Sierra Leone is a small country in West Africa bordered by Guinea\, Liberia and the Atlantic Ocean. I am a Fulani\, and my tribal identity is as important as my national identity. Sierra Leone is a culturally diverse country\, rich in a number of minerals including diamonds and gold. \nCooking has always been my passion. As a very young child\, I was already pretending to be a chef and made my siblings play along with this game. I started cooking for real when I was 12 years old at my mother’s side. She started by giving me simple tasks to do and gradually taught me how to prepare dishes properly. I am grateful that she shared her secret tips with me. \nI believe it is important to continuously develop oneself and in the importance of community. Putting these principles into practice\, I became a volunteer chef with the Red Cross and with Connect All Community\, cooking for over 60 people every week. \nI bring humour and joy to everything I do\, including my cookery classes. Think of it like a technical rehearsal at the theatre. This means it may run for longer than a normal class and involve some stop/starting. I learned to cook from my Mum. She used to call my sisters and me to assist her with cooking. DESCRIPTION:In this class Fatima will teach delicious\, authentic authentic Iranian dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \nIranian cuisine is rich\, diverse\, and steeped in history\, blending fragrant spices\, fresh herbs\, and a balance of flavours that vary by region. Fatima’s dishes celebrate the heart of Iranian home cooking\, from the rice-heavy meals of the north to the spice- and seafood-focused dishes of the south. Expect aromatic stews\, herb-packed frittatas\, and vibrant salads that reflect Iran’s culinary heritage. \n \nABOUT THE CHEF \n A message from chef Fatima: \n“My name is Fatima and I am from Iran. I came to England in 2022 with my husband and my six year old twin boys. We left everything behind in Tehran to come here. In Iran\, I studied food science at university and worked for a medical company and then became a nail technician. I didn’t start seriously cooking until I got married. It was then that I fell in love with cooking. I love experimenting with food. My favourite ingredient is saffron – I use it in lots of dishes – rice\, ice cream\, cake\, sweets and even tea! I love the diversity of Iranian food – every city has its own local dishes.  \n \nIn the north\, we grow a lot of rice\, so you’ll find this on every menu. In the south\, seafood and spices feature. Meat and chicken are popular everywhere. By sharing these dishes\, I hope to recreate fond memories I have of Iranian food and culture. Iranian people are very hospitable.
