Damitta\, is famous for furniture\, sweets and cheese. I am from a large family and I am the only boy with three sisters. \nAfter I graduated from university as a computer engineer\, I went to work in Kuwait. I worked there for 17 years in the Ministry of Education and the University of Kuwait before I moved to the UK in 2023 with my wife and my two children (I now have three)! \nWhen I was at home in Egypt\, it was always my mother who did the cooking. Although I didn’t cook then\, I learnt a lot from watching her. But when I was living alone in Kuwait\, especially for the first 3 years before I married\, I had to learn how to cook for myself! \nAs I spent half of my life in Egypt and the other half in Kuwait\, I have influences from both countries in my cooking. For example\, from my home country\, a famous dish that everyone there loves is Koshary – a delicious vegetarian dish. I was a teacher in Algeria but wasn’t able to continue teaching when I moved to the UK in 2015. After I met my wonderful husband\, we quickly had children and I began to spend more time at home. During this time\, I realised my passion for cooking and baking. I cooked so much for my friends and family that they told me to stop as they feared they were getting fat. In the future\, I want to open my own bakery where I can share Algerian food and culture with people in London. Algeria is extremely multicultural and culturally rich\, which is something I am very proud of. Every dish reflects the warmth\, generosity\, and heritage of Palestinian culture. \n \nABOUT THE CHEF \nA message from chef Amna:  \n“My name is Amna from Gaza\, Palestine and I came to the UK in the winter of 2022. In Gaza\, I was a university lecturer in psychology for 20 years and a director of a charity supporting mothers and children. I have 5 children: 2 daughters who still live in Gaza\, a son and daughter in Canada and a son in London. \nAs a young woman\, I lived in Libya. I married there\, brought up my children and achieved my degree and my Masters. Libya’s sky seemed open to my dreams and I was very happy there. \nWhen I first arrived in the UK\, I had nothing here and felt lonely and ashamed. I am thankful to have become part of the Migrateful family. Migrateful has helped me feel more positive and I am happy to share my food and my culture. \nWhen I cook I always think of my mother. I don’t use recipes but cook by a sense I inherited from her. My mother and father always talked about their life before Gaza – I have never been to their home in Ashdod but I feel I know it. My mother had to go to work\, leaving me to cook for my two younger siblings. At first\, I made some pretty awful dishes but with my mother’s help and encouragement\, I got better. At her suggestion\, I started cooking school and soon I was creating new dishes on my own. I then trained at the Trinidad and Tobago International Hilton Hotel and worked as a sous chef at the Carlton Savannah Hotel when Queen E stayed there in 2009. When the hotel closed\, I first started cooking for homeless people and then for children with additional needs. I became a mother figure for many of the kids and some of the older people. Meals are social\, nourishing\, and full of creativity — combining tradition with personal touches that make each dish unique. \n \nABOUT THE CHEF \nA message from chef Mina: \n“My name is Mina and I am Iranian. I come from the southwest part of Iran but grew up in Tehran within a large family. I learned as a teenager the pleasure of cooking. My dishes are based on traditional Iranian recipes to which I have added my creative twist. Cooking has become a joyful way for me to have a positive impact on individuals and groups. For me\, cooking is not just a skillful blending of flavours and colours\, but something that brings people together to talk and connect. My classes are a way to create memorable moments for participants. \nI value community engagement and work as a volunteer in a local charity\, hoping to make a positive contribution to the lives of others.
