I have always loved to cook\, and\, of course\, to eat. My mother was my first teacher\, but I also learnt from my grandmother and my aunts as we all lived in a multi-generational home; always cooking\, eating and celebrating together. I love to cook with lots of fresh herbs\, and these make Iranian dishes so special. I make delicious food for myself\, my family and friends – and my friends are always inviting me to cook for them. \nI am a very creative person\, so I love to make my dishes look beautiful. Presentation in Iranian cooking is very important and I will teach you to use ingredients to make the dishes look appealing and for your guests to look forward to. I really care about my health\, and believe that the food we eat is directly related to our health – so preparing food that is nutritious as well as delicious is really important to me. My favourite dishes were Okra and Fish Curry\, made with fresh coconut. I love playing cricket and on Sundays\, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef. My dad was from Oman\, and I think this has helped me create my own type of cuisine – a mix of Egyptian and Omani food. \nMy dad also loved to cook\, so I had two very good teachers. I improved my cooking skills through observing and working with chefs in my restaurant business. Now I’m in the UK\, I’m starting a new chapter and bringing with me the flavours of Oman. I hope to open my own restaurant business in London one day. Meals often balance bold spices with fresh coconut\, tropical fruits\, lentils\, and seafood. Akram’s dishes highlight the heart of Sri Lankan home cooking\, where hand-prepared curries\, sambals\, and rice-based dishes bring layers of flavour and warmth to the table. Expect richly spiced\, fragrant meals that showcase the island’s culinary heritage\, blending vegetarian\, seafood\, and meat dishes in a communal and celebratory style. \n \nABOUT THE CHEF \nA message from our Chef Akram: \n“Hello\, My name is Akram\, I come from Sri Lanka. I am the youngest of five. I have three brothers and one sister. I was born and grew up on the east coast by the sea in a place called Batticaloa. I learnt to cook from my mother when I was young. My favourite dishes were Okra and Fish Curry\, made with fresh coconut. I love playing cricket and on Sundays\, I would go to the beach and fish. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef. From rich stews like Fesenjan to vibrant yoghurt dishes and saffron-scented rice\, every dish is crafted with care\, colour\, and generosity. Iranian food is deeply social\, with meals shared in warm\, communal gatherings — a celebration of heritage\, hospitality\, and connection. \n \nABOUT THE CHEF \nA message from chef Ladan: \n“My name is Ladan and I come from Tehran\, the capital of Iran. I have always loved to cook\, and\, of course\, to eat. My mother was my first teacher\, but I also learnt from my grandmother and my aunts as we all lived in a multi-generational home; always cooking\, eating and celebrating together. I love to cook with lots of fresh herbs\, and these make Iranian dishes so special. I make delicious food for myself\, my family and friends – and my friends are always inviting me to cook for them. \nI am a very creative person\, so I love to make my dishes look beautiful. Presentation in Iranian cooking is very important and I will teach you to use ingredients to make the dishes look appealing and for your guests to look forward to. I really care about my health\, and believe that the food we eat is directly related to our health – so preparing food that is nutritious as well as delicious is really important to me. I look forward to sharing my tasty\, healthy food with you. \nI love to practise yoga\, to meditate and study astrology. I also like to keep fit and I love music\, so I will often have music playing whilst I am cooking. It makes me feel happy\, and I hope I can share some Iranian music with you!
