Our city is nicknamed ‘Petit Paris’ because there is a strong French influence. I wasn’t allowed to cook growing up because my parents wanted me to focus on my studies. I was a teacher in Algeria but wasn’t able to continue teaching when I moved to the UK in 2015. After I met my wonderful husband\, we quickly had children and I began to spend more time at home. During this time\, I realised my passion for cooking and baking. I cooked so much for my friends and family that they told me to stop as they feared they were getting fat. In the future\, I want to open my own bakery where I can share Algerian food and culture with people in London. Algeria is extremely multicultural and culturally rich\, which is something I am very proud of. I am the youngest of five. I have three brothers and one sister. I was born and grew up on the east coast by the sea in a place called Batticaloa. I learnt to cook from my mother when I was young. My favourite dishes were Okra and Fish Curry\, made with fresh coconut. I love playing cricket and on Sundays\, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef. I studied chemistry in University\, as well as other courses like body language\, first aid and computing. After raising three children\, I decided to open my own shop\, selling my designs of handmade hats\, bags and accessories.  \nI moved to the UK in 2024\, and started a new chapter in my life with gratitude and excitement. I am very grateful to the UK because here\, I can sleep feeling safe and warm with my children and my kind husband.  \nCooking has been a part of my life since childhood. I’m from a tribe called Yoruba. In Nigeria\, Yoruba are one of the three largest tribes in Nigeria. The other two are Igbo and Hausa\, but Nigeria has 250 ethnic groups/tribes with many different languages and culinary traditions. \n \nMy love for cooking started in my mum and aunt’s kitchen\, where I learned that food is about care\, culture and bringing people together. Their passion became my passion too. Expect richly spiced\, fragrant meals that showcase the island’s culinary heritage\, blending vegetarian\, seafood\, and meat dishes in a communal and celebratory style. \n \nABOUT THE CHEF \nMy name is Rismi and I am from Sri Lanka. I am a passionate home cook\, sharing the vibrant flavours and tradition of Sri Lankan cuisine. In Sri Lanka\, food is more than just a meal\, it’s a celebration of culture\, family and connection and I am very excited to share these special traditions with you.  \n \nCooking has been an important part of my life from a very young age. My father was a cook and although I did not receive formal culinary training\, I learned by watching him and through many years of self-teaching and practising in my own kitchen. Over time\, cooking became one of my greatest passions.  \n \nBefore moving to the UK\, I worked in a different profession. But my love for cooking and sharing food has always stayed with me. I now live in the UK with my wife and children and I enjoy bringing the tastes and traditions of Sri Lanka to new friends and communities.  \n \nIn my class\, I will guide you through authentic Sri Lankan recipes\, using aromatic spices\, fresh ingredients and techniques that you can recreate at home. My classes are warm\, friendly and suitable for everyone. The Gambia is celebrated for its rich food\, culture and warm hospitality. The Gambia has a population of about 2.5 million people; it is the smallest country on Mainland Africa. It is a long\, narrow country\, surrounded almost completely by Senegal\, except for its Atlantic Ocean coastline. \nI belong to the Mandinke tribe\, the largest tribe in The Gambia; even the president of The Gambia comes from my tribe! I started cooking at a young age\, taught by my mother at home. That is where my love for food began. I love cooking traditional Gambian and West African dishes and sharing my culture through food. I enjoy cooking\, working out\, music\, learning new foods and cultures and football in my free time. \nI moved to the UK in 2023 and now live in East London. I am the youngest of five. I have three brothers and one sister. I was born and grew up on the east coast by the sea in a place called Batticaloa. I learnt to cook from my mother when I was young. My favourite dishes were Okra and Fish Curry\, made with fresh coconut. I love playing cricket and on Sundays\, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef. Meals are hands-on\, social\, and made to be shared\, with signature dishes like Ceviche\, Tigrillo\, and Empanadas highlighting the warmth\, creativity\, and communal spirit of Ecuadorian food culture. \n \nABOUT THE CHEF \nA message from our Chef Judith: \n“My name is Judith\, and I am from Ecuador\, a beautiful country in South America. I grew up in Santo Domingo de los Tsachilas\, an area located between the coast and the mountains\, so we had the best produce. I grew up in a big family where food and music were always part of our joy – we loved getting together\, sharing meals\, and dancing. In Ecuador\, you can find four seasons in one day by travelling from one part of the country to another\, and that means that you can experience many different types of food in the country. When I came to England\, I started to do some voluntary work in a ‘healthy living’ community group\, and I used to run a session on healthy eating – this is reflected in my menu today. Teaching others about Ecuadorian food helps me feel close to my country and reminds me that even far from home\, we can still celebrate who we are and connect with others through culture and food.
