SUMMARY:Indian Cookery Class with Jiwan | Veg Friendly| LONDON | Cookery School
DESCRIPTION:Chef Jiwan will teach you some of his favourite Indian dishes followed by a sit down meal.\n\n\nABOUT THE CUISINE \nIndian cuisine is extremely diverse\, shaped by centuries of regional traditions\, religion and trade. From the spice-rich curries of the north to the coconut-infused dishes of the south\, India’s food reflects a deep connection to heritage\, family\, and fresh ingredients. Jiwan’s dishes highlight the warmth and colour of Indian home cooking\, showcasing balanced spices\, comforting recipes\, and the joyful spirit of sharing food with others. \n \nABOUT THE CHEF \n“I am Jiwan\, which means life. I have lived most of my life in Punjab\, India. It is a farmland state in the north of India and the name comes from five rivers which flowed through the region at one time.  \n \nMy journey is a bit unusual as it started from need\, rather than passion. I grew up in a big family and I learned by watching and trying. When my family was away\, I made my first dish\, similar to tacos\, which was well liked by my family after their return.  \n \nI believe cooking is a very important skill\, not a talent. Everyone can develop it\, given some time and effort! Finding a reason helps a lot and mine is making others happy and smile with my food. There are so many dishes from across India that make me happy – that is why my class focuses on a wider area of India than Punjab. \n \nThe time I have spent with Migrateful has been wonderful and fun. I have learnt so much about food and the world during my training! I hope this class teaches you something new which you can take home and spread that happiness.” \n \n\n\n\n \nON THE MENU (subject to change): \n \n\nDosa (Savoury Indian Crepe) | Vegetarian; Gluten (Wheat)\, Milk\nSamber (Braised Lentil and Drumstick Stew) | Vegetarian; Gluten (Wheat)\, Mustard\, Peanuts                                                                                                     \nGoan Fish Curry | Fish (Cod); Fish\nAmritsari Chole (Chickpea Curry) | Vegetarian; Milk\, Mustard  \nEgg Curry | Vegetarian; Eggs                                                                                                                                                                                                                                                                                       \nTikki Chat (Potato Patties with Chutneys and Yoghurt) | Vegetarian; Milk\, Mustard\, Sulphites                                                                                                                                                                                                                                                                                                                                          \nJeera Rice (Cumin Spiced Rice) | Vegan; None           \n\nThis menu contains fish (cod) but is vegetarian-friendly (6/7 dishes are meat-free). SUMMARY:Eritrean Cookery Class with Wedad | LONDON | Cookery School
DESCRIPTION:Chef Wedad will teach you some of her favourite Eritrean dishes followed by a sit down meal.\n\n\nABOUT THE CUISINE \nEritrean cuisine comes from East Africa\, along the Red Sea and the highlands of the Horn of Africa. Eritrea’s food reflects a blend of indigenous traditions\, Ottoman\, Italian\, and Middle Eastern influences due to historical interactions. It combines bold spices\, legumes\, vegetables\, grains\, and fresh herbs to create vibrant\, flavourful dishes. Meals are hands-on\, social\, and meant to be shared\, with signature dishes like Shiro\, Zegny\, and Salata Bazinjan served communally on one plate\, highlighting the warmth\, creativity\, and togetherness of Eritrean food culture. \n \nABOUT THE CHEF  \nA message from our Chef Wedad: \n“Hi\, my name is Wedad and I come from a town called Keran in south-west Eritrea. Eritrea is a beautiful country in East Africa and is surrounded by mountains and the Red Sea. I grew up with my grandmother\, who loved to cook and taught me all her recipes. My friends and I liked to cook our dishes for each other and so I also learnt how to cook other cuisines. My favourite dish is Salata Banzinjan\, an aubergine salad\, which I make in lots of different ways. Eritrean food is typically spicy and is served on one plate to be shared with the whole family. One of the things that we eat often is a fermented bread called injera\, which we have at lunchtime. Today\, we will be serving injera with Shiro and Salata Banzinjan. I came to the UK in 2012 and the biggest barrier I faced was the language. Now I study English at the Red Cross and one day we were writing about our favourite food. A few weeks later\, I brought in the dish that I wrote about – kebab – and my teacher and colleagues liked it so much\, she suggested I apply to join Migrateful! I am now a part of the Migrateful community and I hope you enjoy my Eritrean dishes in this class”. \n \n\n\n\nON THE MENU (subject to change): \n\nSalata Bazinjan (Aubergine Salad) | Vegan; Gluten (Wheat)\, Peanuts\, Sesame\nZegny (Spicy Chicken Stew) | Meat (Chicken); Celery\, Eggs\, Milk\nShiro | Vegetarian; Milk\nSambusa | Meat (Lamb) and Vegetarian; Gluten (Wheat)\, Milk\nFul Medames | Vegetarian; Gluten (Wheat)\, Milk\, Peanuts\, Sesame\nSalata Hamra (Rainbow Salad) | Vegan; None\nPeanut and Chilli Sauce | Vegan; Peanuts\n\nThis menu is served with Injera which may contain gluten. \nThis menu contains meat (chicken and lamb) but is vegetarian-friendly (6/7 dishes are meat-free or have meat-free filling options). My city\, Damitta\, is famous for furniture\, sweets and cheese. But when I was living alone in Kuwait\, especially for the first 3 years before I married\, I had to learn how to cook for myself! \nAs I spent half of my life in Egypt and the other half in Kuwait\, I have influences from both countries in my cooking. For example\, from my home country\, a famous dish that everyone there loves is Koshary – a delicious vegetarian dish. And from Kuwai\, I enjoy cooking Majboos\, a lamb dish with raisins and nuts\, which is often served for big celebrations. \nI look forward to cooking these dishes with you”. \nON THE MENU (subject to change): \n\nEgyptian Koshary (Rice with Vermicelli\, Lentils\, Chickpeas and Spicy Tomato Sauce) | Vegan; Gluten (Wheat & Barley)\, Sulphites\nEgyptian Hawaashi (Flatbread filled with Spiced Lamb or Mushrooms) | Meat (Lamb) and Vegetarian; Gluten (Wheat)\, Milk\, Sulphites\nAubergine Fatteh (Fried Aubergine with Tahini Yoghurt\, Fried Bread and Pomegranate) | Vegetarian; Gluten (Wheat)\, Milk\, Peanuts\, Sesame\, Tree Nuts (Pine Nuts)\nSalata Khadra (Egyptian Salad) | Vegetarian; Milk\, Sulphites\nQataif (Pancakes filled with Sweet Ricotta and Pistachios) | Vegetarian; Gluten (Wheat)\, Milk\, Sesame\, Soya\, Tree Nuts (Pistachio & Walnuts)\n\nThis menu is mostly vegetarian but contains one dish with meat (lamb)\, with vegetarian filling options. I am from the lovely island nation of Trinidad and Tobago in the Caribbean and I am the mother of two daughters. My cooking journey started over 25 years ago when I was just 10. My mother had to go to work\, leaving me to cook for my two younger siblings. At first\, I made some pretty awful dishes but with my mother’s help and encouragement\, I got better. At her suggestion\, I started cooking school and soon I was creating new dishes on my own. I then trained at the Trinidad and Tobago International Hilton Hotel and worked as a sous chef at the Carlton Savannah Hotel when Queen E stayed there in 2009. When the hotel closed\, I first started cooking for homeless people and then for children with additional needs. I became a mother figure for many of the kids and some of the older people. I have been volunteering for Praxis charity for the last year\, a charity that helps support people on their immigration journey. \nIn addition to cooking\, I am passionate about music\, dancing and laughing! I moved here from Jeddah\, Saudi Arabia in 2013. I have lived the majority of my life there. Culturally I am Uyghur\, an ethnic Muslim minority located in Central Asia (now part of China called Xinjiang). The dishes I teach in my class are a mix of the two cultures I come from. I learned to cook from my Mum. She used to call my sisters and me to assist her with cooking. I was her main helper\, especially when it came to pulling noodles. \nWhen I was in high school and had our summer holiday\, my mum trusted me enough to cook for the family and I insisted she write me the recipes with every little detail. I got paid for it! My mum taught me to cook several cuisines from around the world but my favourites were Saudi & Uyghur.
