I have been living in the UK for three and a half years. \nI enjoy reading children’s stories which helps me with my English. Sierra Leone is a culturally diverse country\, rich in a number of minerals including diamonds and gold. \nCooking has always been my passion. As a very young child\, I was already pretending to be a chef and made my siblings play along with this game. I started cooking for real when I was 12 years old at my mother’s side. She started by giving me simple tasks to do and gradually taught me how to prepare dishes properly. I am grateful that she shared her secret tips with me. \nI believe it is important to continuously develop oneself and in the importance of community. I grew up in Santo Domingo de los Tsachilas\, an area located between the coast and the mountains\, so we had the best produce. In Ecuador\, you can find four seasons in one day by travelling from one part of the country to another\, and that means that you can experience many different types of food in the country. I really do love to cook and entertain people. I feel very positive when I’m cooking. A dish that reminds me of home is rice and peas. In my country we didn’t cook rice in the week – only on Sunday. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef. I grew up in Santo Domingo de los Tsachilas\, an area located between the coast and the mountains\, so we had the best produce. I grew up in a big family where food and music were always part of our joy – we loved getting together\, sharing meals\, and dancing. In Ecuador\, you can find four seasons in one day by travelling from one part of the country to another\, and that means that you can experience many different types of food in the country. When I came to England\, I started to do some voluntary work in a ‘healthy living’ community group\, and I used to run a session on healthy eating – this is reflected in my menu today. I come from Congo\, DRC. I was born in the capital called Kinshasa. I studied communications at university. I speak Lingala and French and I have been learning English since I arrived in the UK five years ago. I live alone and my whole family is in Congo. I joined Migrateful to meet new people\, improve my English and share dishes from my country. \nI learned to cook when I was young by watching my mum when she cooked for my family. My aunty Madeleine\, who we called Mado\, had a restaurant in Kinshasa. I learned from her how to make sure the dishes are perfectly seasoned. She passed away and I think of her often when I cook the recipes she taught me. \nI love to cook and feed people. I like to create new recipes and try new ingredients from my country like cassava leaves\, fumbua and green beans from Goma. My favourite foods to cook are fish and all kinds of meat and vegetables because I believe they prevent illness. From hearty stews to fresh vegetables\, beans\, and pounded staples like fufu\, each dish is made with care and meant to nourish both body and soul. Congolese food is bold\, wholesome\, and deeply connected to family and community — meals are shared\, generous\, and full of love. \n \nABOUT THE CHEF \nA message from Chef Belitha: \n“My name is Belitha. I come from Congo\, DRC. I was born in the capital called Kinshasa. I studied communications at university. I speak Lingala and French and I have been learning English since I arrived in the UK five years ago. I live alone and my whole family is in Congo. I joined Migrateful to meet new people\, improve my English and share dishes from my country. \nI learned to cook when I was young by watching my mum when she cooked for my family. My aunty Madeleine\, who we called Mado\, had a restaurant in Kinshasa. I learned from her how to make sure the dishes are perfectly seasoned. She passed away and I think of her often when I cook the recipes she taught me. \nI love to cook and feed people. I like to create new recipes and try new ingredients from my country like cassava leaves\, fumbua and green beans from Goma. My favourite foods to cook are fish and all kinds of meat and vegetables because I believe they prevent illness.
