Cooking is hands-on\, social\, and meant to be shared\, with signature dishes like Jollof Rice\, Spinach Stew\, and Rice Arkara highlighting the warmth\, community\, and culinary creativity of Sierra Leonean food culture. \n \nABOUT THE CHEF \nA message from our Chef Isatu: \n“I am Isatu from Sierra Leone. Sierra Leone is a small country in West Africa bordered by Guinea\, Liberia and the Atlantic Ocean. I am a Fulani\, and my tribal identity is as important as my national identity. Sierra Leone is a culturally diverse country\, rich in a number of minerals including diamonds and gold. \nCooking has always been my passion. As a very young child\, I was already pretending to be a chef and made my siblings play along with this game. I started cooking for real when I was 12 years old at my mother’s side. She started by giving me simple tasks to do and gradually taught me how to prepare dishes properly. I am grateful that she shared her secret tips with me. \nI believe it is important to continuously develop oneself and in the importance of community. Putting these principles into practice\, I became a volunteer chef with the Red Cross and with Connect All Community\, cooking for over 60 people every week. \nI bring humour and joy to everything I do\, including my cookery classes. Any fish that I caught I would take home and cook fresh that day. Another favourite dish of mine is Beef Biryani which we cooked when we had family celebrations – which could include up to thirty people. When I first came to the UK I lived in Yorkshire\, in Halifax\, and I worked in a community kitchen as a chef. I am the youngest in my family and learned to cook from my mother and older sisters. Sierra Leone is a small country in West Africa bordered by Guinea\, Liberia and the Atlantic Ocean. I am a Fulani\, and my tribal identity is as important as my national identity. Sierra Leone is a culturally diverse country\, rich in a number of minerals including diamonds and gold. \nCooking has always been my passion. As a very young child\, I was already pretending to be a chef and made my siblings play along with this game. I started cooking for real when I was 12 years old at my mother’s side. She started by giving me simple tasks to do and gradually taught me how to prepare dishes properly. I am grateful that she shared her secret tips with me. \nI believe it is important to continuously develop oneself and in the importance of community. Putting these principles into practice\, I became a volunteer chef with the Red Cross and with Connect All Community\, cooking for over 60 people every week. \nI bring humour and joy to everything I do\, including my cookery classes. I am sure you will enjoy your time learning about Sierra Leone and its cuisine. Congolese food is bold\, wholesome\, and deeply connected to family and community — meals are shared\, generous\, and full of love. \n \nABOUT THE CHEF \n A message from Chef Belitha: \n“My name is Belitha. I come from Congo\, DRC. I was born in the capital called Kinshasa. I studied communications at university. I speak Lingala and French and I have been learning English since I arrived in the UK five years ago. I live alone and my whole family is in Congo. I joined Migrateful to meet new people\, improve my English and share dishes from my country. \nI learned to cook when I was young by watching my mum when she cooked for my family. My aunty Madeleine\, who we called Mado\, had a restaurant in Kinshasa. I learned from her how to make sure the dishes are perfectly seasoned. She passed away and I think of her often when I cook the recipes she taught me. \nI love to cook and feed people. I like to create new recipes and try new ingredients from my country like cassava leaves\, fumbua and green beans from Goma. My favourite foods to cook are fish and all kinds of meat and vegetables because I believe they prevent illness.
