I am from the lovely island nation of Trinidad and Tobago in the Caribbean and I am the mother of two daughters. My cooking journey started over 25 years ago when I was just 10. My mother had to go to work\, leaving me to cook for my two younger siblings. At first\, I made some pretty awful dishes but with my mother’s help and encouragement\, I got better. At her suggestion\, I started cooking school and soon I was creating new dishes on my own. I then trained at the Trinidad and Tobago International Hilton Hotel and worked as a sous chef at the Carlton Savannah Hotel when Queen E stayed there in 2009. When the hotel closed\, I first started cooking for homeless people and then for children with additional needs. I became a mother figure for many of the kids and some of the older people. I have been volunteering for Praxis charity for the last year\, a charity that helps support people on their immigration journey. \nIn addition to cooking\, I am passionate about music\, dancing and laughing! You’ll work together with other participants to prepare each of the dishes\, before sitting down to share a meal together. \nA message from our Chef Bon: \n“Hi my name is Bon and I grew up in Hong Kong\, a city where the smell of steaming bamboo baskets and roasting meats fills every street corner and where eating well is a serious matter of pride. \nGrowing up\, the highlight of every weekend was ‘Yum Cha’ (drinking Chinese tea with family); the whole family gathering around a round table\, aunties arguing over the last dim sum\, grandparents guiding the younger on how to pour tea properly and cousins sneaking extra eggs tarts before the meals was done. Those loud\, joyful mornings in a Cantonese tea house are some of my most treasured memories and they are the reason I cook the way I do. To me\, Yum Cha isn’t just a meal – it’s a ritual of gathering\, of generosity\, of saying ‘I love you’ through food. \nIn my class\, I want to bring that experience to you. We’ll take the humble home-cooked dishes of Hong Kong and lift them to the standard of a proper Cantonese tea house. You’ll learn the technique behind dishes that look simple\, but carry decades of tradition: how to fold a dumpling so the filling stays juicy\, how to balance sweet\, sour and umami the Cantonese way\, and how to recreate that Yum Cha feeling – wherever you are in the world. I can’t wait to share this culinary experience with you! ” \n \nWe’re excited to have you in the class! SUMMARY:(SOLD OUT) Eritrean Cookery Class with Wedad | LONDON | Cookery School
DESCRIPTION:Chef Wedad will teach you some of her favourite Eritrean dishes followed by a sit down meal.\n\n\nABOUT THE CUISINE \nEritrean cuisine comes from East Africa\, along the Red Sea and the highlands of the Horn of Africa. Eritrea’s food reflects a blend of indigenous traditions\, Ottoman\, Italian\, and Middle Eastern influences due to historical interactions. It combines bold spices\, legumes\, vegetables\, grains\, and fresh herbs to create vibrant\, flavourful dishes. Meals are hands-on\, social\, and meant to be shared\, with signature dishes like Shiro\, Zegny\, and Salata Bazinjan served communally on one plate\, highlighting the warmth\, creativity\, and togetherness of Eritrean food culture. \n \nABOUT THE CHEF  \nA message from our Chef Wedad: \n“Hi\, my name is Wedad and I come from a town called Keran in south-west Eritrea. Eritrea is a beautiful country in East Africa and is surrounded by mountains and the Red Sea. I grew up with my grandmother\, who loved to cook and taught me all her recipes. My friends and I liked to cook our dishes for each other and so I also learnt how to cook other cuisines. My favourite dish is Salata Banzinjan\, an aubergine salad\, which I make in lots of different ways. Eritrean food is typically spicy and is served on one plate to be shared with the whole family. One of the things that we eat often is a fermented bread called injera\, which we have at lunchtime. Today\, we will be serving injera with Shiro and Salata Banzinjan. I came to the UK in 2012 and the biggest barrier I faced was the language. Now I study English at the Red Cross and one day we were writing about our favourite food. A few weeks later\, I brought in the dish that I wrote about – kebab – and my teacher and colleagues liked it so much\, she suggested I apply to join Migrateful! I am now a part of the Migrateful community and I hope you enjoy my Eritrean dishes in this class”. \n \n\n\n\nON THE MENU (subject to change): \n\nSalata Bazinjan (Aubergine Salad) | Vegan; Gluten (Wheat)\, Peanuts\, Sesame\nZegny (Spicy Chicken Stew) | Meat (Chicken); Celery\, Eggs\, Milk\nShiro | Vegetarian; Milk\nSambusa | Meat (Lamb) and Vegetarian; Gluten (Wheat)\, Milk\nFul Medames | Vegetarian; Gluten (Wheat)\, Milk\, Peanuts\, Sesame\nSalata Hamra (Rainbow Salad) | Vegan; None\nPeanut and Chilli Sauce | Vegan; Peanuts\n\nThis menu is served with Injera which may contain gluten. \nThis menu contains meat (chicken and lamb) but is vegetarian-friendly (6/7 dishes are meat-free or have meat-free filling options). DESCRIPTION:In this session Amel will teach delicious\, authentic Algerian dishes followed by a sit-down\, family-style meal.\n\n\nABOUT THE CUISINE \nAlgerian cuisine is a beautiful blend of North African\, Mediterranean\, and French influences — rich in spices\, seasonal vegetables\, slow-cooked stews\, and warm breads. From fragrant soups like Chorba Frik to comforting tagines and delicate pastries\, Algerian food is deeply social\, made to be shared\, and full of heritage. With flavours shaped by centuries of cultural exchange\, every dish tells a story of community\, generosity\, and home. \n \nABOUT THE CHEF \nA message from our Chef Amel: \nHi my name is Amel\, I am from Sidi Bel Abbes in Western Algeria. Our city is nicknamed ‘Petit Paris’ because there is a strong French influence. I wasn’t allowed to cook growing up because my parents wanted me to focus on my studies. I was a teacher in Algeria but wasn’t able to continue teaching when I moved to the UK in 2015. After I met my wonderful husband\, we quickly had children and I began to spend more time at home. During this time\, I realised my passion for cooking and baking. I cooked so much for my friends and family that they told me to stop as they feared they were getting fat. In the future\, I want to open my own bakery where I can share Algerian food and culture with people in London. Algeria is extremely multicultural and culturally rich\, which is something I am very proud of. I have always been a daydreamer and I really value the freedom to pursue my dreams here in the UK”. \n \n\n\n\nON THE MENU (subject to change): \n\nTagine Zitoun (Olive Tagine with Chicken and Meatballs) | Meat (Chicken and Lamb); Egg\, Gluten (Wheat)\nChorba Frik (Vegetable Soup with Freekah and Carraway) | Vegetarian; Celery\, Gluten (Wheat)\nBourek (Tuna Pastry Parcels with Cheese) | Fish (Tuna); Eggs\, Fish\, Gluten (Wheat)\, Milk\nRekhsas (Algerian Semolina and Nigella Seed Flatbread) | Vegetarian; Celery\, Milk\nSamsa b-louz (Fried Almond\, Sesame and Honey Pastries) | Vegetarian; Gluten (Wheat)\, Milk\, Sesame\, Tree Nuts (Almonds)\n\nThis menu contains meat (chicken and lamb) and fish (tuna).
