I have always loved to cook\, and\, of course\, to eat. My mother was my first teacher\, but I also learnt from my grandmother and my aunts as we all lived in a multi-generational home; always cooking\, eating and celebrating together. I love to cook with lots of fresh herbs\, and these make Iranian dishes so special. I make delicious food for myself\, my family and friends – and my friends are always inviting me to cook for them. \nI am a very creative person\, so I love to make my dishes look beautiful. Presentation in Iranian cooking is very important and I will teach you to use ingredients to make the dishes look appealing and for your guests to look forward to. My dad was from Oman\, and I think this has helped me create my own type of cuisine – a mix of Egyptian and Omani food. \nMy dad also loved to cook\, so I had two very good teachers. I improved my cooking skills through observing and working with chefs in my restaurant business. Now I’m in the UK\, I’m starting a new chapter and bringing with me the flavours of Oman. I hope to open my own restaurant business in London one day. Meals are hands-on\, social\, and meant to be shared\, with signature dishes like Kashk Bademjan\, Fesenjan Stew\, and Dolma.  \n \nKnown for its delicate balance of sweet\, sour\, and savoury flavours\, it combines fragrant herbs\, spices\, fruit\, nuts\, and grains to create dishes that are both comforting and elegant.  \n \nABOUT THE CHEF \n“My name is Saeid and I was born in Mashhad\, in the far North-East of Iran. It is one of the largest and most beautiful cities; it sits among mountains and is very green.  \nSince childhood\, I have always loved food and cooking\, especially traditional Persian dishes. I learned Persian cooking techniques from my mother\, but also particularly from my grandfather. He was a chef who loved to cook with the food he had grown. He had a large field of crocuses – which are the source of saffron\, a very important ingredient in Iranian cooking.  \nCooking was always a passion of mine\, alongside my main profession; I trained and worked as a lawyer in Iran. I also worked as a head chef in Iran. For me\, cooking is not only about making food\, it’s about sharing happiness\, my culture and my memories\, and bringing people together.  Through a friend in my English class\, I was very lucky to hear about Migrateful – it is giving me the chance to share my culture and the amazing Persian food from my childhood. I am also improving my English and confidence and my communication with people. I am the youngest of five. I have three brothers and one sister. I was born and grew up on the east coast by the sea in a place called Batticaloa. I learnt to cook from my mother when I was young. My favourite dishes were Okra and Fish Curry\, made with fresh coconut. I love playing cricket and on Sundays\, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef. It is one of the largest and most beautiful cities; it sits among mountains and is very green.  \nSince childhood\, I have always loved food and cooking\, especially traditional Persian dishes. I learned Persian cooking techniques from my mother\, but also particularly from my grandfather. He was a chef who loved to cook with the food he had grown. He had a large field of crocuses – which are the source of saffron\, a very important ingredient in Iranian cooking.  \nCooking was always a passion of mine\, alongside my main profession; I trained and worked as a lawyer in Iran. I also worked as a head chef in Iran. Growing up\, the highlight of every weekend was ‘Yum Cha’ (drinking Chinese tea with family); the whole family gathering around a round table\, aunties arguing over the last dim sum\, grandparents guiding the younger on how to pour tea properly and cousins sneaking extra eggs tarts before the meals was done. Those loud\, joyful mornings in a Cantonese tea house are some of my most treasured memories and they are the reason I cook the way I do. To me\, Yum Cha isn’t just a meal – it’s a ritual of gathering\, of generosity\, of saying ‘I love you’ through food.  \n \nIn my class\, I want to bring that experience to you. I am the youngest of five. I have three brothers and one sister. I was born and grew up on the east coast by the sea in a place called Batticaloa. I learnt to cook from my mother when I was young. My favourite dishes were Okra and Fish Curry\, made with fresh coconut. I love playing cricket and on Sundays\, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef.
