Our talented new cohort of Migrateful chefs are wrapping up their initial training and getting ready to hold their first cookery classes to the public.
This training class will be led by Chef Manal from Syria at the Migrateful Cookery School in Clerkenwell, London.
Please note, during these training classes, we will be testing the dishes, and how the class runs. Think of it like a technical rehearsal at the theatre. This means it may run for longer than a normal class and involve some stop/starting. Our Chef Development team will also be present to guide and observe, along with volunteers who will help support the chef, and we will ask for your feedback at the end of the class.
A sample menu of the dishes that will be taught includes:
- Sheik Al-Mahshi (Stuffed Courgette in a Yoghurt Sauce)| Meat (Beef); Gluten (Wheat), Milk, Tree Nuts (Pine Nuts)
- Maqluba and Laban Bi Khiar (Aubergine Pilaf with a Yoghurt Dip)| Vegetarian; Milk, Tree Nuts (Almonds)
- Sambousek (Beef and Cheese Sambousa) | Meat (Beef) and Vegetarian; Gluten (Wheat), Milk, Sesame, Sulphites

This menu contains meat (beef). Kindly note that we will not be substituting any ingredients to accommodate dietary needs, so please only book into classes that suit your dietary requirements. Please be aware that while all allergens listed above have been identified as being in this menu, traces of all 14 allergens will be present in this training class.
Please see our Food and Allergen Policy when booking into the class for more information.
Throughout the class, Chef Manal will share stories about her food and culture. You’ll work together with other participants to prepare each of the dishes, before sitting down to share a meal together.
A message from our Chef Manal:
“My name is Manal, I am from Damascus, the capital of Syria. I studied chemistry in University, as well as other courses like body language, first aid and computing. After raising three children, I decided to open my own shop, selling my designs of handmade hats, bags and accessories.
I moved to the UK in 2024, and started a new chapter in my life with gratitude and excitement. I am very grateful to the UK because here, I can sleep feeling safe and warm with my children and my kind husband.
Cooking has been a part of my life since childhood. I grew up in a big family where food was not just about eating, it was about love, family gatherings and warm memories together. My lovely mother always encouraged my passion for cooking and even bought me my own little apron because I loved standing beside her in the kitchen and learning how to cook from her.
Today, I enjoy sharing the flavours, colours, and warmth of Syrian food with others through dishes made with love, creativity and tradition.”
We’re excited to have you in the class! Please take note of a few final reminders:
