DESCRIPTION:Chef Bolu will teach delicious\, authentic Nigerian dishes followed by a sit-down meal.\n\n\n \nABOUT THE CUISINE \nNigerian cuisine reflects the country’s incredible cultural diversity\, with hundreds of ethnic groups each contributing their own cooking traditions\, flavours\, and techniques. Food is central to family life\, celebrations\, and community\, with recipes often passed down through generations and shared with pride. While ingredients and dishes vary across Nigeria’s regions\, every meal is rooted in hospitality\, and the joy of bringing people together around the table.  \n \nABOUT THE CHEF \n“I’m Bolu and I’m from south-west Nigeria. I’m from a tribe called Yoruba. In Nigeria\, Yoruba are one of the three largest tribes in Nigeria. The other two are Igbo and Hausa\, but Nigeria has 250 ethnic groups/tribes with many different languages and culinary traditions. \n \nMy love for cooking started in my mum and aunt’s kitchen\, where I learned that food is about care\, culture and bringing people together. Their passion became my passion too. I enjoy blending traditional Nigerian flavours with my own touches to create dishes that feel familiar yet new.  My mum and aunt are so impressed and I hope I impress you too!  \n \nIn Nigeria\, we cook with a lot of varieties of protein\, using beef\, chicken\, goat\, eggs\, nuts and beans. The climate in Nigeria helps the farmers to grow many leafy vegetables\, yam\, sweet potatoes\, plantain and cocoa. I can’t wait to share all of these wonderful ingredients with you in my class.  \n \nWhen I’m not in the kitchen\, you’ll find me on the football pitch or in my dance class. I also love listening to music while cooking; it gives me inspiration and motivation. All that keeps me disciplined\, focused and balanced. My goal is to honour my roots and inspire others through every plate I create and serve.” \n \n\n\n\nON THE MENU (subject to change): \n\nJollof Rice and Plantain | Vegetarian; Milk\nChicken Obe Ata (Nigerian Red Pepper Chicken Stew) | Meat (Chicken); Milk\nAubergine Obe Ata (Nigerian Red Pepper Aubergine Stew) | Vegetarian; Milk\nEfo Riro (Yoruban Spinach Stew) | Vegetarian; Milk\nPounded Yam | Vegan; None\nBolu’s Coleslaw | Vegetarian; Eggs\nPuff-puff (Nigerian Fried Dough) | Vegan; Gluten (Wheat)\n\nThis menu contains meat (chicken) but is vegetarian-friendly (6/7 dishes are meat-free). While ingredients and dishes vary across Nigeria’s regions\, every meal is rooted in hospitality\, and the joy of bringing people together around the table.  \n \nABOUT THE CHEF \nMy name is Uchenna\, and I come from Nnewi in Anambra State\, in the eastern part of Nigeria. Nigeria is home to three major ethnic groups Igbo\, Yoruba\, and Hausa and more than 200 languages. I am proud to be from the Igbo tribe\, a people known for their rich culture\, resilience\, and love of food. \nGrowing up\, I never imagined that cooking would become such an important part of my life. My mother owned the largest and most popular restaurant in our town and was passionate about cooking\, while I preferred other household chores. \n Everything changed when I went to university and had to learn how to feed myself. After attending a Migrateful Open Day\, I felt inspired and\, just three days later\, volunteered to cook at St James’s Church on International Women’s Day. SUMMARY:Algerian Cookery Class with Amel | LONDON | Cookery School
DESCRIPTION:In this session Amel will teach delicious\, authentic Algerian dishes followed by a sit-down\, family-style meal.\n\n\nABOUT THE CUISINE \nAlgerian cuisine is a beautiful blend of North African\, Mediterranean\, and French influences — rich in spices\, seasonal vegetables\, slow-cooked stews\, and warm breads. From fragrant soups like Chorba Frik to comforting tagines and delicate pastries\, Algerian food is deeply social\, made to be shared\, and full of heritage. With flavours shaped by centuries of cultural exchange\, every dish tells a story of community\, generosity\, and home. \n \nABOUT THE CHEF \nA message from our Chef Amel: \nHi my name is Amel\, I am from Sidi Bel Abbes in Western Algeria. Our city is nicknamed ‘Petit Paris’ because there is a strong French influence. I wasn’t allowed to cook growing up because my parents wanted me to focus on my studies. I was a teacher in Algeria but wasn’t able to continue teaching when I moved to the UK in 2015. After I met my wonderful husband\, we quickly had children and I began to spend more time at home. During this time\, I realised my passion for cooking and baking. I cooked so much for my friends and family that they told me to stop as they feared they were getting fat. In the future\, I want to open my own bakery where I can share Algerian food and culture with people in London. Algeria is extremely multicultural and culturally rich\, which is something I am very proud of. I have always been a daydreamer and I really value the freedom to pursue my dreams here in the UK”. \n \n\n\n\nON THE MENU (subject to change): \n\nTagine Zitoun (Olive Tagine with Chicken and Meatballs) | Meat (Chicken and Lamb); Egg\, Gluten (Wheat)\nChorba Frik (Vegetable Soup with Freekah and Carraway) | Vegetarian; Celery\, Gluten (Wheat)\nBourek (Tuna Pastry Parcels with Cheese) | Fish (Tuna); Eggs\, Fish\, Gluten (Wheat)\, Milk\nRekhsas (Algerian Semolina and Nigella Seed Flatbread) | Vegetarian; Celery\, Milk\nSamsa b-louz (Fried Almond\, Sesame and Honey Pastries) | Vegetarian; Gluten (Wheat)\, Milk\, Sesame\, Tree Nuts (Almonds)\n\nThis menu contains meat (chicken and lamb) and fish (tuna).
