I have always loved to cook\, and\, of course\, to eat. My mother was my first teacher\, but I also learnt from my grandmother and my aunts as we all lived in a multi-generational home; always cooking\, eating and celebrating together. I love to cook with lots of fresh herbs\, and these make Iranian dishes so special. I make delicious food for myself\, my family and friends – and my friends are always inviting me to cook for them. \nI am a very creative person\, so I love to make my dishes look beautiful. Presentation in Iranian cooking is very important and I will teach you to use ingredients to make the dishes look appealing and for your guests to look forward to. I really care about my health\, and believe that the food we eat is directly related to our health – so preparing food that is nutritious as well as delicious is really important to me. I look forward to sharing my tasty\, healthy food with you. \nI love to practise yoga\, to meditate and study astrology. Every dish reflects the warmth\, generosity\, and heritage of Palestinian culture. \n \nABOUT THE CHEF \nA message from chef Amna:  \n“My name is Amna from Gaza\, Palestine and I came to the UK in the winter of 2022. In Gaza\, I was a university lecturer in psychology for 20 years and a director of a charity supporting mothers and children. I have 5 children: 2 daughters who still live in Gaza\, a son and daughter in Canada and a son in London. \nAs a young woman\, I lived in Libya. I married there\, brought up my children and achieved my degree and my Masters. Libya’s sky seemed open to my dreams and I was very happy there. \nWhen I first arrived in the UK\, I had nothing here and felt lonely and ashamed. I am thankful to have become part of the Migrateful family. Migrateful has helped me feel more positive and I am happy to share my food and my culture. \nWhen I cook I always think of my mother. I don’t use recipes but cook by a sense I inherited from her. My mother and father always talked about their life before Gaza – I have never been to their home in Ashdod but I feel I know it. My father caught fish\, and they always had fresh vegetables from the countryside. I am passionate about making healthy and nutritious food. In the UK\, you have English\,Scottish\, Welsh and Irish people. In Iran\, we have Turkish\, Arab\, Kurdish and Lorish people. I am Lorish. When I was nine\, my mum went to work and didn’t have time to cook\, so I cooked for her. From a young age\, I would change recipes. I still do! My children ask me what a dish is called\, but I have often just created it\, so it does not have a name! Food is very important in my country. We consider food to be part of the joy of life;it is not just for survival. A meal should not only be the taste\, it should be how it looks\, how it smells and how it feels. I arrived in the UK in January 2024 with my husband and two daughters. At first\, I was worried about everything\, but I have found that British people are very kind. It’s a fun\, social\, and collaborative way to cook!
