SUMMARY:Gambian Cookery Class with Lamin | Veg Friendly | LONDON| Cookery School
DESCRIPTION:Chef Lamin will teach delicious\, authentic Gambian dishes followed by a sit-down meal.\n\n\nABOUT THE CUISINE \nGambian cuisine is shaped by the country’s rich cultural heritage and its location along the banks of the River Gambia\, where food has long brought families and communities together. Drawing on West African traditions\, it celebrates simple\, nourishing ingredients transformed into deeply flavourful dishes. Meals are often shared from a single platter\, reflecting the strong sense of community that is at the heart of Gambian culture. \n \nABOUT THE CHEF \n“My name is Lamin and I proudly come from The Gambia\, widely known as the smiling coast of Africa. The Gambia is celebrated for its rich food\, culture and warm hospitality. The Gambia has a population of about 2.5 million people; it is the smallest country on Mainland Africa. It is a long\, narrow country\, surrounded almost completely by Senegal\, except for its Atlantic Ocean coastline. \nI belong to the Mandinke tribe\, the largest tribe in The Gambia; even the president of The Gambia comes from my tribe! I started cooking at a young age\, taught by my mother at home. That is where my love for food began. I love cooking traditional Gambian and West African dishes and sharing my culture through food. I enjoy cooking\, working out\, music\, learning new foods and cultures and football in my free time. \nI moved to the UK in 2023 and now live in East London. Since moving here\, I have enjoyed meeting new people and sharing African food experiences with the community. My goal is to bring people together through delicious food\, culture and good hospitality.” \n \n\n\n\nON THE MENU (subject to change): \n\nBenachin (Gambian Jollof Rice) | Vegan; Celery\, Gluten (Wheat)\, Soya\nChicken Yassa | Meat (Chicken); Celery\, Mustard\, Soya\nDomoda (Aubergine and Sweet Potato Peanut Butter Stew) | Vegan; Celery\, Peanuts\, Soya\nGambian Salad | Vegan; Sulphites\nPanketti (Gambian Doughnuts with a Hot Chilli Sauce) | Vegetarian; Eggs\, Gluten (Wheat)\nNgalakh (Baobab and Peanut Butter Dessert) | Vegetarian; Milk\, Peanuts\, Sulphites\nWonjo (Gambian Hibiscus Drink) | Vegan; None\n\nThis menu contains meat (chicken) but is vegetarian-friendly (6/7 dishes are meat-free). I learned to cook from my Mum. She used to call my sisters and me to assist her with cooking. I was her main helper\, especially when it came to pulling noodles. \nWhen I was in high school and had our summer holiday\, my mum trusted me enough to cook for the family and I insisted she write me the recipes with every little detail. I got paid for it! My mum taught me to cook several cuisines from around the world but my favourites were Saudi & Uyghur. I am from the lovely island nation of Trinidad and Tobago in the Caribbean and I am the mother of two daughters. My cooking journey started over 25 years ago when I was just 10. My mother had to go to work\, leaving me to cook for my two younger siblings. At first\, I made some pretty awful dishes but with my mother’s help and encouragement\, I got better. At her suggestion\, I started cooking school and soon I was creating new dishes on my own. I then trained at the Trinidad and Tobago International Hilton Hotel and worked as a sous chef at the Carlton Savannah Hotel when Queen E stayed there in 2009. When the hotel closed\, I first started cooking for homeless people and then for children with additional needs. I became a mother figure for many of the kids and some of the older people. I have been volunteering for Praxis charity for the last year\, a charity that helps support people on their immigration journey. \nIn addition to cooking\, I am passionate about music\, dancing and laughing! SUMMARY:Ecuadorian Cookery Class with Judith |Veg Friendly| LONDON|Cookery School
DESCRIPTION:Chef Judith will teach you some of her favourite Ecuadorian dishes followed by a sit down meal.\n\n\nABOUT THE CUISINE \nEcuadorian cuisine comes from South America and reflects the country’s diverse geography\, from the Pacific coast to the Andes mountains and the Amazon rainforest. It combines fresh seafood\, tropical fruits\, vegetables\, grains\, and spices to create vibrant\, flavourful dishes. Meals are hands-on\, social\, and made to be shared\, with signature dishes like Ceviche\, Tigrillo\, and Empanadas highlighting the warmth\, creativity\, and communal spirit of Ecuadorian food culture. \n \nABOUT THE CHEF \nA message from our Chef Judith: \n“My name is Judith\, and I am from Ecuador\, a beautiful country in South America. I grew up in Santo Domingo de los Tsachilas\, an area located between the coast and the mountains\, so we had the best produce. I grew up in a big family where food and music were always part of our joy – we loved getting together\, sharing meals\, and dancing. In Ecuador\, you can find four seasons in one day by travelling from one part of the country to another\, and that means that you can experience many different types of food in the country. When I came to England\, I started to do some voluntary work in a ‘healthy living’ community group\, and I used to run a session on healthy eating – this is reflected in my menu today. Teaching others about Ecuadorian food helps me feel close to my country and reminds me that even far from home\, we can still celebrate who we are and connect with others through culture and food. Each dish I create carries the soul of my homeland that is inspired by the unique beauty of the Amazon\, where the jungle speaks and nature is sacred. My hands work with love\, honouring my roots and sharing a little piece of living nature with the world.” \n \n\n\n\n \nON THE MENU (subject to change): \n\nTwo Ceviche | Fish (Prawns) and Vegan; Celery\, Crustaceans\, Mustard\nTigrillo (Plantain Hash) | Vegetarian; Eggs\, Milk\, Peanuts\nEstofado de Carne y Chocolate (Beef Stew with Chocolate) | Meat (Beef); Celery\nEstofado de Vegetales (Golden Vegetable Stew) | Vegan; Celery\nEmpanadas de Viento (Cheese-Filled Pastries) | Vegetarian; Eggs\, Gluten (Wheat)\, Milk\nColada Morada (Warm Fruit Punch) | Vegan; None\n\nThis menu contains meat (beef) and fish (prawns) but is vegetarian-friendly (5/6 dishes are meat-free).
