ABOUT THE CUISINE

Jamaican cuisine is a bold and vibrant reflection of the island’s rich cultural heritage. Shaped by African, European, and Asian influences, it brings together a world of tastes on the island. From hearty Rice and Peas to the iconic Ackee and Saltfish, every dish tells a story of family, community, and celebration. Jamaican food is all about warmth and sharing – flavourful, comforting dishes made to bring people together.

ABOUT THE CHEF

A message from chef Delores:

“Hello I’m Delores from Jamaica. I love cooking delicious, nutritional food, using lots of garlic and spices. I was born into a family of chefs. As a young child growing up, I always helped my Grandmother with the cooking, preparing different dishes whilst my mother was out working as a chef. In 2001 I came to the UK on my own, then in 2005 they took away my immigration status and I was no longer allowed to work – 15 years ago and I’m still waiting! 

Luckily I am a very positive person, I love singing and my belief in God has kept me strong all these years. I really do love to cook and entertain people. I feel very positive when I’m cooking. A dish that reminds me of home is rice and peas. In my country we didn’t cook rice in the week – only on Sunday. So rice, peas and chicken is like the Sunday roast equivalent in the UK. In the week we eat yam, green banana, cassava.”

  • Sorrel (Hibiscus Juice) | Vegan; None
  • Fried Dumplings | Vegetarian; Gluten (Wheat), Milk
  • Fried Plantain | Vegan; None

This menu contains meat (chicken) but is vegetarian-friendly (5/6 dishes are meat-free). Allergens include: celery, gluten, milk, mustard.

THE CLASS FORMAT

Our cookery classes are family-style – meaning everyone works together to prepare the dishes as a team.

While you’ll be asked to choose one dish to focus on, you’ll have the opportunity to move around the kitchen, help with other dishes, and learn from each recipe. It’s a fun, social, and collaborative way to cook! At the end of the class, you’ll sit down with the chef, class facilitator and volunteers to enjoy the delicious meal you’ve created together.
