SUMMARY:Nigerian Cookery Class with Bolu | Veg Friendly | LONDON| Cookery School
DESCRIPTION:Chef Bolu will teach delicious\, authentic Nigerian dishes followed by a sit-down meal.\n\n\n \nABOUT THE CUISINE \nNigerian cuisine reflects the country’s incredible cultural diversity\, with hundreds of ethnic groups each contributing their own cooking traditions\, flavours\, and techniques. Food is central to family life\, celebrations\, and community\, with recipes often passed down through generations and shared with pride. While ingredients and dishes vary across Nigeria’s regions\, every meal is rooted in hospitality\, and the joy of bringing people together around the table.  \n \nABOUT THE CHEF \n“I’m Bolu and I’m from south-west Nigeria. I’m from a tribe called Yoruba. In Nigeria\, Yoruba are one of the three largest tribes in Nigeria. The other two are Igbo and Hausa\, but Nigeria has 250 ethnic groups/tribes with many different languages and culinary traditions. \n \nMy love for cooking started in my mum and aunt’s kitchen\, where I learned that food is about care\, culture and bringing people together. Their passion became my passion too. I enjoy blending traditional Nigerian flavours with my own touches to create dishes that feel familiar yet new.  My mum and aunt are so impressed and I hope I impress you too!  \n \nIn Nigeria\, we cook with a lot of varieties of protein\, using beef\, chicken\, goat\, eggs\, nuts and beans. The climate in Nigeria helps the farmers to grow many leafy vegetables\, yam\, sweet potatoes\, plantain and cocoa. I can’t wait to share all of these wonderful ingredients with you in my class.  \n \nWhen I’m not in the kitchen\, you’ll find me on the football pitch or in my dance class. I also love listening to music while cooking; it gives me inspiration and motivation. All that keeps me disciplined\, focused and balanced. My goal is to honour my roots and inspire others through every plate I create and serve.” \n \n\n\n\nON THE MENU (subject to change): \n\nJollof Rice and Plantain | Vegetarian; Milk\nChicken Obe Ata (Nigerian Red Pepper Chicken Stew) | Meat (Chicken); Milk\nAubergine Obe Ata (Nigerian Red Pepper Aubergine Stew) | Vegetarian; Milk\nEfo Riro (Yoruban Spinach Stew) | Vegetarian; Milk\nPounded Yam | Vegan; None\nBolu’s Coleslaw | Vegetarian; Eggs\nPuff-puff (Nigerian Fried Dough) | Vegan; Gluten (Wheat)\n\nThis menu contains meat (chicken) but is vegetarian-friendly (6/7 dishes are meat-free). My mother had to go to work\, leaving me to cook for my two younger siblings. At first\, I made some pretty awful dishes but with my mother’s help and encouragement\, I got better. At her suggestion\, I started cooking school and soon I was creating new dishes on my own. I then trained at the Trinidad and Tobago International Hilton Hotel and worked as a sous chef at the Carlton Savannah Hotel when Queen E stayed there in 2009. When the hotel closed\, I first started cooking for homeless people and then for children with additional needs. I became a mother figure for many of the kids and some of the older people. I also worked as a head chef in Iran. For me\, cooking is not only about making food\, it’s about sharing happiness\, my culture and my memories\, and bringing people together.  Through a friend in my English class\, I was very lucky to hear about Migrateful – it is giving me the chance to share my culture and the amazing Persian food from my childhood. SUMMARY:Ecuadorian Cookery Class with Judith|Veg Friendly |LONDON| Pop up
DESCRIPTION:Chef Judith will teach you some of her favourite Ecuadorian dishes followed by a sit down meal.\n\n\nABOUT THE CUISINE \nEcuadorian cuisine comes from South America and reflects the country’s diverse geography\, from the Pacific coast to the Andes mountains and the Amazon rainforest. It combines fresh seafood\, tropical fruits\, vegetables\, grains\, and spices to create vibrant\, flavourful dishes. Meals are hands-on\, social\, and made to be shared\, with signature dishes like Ceviche\, Tigrillo\, and Empanadas highlighting the warmth\, creativity\, and communal spirit of Ecuadorian food culture. \n \nABOUT THE CHEF \nA message from our Chef Judith: \n“My name is Judith\, and I am from Ecuador\, a beautiful country in South America. I grew up in Santo Domingo de los Tsachilas\, an area located between the coast and the mountains\, so we had the best produce. I grew up in a big family where food and music were always part of our joy – we loved getting together\, sharing meals\, and dancing. In Ecuador\, you can find four seasons in one day by travelling from one part of the country to another\, and that means that you can experience many different types of food in the country. When I came to England\, I started to do some voluntary work in a ‘healthy living’ community group\, and I used to run a session on healthy eating – this is reflected in my menu today. Teaching others about Ecuadorian food helps me feel close to my country and reminds me that even far from home\, we can still celebrate who we are and connect with others through culture and food. Each dish I create carries the soul of my homeland that is inspired by the unique beauty of the Amazon\, where the jungle speaks and nature is sacred. My hands work with love\, honouring my roots and sharing a little piece of living nature with the world.” \n \n\n\n\n \nON THE MENU (subject to change): \n\nTwo Ceviche | Fish (Prawns) and Vegan; Celery\, Crustaceans\, Mustard\nTigrillo (Plantain Hash) | Vegetarian; Eggs\, Milk\, Peanuts\nEstofado de Carne y Chocolate (Beef Stew with Chocolate) | Meat (Beef); Celery\nEstofado de Vegetales (Golden Vegetable Stew) | Vegan; Celery\nEmpanadas de Viento (Cheese-Filled Pastries) | Vegetarian; Eggs\, Gluten (Wheat)\, Milk\nColada Morada (Warm Fruit Punch) | Vegan; None\n\nThis menu contains meat (beef) and fish (prawns) but is vegetarian-friendly (5/6 dishes are meat-free). I worked there for 17 years in the Ministry of Education and the University of Kuwait before I moved to the UK in 2023 with my wife and my two children (I now have three)! \nWhen I was at home in Egypt\, it was always my mother who did the cooking. Although I didn’t cook then\, I learnt a lot from watching her. But when I was living alone in Kuwait\, especially for the first 3 years before I married\, I had to learn how to cook for myself! \nAs I spent half of my life in Egypt and the other half in Kuwait\, I have influences from both countries in my cooking. For example\, from my home country\, a famous dish that everyone there loves is Koshary – a delicious vegetarian dish. And from Kuwai\, I enjoy cooking Majboos\, a lamb dish with raisins and nuts\, which is often served for big celebrations. \nI look forward to cooking these dishes with you”. \nON THE MENU (subject to change): \n\nEgyptian Koshary (Rice with Vermicelli\, Lentils\, Chickpeas and Spicy Tomato Sauce) | Vegan; Gluten (Wheat & Barley)\, Sulphites\nEgyptian Hawaashi (Flatbread filled with Spiced Lamb or Mushrooms) | Meat (Lamb) and Vegetarian; Gluten (Wheat)\, Milk\, Sulphites\nAubergine Fatteh (Fried Aubergine with Tahini Yoghurt\, Fried Bread and Pomegranate) | Vegetarian; Gluten (Wheat)\, Milk\, Peanuts\, Sesame\, Tree Nuts (Pine Nuts)\nSalata Khadra (Egyptian Salad) | Vegetarian; Milk\, Sulphites\nQataif (Pancakes filled with Sweet Ricotta and Pistachios) | Vegetarian; Gluten (Wheat)\, Milk\, Sesame\, Soya\, Tree Nuts (Pistachio & Walnuts)\n\nThis menu is mostly vegetarian but contains one dish with meat (lamb)\, with vegetarian filling options. Allergens include: gluten\, milk\, peanuts\, sesame\, soya\, sulphites\, tree nuts. \nPlease let us know if you have any specific dietary requirements so our team is aware ahead of the class. Kindly note that we will not be substituting any ingredients to accommodate dietary needs\, so please only book into classes that suit your dietary requirements. \nJoin Amro’s hands-on\, social cookery class in London to learn to make authentic Egyptian dishes — and celebrate the flavours\, skills\, and culinary traditions refugees bring to the UK. \nTHE CLASS FORMAT \nOur cookery classes are family-style – meaning everyone works together to prepare the dishes as a team. \nWhile you’ll be asked to choose one dish to focus on\, you’ll have the opportunity to move around the kitchen\, help with other dishes\, and learn from each recipe. It’s a fun\, social\, and collaborative way to cook! At the end of the class\, you’ll sit down with the chef\, class facilitator and volunteers to enjoy the delicious meal you’ve created together. \nREMINDERS \nWe’re excited to have you in the class! I have been volunteering for Praxis charity for the last year\, a charity that helps support people on their immigration journey. \nIn addition to cooking\, I am passionate about music\, dancing and laughing! SUMMARY:Iranian Cookery Class with Rose | Veg Friendly | Bristol
DESCRIPTION:Chef Rose will teach delicious\, authentic Iranian dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \nIranian cuisine is renowned for its aromatic herbs\, delicate spices\, and beautiful balance of sweet and sour flavours. From rich stews like Fesenjan to vibrant yoghurt dishes and saffron-scented rice. Iranian food is deeply social\, with meals shared in warm\, communal gatherings\, a celebration of hospitality\, and connection. \n \nABOUT THE CHEF \nA message from Chef Rose: \n“My name is Rose\, and I moved to the UK two years ago. One of the things I have loved about coming here is meeting people from all over the world\, I believe food is a wonderful way to learn about eachother and discover new cultures\, traditions\, and stories. \nBefore moving to the UK\, I studied midwifery and later trained in surgery. I worked in a surgical department for 17 years. Although my career was in healthcare\, food has always played an important role in my life. \nMy mother was an excellent cook and was well known among family and friends for her delicious meals and desserts. She wanted me to focus on my education\, so she never really taught me how to cook. However\, growing up with her wonderful food taught me what good food should taste like and gave me a real appreciation for cooking. \nI only started cooking after I got married. In Iranian culture\, preparing food for the family is often an important part of home life. To my surprise\, I learned very quickly\, and before long people were complimenting my food and asking for my recipes. I believe I owe this to my mother. Nothing makes me happier than seeing people enjoy a meal that I have prepared. \nThrough my cooking\, I hope to share not only the flavours of Iran but also the warmth\, hospitality\, and traditions that are such an important part of Iranian culture.” \n \n \n\n\n\n \nON THE MENU (subject to change) \n\nMirza Ghasemi (Aubergine Dip) | Vegetarian; Egg\nAdas Polo (Sweet and Fragrant Lentil Rice) | Vegetarian; Milk\nAsh Reshteh (Noodle Soup) | Vegetarian; Milk\, Gluten (Wheat)\nBorani Esfenaj (Spinach Dip) | Vegetarian; Milk\, Tree Nuts (Walnuts)\nSambusa (Spiced Potato Filo Parcels) | Vegan; Gluten (Wheat)\nTas Kebab (Tangy Chicken with Quince and Plums) | Meat (Chicken); None\n\nThis menu contains meat (chicken) but is vegetarian-friendly\, with 5 of 6 dishes meat-free. At University\, I became more interested in food and started asking for recipes from my relatives. I also learnt to prepare sweets for Eid. I love to cook Algerian food that I’ve enjoyed eating and have an inbuilt instinct to replicate the flavours and smells of my childhood. \nIn Algeria\, I graduated from University in Computing management and Accounting. DESCRIPTION:In this session Amel will teach delicious\, authentic Algerian dishes followed by a sit-down\, family-style meal.\n\n\nABOUT THE CUISINE \nAlgerian cuisine is a beautiful blend of North African\, Mediterranean\, and French influences — rich in spices\, seasonal vegetables\, slow-cooked stews\, and warm breads. From fragrant soups like Chorba Frik to comforting tagines and delicate pastries\, Algerian food is deeply social\, made to be shared\, and full of heritage. With flavours shaped by centuries of cultural exchange\, every dish tells a story of community\, generosity\, and home. \n \nABOUT THE CHEF \nA message from our Chef Amel: \nHi my name is Amel\, I am from Sidi Bel Abbes in Western Algeria. Our city is nicknamed ‘Petit Paris’ because there is a strong French influence. I wasn’t allowed to cook growing up because my parents wanted me to focus on my studies. I was a teacher in Algeria but wasn’t able to continue teaching when I moved to the UK in 2015. After I met my wonderful husband\, we quickly had children and I began to spend more time at home. During this time\, I realised my passion for cooking and baking. I cooked so much for my friends and family that they told me to stop as they feared they were getting fat. In the future\, I want to open my own bakery where I can share Algerian food and culture with people in London. Algeria is extremely multicultural and culturally rich\, which is something I am very proud of. I have always been a daydreamer and I really value the freedom to pursue my dreams here in the UK”. \n \n\n\n\nON THE MENU (subject to change): \n\nTagine Zitoun (Olive Tagine with Chicken and Meatballs) | Meat (Chicken and Lamb); Egg\, Gluten (Wheat)\nChorba Frik (Vegetable Soup with Freekah and Carraway) | Vegetarian; Celery\, Gluten (Wheat)\nBourek (Tuna Pastry Parcels with Cheese) | Fish (Tuna); Eggs\, Fish\, Gluten (Wheat)\, Milk\nRekhsas (Algerian Semolina and Nigella Seed Flatbread) | Vegetarian; Celery\, Milk\nSamsa b-louz (Fried Almond\, Sesame and Honey Pastries) | Vegetarian; Gluten (Wheat)\, Milk\, Sesame\, Tree Nuts (Almonds)\n\nThis menu contains meat (chicken and lamb) and fish (tuna).
