Warm & easy\, like being with family!\n\n\nABOUT THE CUISINE \nIranian cuisine comes from the Middle East and Central Asia\, shaped by a rich history of Persian culture\, regional diversity\, and trade along the Silk Road. It combines fresh herbs\, grains\, legumes\, fruits\, nuts\, and spices to create balanced and aromatic dishes. Meals are hands-on\, social\, and meant to be shared\, with signature dishes like Kashk Bademjan\, Ash Reshteh\, and Kalam Polo highlighting the warmth\, community\, and culinary creativity of Iranian food culture. \n \nABOUT THE CHEF  \nA message from our Chef Sahar: \n“My name is Sahar and I am Iranian\, my language is Persian. My ancestors have taught me that my thoughts should always be good\, my words should be good\, and my behavior should be good. My country is a piece of heaven where my mother breathes and misses me. It has four seasons in one day. It has high and beautiful mountains\, many lakes and rivers. I came to England 3 years ago with my two children. In Iran\, cooking is very important in our culture\, food carries a lot of value and we respect ingredients. Many Iranian dishes include rice and meat and it was a surprise when I came here to find that people don’t always eat meat nor love rice. I was also surprised by how much potato people eat – mashed potatoes\, fried potatoes\, boiled potatoes and stewed potatoes! I applied to Migrateful last year and waited for a year. At first\, I was nervous because I was worried about my English language\, but they helped me and I have improved and realised it is not a big deal. From Gaza’s fresh seafood to the fertile hills of the West Bank producing olive oil\, herbs\, and vegetables\, Palestinian food is vibrant\, seasonal\, and full of flavour. Dishes like Sayadieh (seafood rice)\, stuffed vine leaves\, and crispy flatbreads are made to be shared\, highlighting the social\, hands-on nature of meals. Every dish reflects the warmth\, generosity\, and heritage of Palestinian culture. \n \nABOUT THE CHEF \nA message from chef Amna:  \n“My name is Amna from Gaza\, Palestine and I came to the UK in the winter of 2022. In Gaza\, I was a university lecturer in psychology for 20 years and a director of a charity supporting mothers and children. I have 5 children: 2 daughters who still live in Gaza\, a son and daughter in Canada and a son in London. \nAs a young woman\, I lived in Libya. I married there\, brought up my children and achieved my degree and my Masters. Libya’s sky seemed open to my dreams and I was very happy there. \nWhen I first arrived in the UK\, I had nothing here and felt lonely and ashamed. I am thankful to have become part of the Migrateful family. Migrateful has helped me feel more positive and I am happy to share my food and my culture. \nWhen I cook I always think of my mother. I don’t use recipes but cook by a sense I inherited from her. My mother and father always talked about their life before Gaza – I have never been to their home in Ashdod but I feel I know it. My father caught fish\, and they always had fresh vegetables from the countryside. I am passionate about making healthy and nutritious food. It is so important for our lives and our physical and mental health.
