Combining fragrant spices with fresh herbs and seasonal ingredients\, Bangladeshi cooking is known for its balance of flavour and the warmth of sharing meals with family\, friends\, and guests.  \n \nABOUT THE CHEF \nMy name is Saydul\, I’m from Habiganj in Bangladesh. It’s a district town and I grew up there near a river. I have travelled a lot in Bangladesh\, it’s a beautiful country with many landscapes from the Sundarbans forest to Saint Martins Island to the hill stations of Khagrachari and Cox’s Bazaar with a long sand beach.  \n \nI went to university in Sylhet and there I started cooking by myself because I missed home cooking. I kept cooking for my friends and neighbours. The first time I cooked biriyani\, I called my mum! When I was growing up\, having guests over was very normal. A minimum of 2 or 3 people\, sharing tea and snacks\, and sending food for people.  \n \nIn the morning\, we would buy fresh groceries\, especially fresh-water fish. Fish is a common staple in Bengali cuisine\, you’ll find it at every table. As well as this\, a few different curries – lentils\, meat and rice. It is one of the largest and most beautiful cities; it sits among mountains and is very green.  \nSince childhood\, I have always loved food and cooking\, especially traditional Persian dishes. I learned Persian cooking techniques from my mother\, but also particularly from my grandfather. He was a chef who loved to cook with the food he had grown. He had a large field of crocuses – which are the source of saffron\, a very important ingredient in Iranian cooking.  \nCooking was always a passion of mine\, alongside my main profession; I trained and worked as a lawyer in Iran. I also worked as a head chef in Iran. For me\, cooking is not only about making food\, it’s about sharing happiness\, my culture and my memories\, and bringing people together.  Through a friend in my English class\, I was very lucky to hear about Migrateful – it is giving me the chance to share my culture and the amazing Persian food from my childhood. I am also improving my English and confidence and my communication with people. Our city is nicknamed ‘Petit Paris’ because there is a strong French influence. I wasn’t allowed to cook growing up because my parents wanted me to focus on my studies. I was a teacher in Algeria but wasn’t able to continue teaching when I moved to the UK in 2015. After I met my wonderful husband\, we quickly had children and I began to spend more time at home. During this time\, I realised my passion for cooking and baking. I cooked so much for my friends and family that they told me to stop as they feared they were getting fat. In the future\, I want to open my own bakery where I can share Algerian food and culture with people in London. Algeria is extremely multicultural and culturally rich\, which is something I am very proud of. It is a long\, narrow country\, surrounded almost completely by Senegal\, except for its Atlantic Ocean coastline. \nI belong to the Mandinke tribe\, the largest tribe in The Gambia; even the president of The Gambia comes from my tribe! While ingredients and dishes vary across Nigeria’s regions\, every meal is rooted in hospitality\, and the joy of bringing people together around the table.  \n \nABOUT THE CHEF \nMy name is Uchenna\, and I come from Nnewi in Anambra State\, in the eastern part of Nigeria. Nigeria is home to three major ethnic groups Igbo\, Yoruba\, and Hausa and more than 200 languages. I am proud to be from the Igbo tribe\, a people known for their rich culture\, resilience\, and love of food. \nGrowing up\, I never imagined that cooking would become such an important part of my life. My mother owned the largest and most popular restaurant in our town and was passionate about cooking\, while I preferred other household chores. \n Everything changed when I went to university and had to learn how to feed myself. I often called my mother and younger sister for recipes and guidance. What began as a necessity soon became a hobby and a source of joy. \nMy journey with Migrateful has reignited my confidence and passion. After attending a Migrateful Open Day\, I felt inspired and\, just three days later\, volunteered to cook at St James’s Church on International Women’s Day.
