Our talented new cohort of Migrateful chefs are wrapping up their initial training and getting ready to hold their first cookery classes to the public.
This training class will be led by Chef Lamin from Gambia at the Migrateful Cookery School in Clerkenwell, London.
Please note, during these training classes, we will be testing the dishes, and how the class runs. Think of it like a technical rehearsal at the theatre. This means it may run for longer than a normal class and involve some stop/starting. Our Chef Development team will also be present to guide and observe, along with volunteers who will help support the chef, and we will ask for your feedback at the end of the class.
A sample menu of the dishes that will be taught includes:
- Benachin (Senegambian Jollof Rice) | Vegan; Celery, Gluten (Wheat), Soya
- Chicken Yassa | Meat (Chicken); Celery, Gluten (Wheat), Mustard, Soya
- Domoda (Peanut Butter Stew) | Vegan; Celery, Gluten (Wheat), Peanuts, Soya
- Salad | Vegan; Sulphites
- Panketti (Gambian Doughnuts with Chilli Sauce) | Vegetarian; Eggs, Gluten (Wheat)
- Ngalakh (Baobab and Peanut Butter Dessert) | Vegetarian; Milk, Peanuts, Sulphites
This menu contains meat (chicken) but is vegetarian friedly ( 5/6 dishes are meat free). Kindly note that we will not be substituting any ingredients to accommodate dietary needs, so please only book into classes that suit your dietary requirements. Please be aware that while all allergens listed above have been identified as being in this menu, traces of all 14 allergens will be present in this training class.

Throughout the class, Chef Lamin will share stories about his food and culture. You’ll work together with other participants to prepare each of the dishes, before sitting down to share a meal together.
A message from our Chef Lamin:
“My name is Lamin and I proudly come from The Gambia, widely known as the smiling coast of Africa. The Gambia is celebrated for its rich food, culture and warm hospitality. The Gambia has a population of about 2.5 million people; it is the smallest country on Mainland Africa. It is a long, narrow country, surrounded almost completely by Senegal, except for its Atlantic Ocean coastline.
I belong to the Mandinke tribe, the largest tribe in The Gambia; even the president of The Gambia comes from my tribe! I started cooking at a young age, taught by my mother at home. That is where my love for food began. I love cooking traditional Gambian and West African dishes and sharing my culture through food. I enjoy cooking, working out, music, learning new foods and cultures and football in my free time.
I moved to the UK in 2023 and now live in East London. Since moving here, I have enjoyed meeting new people and sharing African food experiences with the community. My goal is to bring people together through delicious food, culture and good hospitality. ”
