Cooking is hands-on\, social\, and meant to be shared\, with signature dishes like Jollof Rice\, Spinach Stew\, and Rice Arkara highlighting the warmth\, community\, and culinary creativity of Sierra Leonean food culture. \n \nABOUT THE CHEF \nA message from our Chef Isatu: \n“I am Isatu from Sierra Leone. Sierra Leone is a small country in West Africa bordered by Guinea\, Liberia and the Atlantic Ocean. I am a Fulani\, and my tribal identity is as important as my national identity. Sierra Leone is a culturally diverse country\, rich in a number of minerals including diamonds and gold. \nCooking has always been my passion. As a very young child\, I was already pretending to be a chef and made my siblings play along with this game. I started cooking for real when I was 12 years old at my mother’s side. She started by giving me simple tasks to do and gradually taught me how to prepare dishes properly. I am grateful that she shared her secret tips with me. \nI believe it is important to continuously develop oneself and in the importance of community. Putting these principles into practice\, I became a volunteer chef with the Red Cross and with Connect All Community\, cooking for over 60 people every week. \nI bring humour and joy to everything I do\, including my cookery classes. SUMMARY:Algerian Cookery Class with Amel | LONDON | Pop up
DESCRIPTION:In this session Amel will teach delicious\, authentic Algerian dishes followed by a sit-down\, family-style meal.\n\n\nABOUT THE CUISINE \nAlgerian cuisine is a beautiful blend of North African\, Mediterranean\, and French influences — rich in spices\, seasonal vegetables\, slow-cooked stews\, and warm breads. From fragrant soups like Chorba Frik to comforting tagines and delicate pastries\, Algerian food is deeply social\, made to be shared\, and full of heritage. With flavours shaped by centuries of cultural exchange\, every dish tells a story of community\, generosity\, and home. \n \nABOUT THE CHEF \nA message from our Chef Amel: \nHi my name is Amel\, I am from Sidi Bel Abbes in Western Algeria. Our city is nicknamed ‘Petit Paris’ because there is a strong French influence. I wasn’t allowed to cook growing up because my parents wanted me to focus on my studies. I was a teacher in Algeria but wasn’t able to continue teaching when I moved to the UK in 2015. After I met my wonderful husband\, we quickly had children and I began to spend more time at home. During this time\, I realised my passion for cooking and baking. I cooked so much for my friends and family that they told me to stop as they feared they were getting fat. In the future\, I want to open my own bakery where I can share Algerian food and culture with people in London. Algeria is extremely multicultural and culturally rich\, which is something I am very proud of. I have always been a daydreamer and I really value the freedom to pursue my dreams here in the UK”. \n \n\n\n\nON THE MENU (subject to change): \n\nTagine Zitoun (Olive Tagine with Chicken and Meatballs) | Meat (Chicken and Lamb); Egg\, Gluten (Wheat)\nChorba Frik (Vegetable Soup with Freekah and Carraway) | Vegetarian; Celery\, Gluten (Wheat)\nBourek (Tuna Pastry Parcels with Cheese) | Fish (Tuna); Eggs\, Fish\, Gluten (Wheat)\, Milk\nRekhsas (Algerian Semolina and Nigella Seed Flatbread) | Vegetarian; Celery\, Milk\nSamsa b-louz (Fried Almond\, Sesame and Honey Pastries) | Vegetarian; Gluten (Wheat)\, Milk\, Sesame\, Tree Nuts (Almonds)\n\nThis menu contains meat (chicken and lamb) and fish (tuna). SUMMARY:Egyptian Cookery Class with Amro| Veg Friendly | LONDON | Cookery School
DESCRIPTION:Chef Amro will teach you some of his favourite Eygptian dishes followed by a sit down meal.\n\n\nABOUT THE CUISINE \nEgyptian cuisine comes from the northeast corner of Africa\, along the Nile River\, and is one of the oldest and richest culinary traditions in the world. From the hearty street food of Cairo to regional specialties along the Nile Delta\, dishes combine legumes\, grains\, fresh vegetables\, herbs\, and spices. Meals are hands-on\, social\, and meant to be shared\, with signature dishes like Koshary and Fatteh highlighting both comfort and community in Egyptian food culture. \nABOUT THE CHEF \nA message from chef Amro: \n“Hello\, my name is Amro and I am from Egypt – from the North. My city\, Damitta\, is famous for furniture\, sweets and cheese. I am from a large family and I am the only boy with three sisters. \nAfter I graduated from university as a computer engineer\, I went to work in Kuwait. I worked there for 17 years in the Ministry of Education and the University of Kuwait before I moved to the UK in 2023 with my wife and my two children (I now have three)! \nWhen I was at home in Egypt\, it was always my mother who did the cooking. Although I didn’t cook then\, I learnt a lot from watching her. But when I was living alone in Kuwait\, especially for the first 3 years before I married\, I had to learn how to cook for myself! \nAs I spent half of my life in Egypt and the other half in Kuwait\, I have influences from both countries in my cooking. For example\, from my home country\, a famous dish that everyone there loves is Koshary – a delicious vegetarian dish. And from Kuwai\, I enjoy cooking Majboos\, a lamb dish with raisins and nuts\, which is often served for big celebrations. \nI look forward to cooking these dishes with you”. \nON THE MENU (subject to change): \n\nEgyptian Koshary (Rice with Vermicelli\, Lentils\, Chickpeas and Spicy Tomato Sauce) | Vegan; Gluten (Wheat & Barley)\, Sulphites\nEgyptian Hawaashi (Flatbread filled with Spiced Lamb or Mushrooms) | Meat (Lamb) and Vegetarian; Gluten (Wheat)\, Milk\, Sulphites\nAubergine Fatteh (Fried Aubergine with Tahini Yoghurt\, Fried Bread and Pomegranate) | Vegetarian; Gluten (Wheat)\, Milk\, Peanuts\, Sesame\, Tree Nuts (Pine Nuts)\nSalata Khadra (Egyptian Salad) | Vegetarian; Milk\, Sulphites\nQataif (Pancakes filled with Sweet Ricotta and Pistachios) | Vegetarian; Gluten (Wheat)\, Milk\, Sesame\, Soya\, Tree Nuts (Pistachio & Walnuts)\n\nThis menu is mostly vegetarian but contains one dish with meat (lamb)\, with vegetarian filling options. Allergens include: gluten\, milk\, peanuts\, sesame\, soya\, sulphites\, tree nuts. \nPlease let us know if you have any specific dietary requirements so our team is aware ahead of the class. Kindly note that we will not be substituting any ingredients to accommodate dietary needs\, so please only book into classes that suit your dietary requirements. \nJoin Amro’s hands-on\, social cookery class in London to learn to make authentic Egyptian dishes — and celebrate the flavours\, skills\, and culinary traditions refugees bring to the UK. \nTHE CLASS FORMAT \nOur cookery classes are family-style – meaning everyone works together to prepare the dishes as a team. \nWhile you’ll be asked to choose one dish to focus on\, you’ll have the opportunity to move around the kitchen\, help with other dishes\, and learn from each recipe. It’s a fun\, social\, and collaborative way to cook! At the end of the class\, you’ll sit down with the chef\, class facilitator and volunteers to enjoy the delicious meal you’ve created together. \nREMINDERS \nWe’re excited to have you in the class! I am from the lovely island nation of Trinidad and Tobago in the Caribbean and I am the mother of two daughters. My cooking journey started over 25 years ago when I was just 10. My mother had to go to work\, leaving me to cook for my two younger siblings. At first\, I made some pretty awful dishes but with my mother’s help and encouragement\, I got better. At her suggestion\, I started cooking school and soon I was creating new dishes on my own. I then trained at the Trinidad and Tobago International Hilton Hotel and worked as a sous chef at the Carlton Savannah Hotel when Queen E stayed there in 2009. When the hotel closed\, I first started cooking for homeless people and then for children with additional needs. I became a mother figure for many of the kids and some of the older people. I have been volunteering for Praxis charity for the last year\, a charity that helps support people on their immigration journey. \nIn addition to cooking\, I am passionate about music\, dancing and laughing!
