Nothing beats a home-cooked meal shared with family! And this is what inspires our Family Style Cookery Classes, a fun, laid-back homestyle cooking experience. Here, you will learn to prepare different dishes and then enjoy them with people who, like you, fuel our mission of supporting refugee and migrant chefs on their journey to integration. It’s a cookery class with a conscience, like they say!
Your class will be led by our wonderful Chef Tagwa from Sudan at The Tree Top Cafe in Brighton.
At our Family Style Cookery Classes, you will be grouped with other participants and prepare dishes together as a team. Think of Chef Tagwa as the head of the family! She will take care of dividing the class into groups, and each group will be responsible for creating one of the dishes. Of course, you are welcome and encouraged to move around during the class to learn about the other dishes being prepared. Throughout the evening, Chef Tagwa will share stories about their food and culture, and explain how to prepare each of the dishes so you come away with some new cooking tricks and inspiration from Sudan. You will also be emailed the recipes after the class.
A sample menu of the dishes that will be taught includes:
- Fattat Addis(Red Lentil stew with flat breads) | Vegan
- Gorassa bi Dama (Sudanese Chicken Stew with Traditional Sudanese bread)
- Taamiya wa Salatarob (Sudanese falafel, salad and chili sauce) | Vegetarian
- Salata Aswad (Aubergine Salad)| Vegetarian
- Zalabiya ( Sudanese doughnuts with Medjoul date sauce) | Vegetarian
This menu contains meat (chicken) but is vegetarian friendly (4/5 dishes are meat-free). Allergens to be confirmed.
Please let us know if you have any specific dietary requirements so our team is aware ahead of the class but kindly note that we will not be substituting any ingredients to accommodate dietary needs so please only book into classes that suit your dietary preferences and needs. Please see our Food and Allergen Policy when booking into the class for more information.
A message from our Chef Tagwa:
“Hi my name is Tagwa and I’m from Khartoum, the capital of Sudan. In Sudan, we have a strong social life with my family where I lived with my 3 brothers, 2 sisters, and my parents. I always loved cooking; when I was 7 years old I would sneak downstairs by the fire and cook myself a little dish of food. I would clean up so my mom did not know. I am the oldest so when my brothers and sisters grew up I would always cook them food. I always watched my mom cook and learned from her and other women family members.
My family typically ate outside where we would sit with our neighbours as well. It was uncommon to eat alone, eating together is an important part of life not just reserved for special occasions. In Sudan, I would measure by memory and a taste test was all I needed before serving it to my family and friends. When we cooked too much food we would offer food to our neighbours which has been a struggle since living in the UK with only one other family member.
I joined Migrateful to learn about different cuisines and to share my food and culture with you.”
